By the time you are done snacking, you’ve eaten WAY more than you meant to, but that’s the best part! I love making a treat that is that craveable that it has everyone sneaking back for seconds and thirds.     Such a fun way to celebrate a sweet and simple holiday in February! We love Valentine’s Day and showing extra love to our friends and family. This is the perfect recipe to make with kids, and it’s a great one to share at school parties. It is a spin on the original muddy buddies and I think you might even like it more! It is coated in white chocolate and has a strawberry flavor from the cake mix. They are a sweet and perfectly themed treat.

    This is the ultimate snack food for Valentine’s day! It’s a really simple homemade treat, and would look great in a bowl on your valentines charcuterie board or chocolate board. While you are at it, you can buy two boxes of strawberry cake mix and make these strawberry cake mix cookies! They are perfect for Valentine’s, and nothing says I love you like homemade sweets. These sweetheart Valentine’s buddies are a great quick and easy recipe to celebrate the holiday.

    Ingredients

    These sweetheart Valentine’s buddies are super simple to make! It’s pretty much the same ingredients as muddy buddies, but you use white chocolate instead so you get a really nice white and red color scheme. Aside from being totally adorable, they are also completely addicting! I have to give almost all of it away so I don’t end up eating it all myself! You can find the measurements below in the recipe card.

    • White Chocolate: You could use white almond bark instead.
    • Red Candy Melts: I found them at Michael’s craft store.
    • Shortening: This will help everything stick together just enough.
    • Chex Cereal: Either the corn or rice Chex mix is best.
    • Strawberry Cake Mix: Any brand works for this cake mix. It is so fun to add this pop of flavor.
    • Powdered Sugar: Adds some extra sweetness.
    • Valentine’s Chocolate M&M’s: They are the perfect color and add really nice texture and flavor.

    Sweetheart Valentine’s Buddies Recipe

    These sweetheart Valentine’s Buddies are so simple to make! The main difference between the original recipe is you will divide your Chex into two bowls so you can color some red. This makes the mix more colorful and festive. I like to melt my chocolate in the microwave because it is quick and easy. You could also do it in a double boiler if you wanted to.

    1. Divide the Chex Mix: Start by dividing the chex mix into two bowls. (2 ½ cup in each)
    2. Microwave Candy: In microwave safe dish, melt the 5 ounces white almond bark or white chocolate chips. Then add ½ teaspoon shortening so that the almond bark will spread evenly. Microwave 30 seconds at a time and be careful not to burn the almond bark. Then dump this in the first bowl of chex and mix evenly to coat all of the chex cereal.
    3. Pour Melted Chocolate Over Chex: Melt the red candy melts next also checking and stirring the candy melts 30 seconds at a time. Once this is melted, pour this over the second bowl of divided chex and mix until coated.
    4. Coat With Powder Sugar: In two gallon size ziplock bags, put ½ cup strawberry cake mix and ¼ cup powdered sugar in each bag. Dump each bowl of chex mix in each bag and shake until coated with the powdered sugar and strawberry powdered cake mix.

    Tips for Making Sweetheart Valentine’s Buddies

    This sweetheart Valentine’s buddies can be made in so many different ways. You definitely don’t have to stick to my recipe, you can switch things up! here are some ways to make it your own.

    • Candy: Chocolate chips, white, dark and milk are fun to throw into the mix. Even flavored M&M’s or filled ones add a great crunchy texture. Change out the candy with holiday special treats or add in more fun candy to make this a real hit.
    • Nuts: Peanuts are a great salty addition. Almonds would be delicious too!
    • Chex Mix: Rice and corn are always a popular choice in picking your Chex cereal out. Try vanilla or even chocolate Chex mix cereal for another variety.
    • Candy Melts: Make this special snack throughout the year for various holidays by changing the candy melt colors according to your holiday you are celebrating.

    Storing Leftovers

    Sweetheart Valentine’s buddies are seriously the best treat to make for the holiday because it stores really well! You can make this well ahead of time and package them in cute little bags for any party. Here is how to store leftovers.

    Valentine’s Day Sugar Cookies

    I’m pretty sure we all grew up with those chalky little heart Valentine’s Day candies right?! They were kind of flavorless, yet everyone always had them at the holiday because they have cute little messages on them. Well, get ready to fall in love with these cookies. They are actually delicious (so people will be so excited to eat them) and they can have personalized and adorable messages on them! They are seriously the ultimate Valentine’s day treat!

    If you really want to spoil your special someone, you can make these cookies along with some cheesecake stuffed strawberries and these really easy to make red velvet brownies. If you are not confident in your piping skills and think this recipe might end in disaster, don’t worry! This is the perfect sugar cookie recipe that is still shaped like a heart and will win over your Valentine. It’s really the thought that counts right? That’s why I love these thoughtful cookies that you can write your thoughts onto!

    Ingredients

    There are two different groups of ingredients, one for the Valentine’s day sugar cookies and the other is for the icing. If you have never made royal icing before, I share all my tips in the recipe and some extras in the tip box! You will also need a heart-shaped cookie cutter, I like these ones. You can use a ziploc bag for the pastry bag if you need to, but I would recommend a piping tip. I talk more about that in the tip box below. You can find exact measurements below in the recipe card.

    • Flour: I used all purpose flour for this recipe.
    • Salt: A little salt helps to balance the sweet flavors.
    • Baking Powder: This helps the cookies rise.
    • Butter: If your ingredients are at room temperature then they will mix together more smoothly. 
    • Granulated Sugar: Granulated sugar will make this recipe sweet.
    • Egg Yolks: This makes the cookie bind together really well and gives it the perfect texture.
    • Sour Cream: It’s amazing! A little sour flavor really makes this cookie taste incredible, and not too sweet.
    • Vanilla Extract: This will enhance the flavors of the sweet ingredients.
    • Lemon Extract: This adds a fresh and bright flavor that you are going to love! You could add fresh lemon juice and zest instead.

    Royal Icing

    • Powdered Sugar: Powdered sugar dissolves really smoothly and makes the frosting taste delicious and sweet.
    • Meringue Powder: This will help the frosting set up to the right stiffness. You can use gelatin or cream of tartar instead, they all do the same thing. However, you will need to use a different amount, so make sure to look up the conversion before substituting.
    • Water: Room temperature is best to help all of the ingredients combine.
    • Gel Food Coloring: You get to choose! I like to use pastel colors, so I don’t add as much coloring. The gel works best because it doesn’t change the consistency of the frosting. Don’t use too much coloring or it will make your frosting taste bitter.

    Valentine’s Day Cookies Recipe

    Get ready for your new Valentine’s Day cookie tradition! This seriously is one of my new favorite things. Everyone fell in love with the cookies right away because they not only look adorable and really thoughtful, they are also super delicious! This just might be the best sugar cookie recipe I’ve made! There is nothing tricky to this recipe, it’s going to turn out great!

    1. Prep: Preheat the oven to 350 degrees fahrenheit and line 2-3 cookie sheets with parchment paper.
    2. Whisk Dry Ingredients: In a medium bowl whisk together the flour, salt and baking powder. Set aside.
    3. Beat Butter and Sugar: In another medium bowl beat together the butter and sugar for 2-3 minutes until light and fluffy. Add the egg yolks, sour cream and extracts and mix until just combined.
    4. Add Dry to Wet: Add the dry ingredients to the wet and mix until just barely full combined.
    5. Roll and Shape: This recipe does not require any chilling time for the cookie dough, so you’re ready to roll out your cookies! Split the dough into 2-3 pieces and roll them one at a time on a lightly floured surface until they are ¼ inch thick. Use a heart cookie cutter to cut out your cookies. Press the scraps together and set aside to rest for about 5 minutes. Reroll the scraps and cut more cookies until you have used up all the dough. I used a 3-inch heart and was able to get 18 cookies.
    6. Bake: Place the cookies on the parchment lined cookie sheets leaving 1 ½ inches between them. Bake for 6-8 minutes, rotating the pan at the 4 minute mark. I find this gives the cookies an even bake. The edges will be just set and the cookies will be very light in color and should have very minimal coloring underneath them.
    7. Cool and Frost: Let the Valentine’s Day cookies cool on the pan for 2 minutes for the shape to set before transferring to a cooling rack. You can now store them, or frost them once they have had time to cool.

    Make the Royal Icing

    1. Mix: Using an electric mixer with the whisk attachment, mix the powdered sugar and meringue powder together on low.
    2. Add water: Add 4-5 tablespoons of water and mix together on high speed for about 1 minute. The icing should be pretty stiff. Add additional water 1 tablespoon at a time until the icing is about the consistency of soft serve ice cream and forms soft peaks. Reserve ⅓ cup, roughly, of icing and cover tightly with plastic wrap. This will be for the lettering on the cookies.
    3. Add Color: With the remaining icing, add additional water 1-2 teaspoons at a time until when the whisk is raised the icing drips back into the bowl and the lines of icing take about 10 seconds to melt back into the icing. This is the thin icing that will be used to fill, or flood, your cookies. Separate into small bowls and tint the icing your chosen colors, I chose to use a pastel color pallet of pink, blue, yellow, and purple. Color the reserved stiff frosting red or black for lettering. Now you are ready to ice your Valentine’s Day cookies.
    1. Fill Bag: When ready to ice your Valentine’s day cookies, fill your piping bags with the icing colors and tie off the ends to prevent the icing from overflowing out the top of the bags. Avoid filing them more than ½-⅔ full. Snip the end of the bag just barely, leaving a very small hole to pipe from.
    2. Line and Flood: Use light pressure to trace the outside of the heart, not letting the tip of the bag touch the cookie unless it’s to start or stop piping. Once the outline has been piped, use stronger pressure to fill the center of the cookie. It doesn’t have to be perfect, use a toothpick or a scribe tool to swirl the icing around until all the holes are filled. Let it set and the icing will melt into itself and smooth out. Set aside and let it crust over, at least an hour.
    3. Add Lettering: Snip the very end of the bag of the stiffer frosting for the lettering. Once the base icing has formed a crust, pipe your chosen words onto the cookies. Let the cookies sit overnight or 24 hours to fully dry. They should be uncovered at room temperature. Once the icing is completely dry the cookies can be stacked and stored in an airtight container for up to 7 days.

    Piping Tips for Valentine’s Day Cookies

    You don’t have to be a pro at piping to end up with super cute Valentine’s Day cookies. If you haven’t ever piped a cookie before, these tips are for you! I will share some of my secrets to help you get the perfect cookies every time.

    • Piping Tip: For these cookies you can either use a very small piping tip, a #1, #1.5, or #2, or you can use a piping bag with the very end snipped off. If you use just a piping bag, snip the very tiniest amount off and test by squeezing a little icing out. If it’s not big enough, cut another tiny bit off the bag until you get the right size. It should be small enough to make a clean line and not curl around the tip of the bag, but not wide enough to pool out of the bag on its own. It’s always best to start very small and work up instead of cutting big and having to get another bag.
    • How to Pipe: Avoid piping right on the edge of the cookie. Once you fill the center with icing, if the outline is piped too close to the edge, the icing can spill over the side of the cookie. If you have never watched anyone ice a cookie with royal icing, now is the time to hop on Youtube for some really helpful tips!

    Tips for Making Valentine’s Day Cookies

    These Valentine’s Day cookies are more than adorable, they are super tasty too! The sugar cookie bottom is so tasty, and the royal icing can be whatever flavor you like. Here are some more tips to help you when you go to bake them.

    • Don’t Overbake: Don’t over bake the cookies. They should have minimal coloring on the bottom and the tops will be just barely matte. 
    • Flavor the Icing: Add what flavoring you would like to the icing, just be aware that if the flavoring has any color it will change the color of it. 
    • Keep Icing From Drying Out: Royal icing likes to start drying and forms a crust very quickly. When you are not using a bowl or piping bag, use damp paper towels and plastic wrap to cover them. Wrap bowls in plastic wrap between use and cover the tips of piping bags with a damp paper towel to prevent them from crusting over between using different colors. 
    • Let Icing Fully dry: Let the iced cookies sit out overnight to allow the icing to fully set before serving them. Don’t cover them with plastic wrap or place them in a covered container, otherwise the icing will take much longer to set. The icing prevents the cookie from drying out.

    Storing Leftovers

    Everything You’ll Need

    The great thing about this king cake recipe is that it uses super simple ingredients. In fact, as long as you have some sanding sugar on hand, you likely have everything else to whip up this festive dessert! Looking for measurements? They can all be found in the recipe card below.

    Dough

    Glaze

    • Powdered Sugar: Adds sweetness and gives the glaze a smooth texture.
    • Water: For adjusting the consistency.
    • Vanilla: Adds an extra pop of flavor. I recommend using pure vanilla extract here!
    • Colored Sugar: For the green, purple, and yellow topping.

    How to Make King Cake

    Now, I know this is a pretty lengthy list of instructions, but king cake is a lot easier to make than you’d think! I’ve broken the steps up into 3 simple sections.

    Making the Dough

    5. Proof: Remove the dough from your mixer and place it into an oiled bowl, cover with plastic wrap and keep covered for about an hour, until the dough doubles in size.

    Preparing the Filling, Baking

    1. Combine Ingredients: While your king cake dough is proofing, make your filling. In a medium bowl, mix your sugar, cinnamon, and butter. Set aside.
    2. Roll Out Dough: Once your dough is doubled in size, tip it out onto a floured surface, roll into a large rectangle, mine was about 24 inches by 15 inches. Cut the slab into 3 equal strips, mine were 24 inches by 5 inches.
    3. Add Filling: Spread your filling evenly on each strip and sprinkle your chopped pecans on top. Roll each strip lengthwise so you have 3 long filled rolls.
    4. Braid Together: Lay the strips side by side and secure them together at the top. Braid the whole length of the 3 strips together and secure the other end by pinching the dough together. Form the braid into a circle and secure the two ends together as best as you can.
    5. Proof: Place the prepared rolled and braided dough onto a baking sheet lined with parchment. Cover and allow the cake to proof until it is nearly double in size, depending on the temperature of the room you are making this cake in it could take 45 minutes to a little over an hour.
    6. Preheat Oven: While your cake proofs, preheat your oven to 375 degrees Fahrenheit.
    7. Bake: Once the cake is ready, bake for 25-30 minutes, a toothpick inserted should come out clean, and the loaf should be a golden brown color all over. Remove from the oven and allow the king cake to cool completely before glazing.

    Adding the Glaze

    1. Add Plastic Baby: Before glazing your cake, take a mini plastic baby and poke it into one of the folds of your cake, hiding it completely for someone to find later.
    2. Prepare Glaze Mixture: In a medium bowl, mix together your powdered sugar, water, and vanilla. Pour the glaze over your cake evenly and while the glaze is still tacky, sprinkle the colored sugar over it in colored stripes.
    3. Find the Baby: Make sure to have everyone inspect their cuts of cake to find the baby before eating!

    • Graham Cracker Crumb: You can make your own graham cracker crumbs by putting the graham crackers in a zip lock bag. Grab a rolling pin and hit the bag until they are a nice small crumb. You could also put them in a food processor and pulse them until fine.
    • Dip In Chocolate: It is no surprise that these strawberries are perfect dipped in chocolate. Pick your favorite chocolate and melt it in a bowl in 15 second intervals in the microwave.     Hot Fudge Recipe

    This hot fudge recipe is a classic that everyone in the family will love. My favorite part about it is there is absolutely no corn syrup! This fudge sauce is perfectly creamy with just three simple ingredients. Get ready for the most decadent hot fudge sundae you’ve ever had because this is the best hot fudge sauce out there. It is so much better than store-bought, you will never pick up a jar at the store again.

    For the perfect hot fudge sundae, try this homemade caramel sauce too. If you want to have tons of fun with a kid friendly ice cream recipe, you should try this snow ice cream recipe! It was a total blast to make with my kids. If you live in a warmer climate where you won’t have any snow, then try this ice cream in a bag. Another way we love eating this hot fudge is drizzled on top of these turtle brownies or with these cherry cheesecake brownies.

    Ingredients

    There isn’t much to this homemade hot fudge sauce, and yet it will be the best hot fudge you’ve ever had! It is so easy to make, and only has three ingredients. You could add other things like vanilla extract, cocoa powder, and salt if you wanted to, but those are not necessary. I think this recipe is perfect just the way it is!     Hot Fudge Sauce Recipe

    This recipe is so easy! I know some people who will make their hot fudge in the microwave, which I suppose you could do here too. You probably won’t get as thick of a mixture as you will over the stove, but it could be a quick option. I prefer to do it the old-fashioned way over the stove because it always turns out exactly the way I want it! Just make sure not to boil this mixture, it does not need to get that hot.

    1. Melt: In a saucepan, melt the chocolate and the butter together over low heat.
    2. Cook: Add the sweetened condensed milk and cook over low heat until thickened.
    3. Cool: Remove from heat and let cool. Store in the fridge in an airtight container. Reheat in 15 second intervals, stirring between.

    Don’t underestimate the scone! You may think of them prepackaged in plastic wrap and always a little disappointing, but I promise you these homemade scones are nothing like that! They are tender and flaky and not at all dry. They are perfect for any breakfast or tea party and look gorgeous on a platter along with Apple Danish, a beautiful Strawberry Galette, and this irresistible Coffee Cake.

    Maple Pecan Scone

    Let’s talk about these maple pecan scones! They are hands down the best scone I have ever had. Don’t get me wrong, I love a good peach scone or cranberry scone, but I think this one takes the cake. It is SO buttery and flaky, with just enough sweetness from real maple syrup. The glaze on top is heavenly and you better believe I will be putting it on my other pastries (like these coffee cake muffins!).

    The best part is, you do NOT have to be a skilled baker to get this recipe perfect. In fact, it’s so easy it’s a perfect recipe for kids to join in on the fun. The key is to not overmix the dough, but other than that you have a simple and straightforward dough to make with a quick and easy glaze to drizzle on top. There is so much to love about these treats, especially that real maple flavor.

    Ingredients

    You are going to love these maple pecan scones because you probably already have most of what you need in your pantry! I do add heavy cream to the dough because it makes it so smooth and moist. You can find the exact measurements below in the recipe card.

    Best Maple Pecan Scone

    • All-Purpose Flour: This is simply the easiest flour to work with.
    • Brown Sugar: Brown sugar is the perfect sweetener because it has a real depth of flavor that granulated sugar doesn’t have.
    • Baking Powder: Baking powder will help the scones to rise just enough so they are light and soft.
    • Salt: A little salt help to balance out all of the sweetness.
    • Butter: I use unsalted butter so I can control the salt content in the dough. We are making a flaky dough so you will want cold butter.
    • Chopped Pecans: Chop your pecans or buy them pre-chopped. Make sure they are small enough so that they are the perfect size for a bite but not too small that you don’t know they are there.
    • Heavy Cream: Heavy cream is my secret ingredient in these scones, it makes the dough so soft and moist.
    • Real Maple Syrup: Real maple syrup is the key to the maple flavor in these scones. I have never tried maple extract so I don’t know how that would taste.
    • Egg: I always use large grade A eggs in my recipes.
    • Vanilla Extract: Vanilla extract helps to round out all of the other flavors and really makes the maple flavor shine.

    Maple Glaze

    • Powdered Sugar: Powdered sugar is the perfect choice for a glaze because is mixes up so silky and shiny, and has great flavor.
    • Real Maple Syrup: This is the liquid for the glaze. You can add more maple syrup until your glaze is the right consistency.
    • Salt: Because both maple syrup and powdered sugar are sweet, you will want to add a little salt to balance everything out.

    This maple pecan scone dough is so easy to whip up, it takes about 20 minutes to get it ready for the oven. Not to mention how fun it is to make! I like to have my kids join in on the fun, and this one was a recipe that the whole family enjoyed making and eating.

    1. Prep: Preheat oven to 375 degrees Fahrenheit, line a baking sheet with parchment paper and set aside.
    2. Whisk Dry Ingredients: In a large bowl, whisk together your flour, brown sugar, baking powder, and salt.
    3. Grate Butter: Use a cheese grater to grate your cold butter into the dry ingredients, use your hands to lightly mix the butter into the dry ingredients. Add in your pecans and toss lightly to mix.
    4. Mix and Shape: In a medium bowl, combine the cream, egg, maple syrup and vanilla extract. Pour over the butter and dry ingredients and stir to combine. Trying to work the dough as little as possible, turn out onto a lightly floured surface and work into a ball. Flatten into an 8-9 inch disc and use a sharp knife to cut into 6-8 equal pieces
    5. Bake: Arrange the pieces on the prepared baking sheet, leaving about 2 inches between each one. Bake for 25-28 minutes, or until nice and golden brown. Allow to cool for at least 5-10 minutes before drizzling the icing over the top.
    6. Make Glaze and Top: For the glaze, in a small bowl whisk together the powdered sugar, maple syrup, and salt. If you need to thicken the glaze add a few tablespoons of powdered sugar, if it’s too thick, add 1 tablespoon of additional maple syrup.

    Tips for Making the Perfect Maple Pecan Scones

    I love making homemade scones, and these maple pecan scones are a real treat to make and eat. You can change the recipe however you want until it’s perfect for you. Here are a few tips for making the perfect maple pecan scones.

    • Toast Pecans: I think toasted pecans have so much more flavor! If you want to toast your pecans first, you can put your chopped pecans in a medium frying pan. Warm over medium heat for 2-5 minutes until browned and fragrant.
    • Add Candied Pecans: If you want to sweeten these scones further, you can substitute the pecans for candied pecans. They are a nice little surprise inside of the scone and add great flavor.
    • Dont Overwork: Don’t overwork this dough or it will bake hard and chewy, instead of being flaky and soft. This is really the key to the perfect scone!
    • Use Cold Butter: Everyone who loves a flaky pastry will tell you the key is cold butter and keeping it cold. You need all of the ingredients to come together, but you want to work the dough as little as possible with your hands. Your hands are hot and will melt the butter.

    Bananas foster is a gem from New Orleans. If you haven’t tried it, you’re in for an absolute treat! It starts with ripe bananas that are sautéed in butter, brown sugar, and a touch of cinnamon. If that didn’t convince you, the mixture is then flambéed with dark rum, creating a flavor that is too good to resist. Traditionally, you serve bananas foster with a scoop of vanilla ice cream.     Making bananas foster at home is super easy. Simply melt the butter in a pan and add the brown sugar, rum and spices. Then add the bananas and cook them until they are caramelized. 15 minutes is all it takes to make this heavenly dessert!

    1. Slice Bananas, Chop Walnuts: Prepare your bananas by peeling and then slicing them. I cut mine in half then slice them lengthwise. Also coarsely chop your walnuts and set both aside.
    2. Prepare Sauce: In a large skillet, over medium heat, melt your butter. Then add in your brown sugar, rum, vanilla, cardamom, and cinnamon and whisk to combine. Then bring the mixture to a low boil.
    3. Add Remaining Ingredients: Add in your prepared bananas and walnuts, then cook until the bananas are tender and begin to caramelize, about 2 minutes.
    4. Enjoy: Serve fresh over vanilla ice cream.

    I recommend enjoying these fresh, they won’t keep well. But if you are wanting to save leftovers, place them in an airtight container in the fridge for up to 3 days. For that freshly-cooked effect, reheat your banana mixture over the stove on medium-low heat and serve it à la mode!

    With how many cupcake recipes are out there, I still haven’t found one that I didn’t like! Cupcakes are so yummy and can be mixed and matched with so many flavors, toppings and frostings that they are different every time! Plus, my kids go crazy over them, so it’s a no-brainer to make these for dessert! These red velvet cupcakes are one of my absolute favorite cupcake recipes!

    There was a time when I was making a new red velvet cake recipe every weekend. I tried recipe after recipe, and none compared to this one. It is a light cake with a beautiful red color and a slight chocolate flavor. I top these cupcakes with my go-to cream cheese frosting recipe and the cream cheese flavor is the perfect match for red velvet. This has been my go-to red velvet cupcake recipe for years and years, and I’m sure it will become your favorite too.

    Ingredients to Make Red Velvet Cupcakes

    This recipe uses staple pantry ingredients that you probably already have on hand! Which makes it easy because then you can make these all the time! And trust me, after your kids devour them off of your counter in 2 seconds flat, you will need all of the stuff to make a second batch for yourself!

    Cake

    • Flour: I used all-purpose flour for this recipe.
    • Baking Soda and Baking Powder: These ingredients help the cake rise and get that moist, sponge like texture.
    • Unsweetened Cocoa Powder: This is what makes red velvet cake, the cocoa powder brings in that small, subtle chocolate flavor.
    • Granulated Sugar: This sweetens up the batter.
    • Salt: The salt is used to enhance all of the other flavors in the cupcakes.
    • Buttermilk: You can use storebought or homemade buttermilk for this recipe!
    • Vegetable Oil: This will give the cupcakes a moist texture.
    • Egg: Let your egg sit out at room temperature before you start mixing. It will combine with the other ingredients better if it’s not cold.
    • White Vinegar: This interacts with the baking soda to help leaven the cake (to help it rise without yeast)
    • Vanilla Extract: This enhances the sweet ingredients in the cupcake batter.
    • Liquid Red Food Coloring: This is how you will get that deep, beautiful red color!

    Cream Cheese Frosting

    • Butter: Use unsalted butter that has been softened to room temperature.
    • Cream Cheese: This should also be softened to room temperature. It will mix better and make it so that your frosting doesn’t have any lumps!
    • Salt: This enhances all of the flavors!
    • Vanilla Extract: This will add a sweet flavor to mix in with the tangy cream cheese.
    • Powdered Sugar: You use powdered sugar instead of granulated sugar because it dissolves into the frosting making it nice and smooth.
    • Milk: I used 2% but any milk is fine! Use more if the frosting is too thick. 

    How to Make Red Velvet Cupcakes

    Making red velvet cupcakes from scratch is a lot easier than you would think! These are simple and come together quickly, making them a great go-to dessert to impress any guest!

    Cupcakes

    1. Preheat and Prep: Preheat the oven to 350°. Spray a muffin pan with pan spray and line with cupcake liners and set aside.
    2. Mix Dry Ingredients: In a medium bowl sift together the flour, cocoa powder, baking soda and baking powder. Add the sugar and salt to the flour mixture and whisk thoroughly. Set aside.
    3. Whisk Flour Mixture with Wet Ingredients: In a large bowl whisk together the buttermilk, oil, egg, vinegar, vanilla and red food coloring until well combined. Add the flour mixture to the wet ingredients and whisk until smooth.
    4. Fill Liners and Bake: Scoop the batter into the cupcake liners and fill them 2/3 of the way full. Bake them for 18-20 minutes. The cupcakes are done when you press on the center of the set cupcake and it springs back. Let cool completely before frosting. 

    Cream Cheese Frosting

    1. Mix and Pipe: In a large bowl, mix together butter, cream cheese, salt and vanilla until smooth. Add powdered sugar, one cup at a time, beating well after each addition. If frosting is too thick, add a little milk. If you are planning to pipe the frosting onto the cupcakes, you want it thick enough to hold its shape.

    Baking Tips

    These red velvet cupcakes are so delicious, and I want yours to turn out perfectly! Here are a few baking tips to help you out!

    • Room Temperature Ingredients: Start by setting out your ingredients before you start baking. Baking with room temperature ingredients helps when mixing the ingredients together and it creates a smooth batter and frosting! 
    • Thick Frosting: If your frosting is too thick to pipe, then slowly add more milk (1 tablespoon at a time) until it reaches your desired consistency!
    • Don’t Open the Oven Door: If you open the oven too soon, it releases too much hot air. This makes it so that your cupcakes bake unevenly. If you need to check on things then use the oven light!

    How to Make Cupcakes Ahead of Time

    If you want to make these ahead of time, you totally can! That makes your life easier to just grab them and go when you are ready!

    • Making Ahead of Time: Just cook them according to the directions. Once they are cooled then you can store them in your refrigerator for a day or two. When you are ready to serve them, take them out of the fridge so they can come down a bit in temperature. Make the frosting while they are coming to room temperature and then frost them just before serving!
    • Leftovers: Store any leftovers in your refrigerator in an airtight container. They will last 2-3 days.

    • Scoop the batter into the cupcake liners until they are filled 2/3 of the way full. Bake for 18-20 minutes, just until the centers of the cupcakes are set and spring back when gently pressed on. Let cool completely before frosting.

    • In a large bowl, mix together butter, cream cheese, salt and vanilla until smooth. Add powdered sugar, one cup at a time, beating well after each addition.
