    Popovers

Golden, crisp, and deliciously airy, these homemade popovers are the best addition to any meal! Made with a simple egg batter, popovers have a buttery texture and the perfect chew!

If fluffy and chewy bread is your thing, you’re going to love these popovers! They’re such a fun twist on a classic dinner roll! You’ll have to try my homemade Yorkshire pudding next. Focaccia and pretzel rolls are great options as well!

    What are Popovers?

If you’ve never had them before, popovers are a light and fluffy pastry made with egg batter. It’s also the American version of Yorkshire pudding! The only difference between the two recipes is that Yorkshire pudding uses beef drippings in the batter to make it slightly more savory! I personally love the flavor of popovers. Just simple, buttery goodness!

Although popovers are the textbook definition of light and airy, you don’t need yeast or baking soda to leaven them! The steam interacting with the egg batter is what gives them the perfect rise. They’re great for a breakfast treat, brunch, afternoon tea, or serving alongside hearty meals like a Sunday pot roast! They’re such a fun switch-up from the traditional dinner roll. You’ll have to try them out for Thanksgiving this year!

    Popover Ingredients

Easily, the best part of this popover recipe is the fact that you only need 5 simple ingredients to whip up a batch. It’s one of my favorite side dishes to make because I know I have everything ready to go in my pantry! You can find exact measurements for each ingredient in the recipe card below.

    • Large Eggs: Eggs help bind all of the ingredients together and give popovers their signature rise!
    • Whole Milk: The fat content in whole milk will make your popovers soft and tender.
    • Salt: Just a pinch will keep your batch of popovers from tasting bland.
    • All-Purpose Flour: All-purpose flour gives popovers texture that is light and airy while still having the perfect amount of chew. I wouldn’t recommend using low-protein flour like cake flour here because it makes popovers too delicate to rise properly.
    • Unsalted Butter: Adds rich flavor and a tender texture.

    How to Make Popovers

Popovers are really simple to make! I’ve also added some tips below to ensure that you make a perfect batch! You’re going to love how they turn out. A golden, crispy exterior and soft, chewy center make them one of my favorite baked goods!

    1. Preheat Oven and Popover Pan: Place an oven rack in the bottom third of the oven and remove any racks above it, as the popovers will rise quite a bit. Preheat the oven to 450℉. Place your popover pan in the oven to heat while the oven preheats.
    2. Mix Batter Ingredients: Add the eggs, milk, salt, and flour to a blender or stand mixer and mix until combined. Add the melted butter and mix again until combined.
    3. Rest: Let the batter rest for 10-15 minutes while the oven finishes heating.
    4. Add Batter to Pan: Once the oven is up to temp, use a hot pan to remove the popover tin from the oven. Spray each well and rim of the pan with cooking spray and immediately pour the batter evenly into the six wells.
    5. Bake: Bake for 15 minutes at 450℉ before lowering the temperature to 350℉ and baking for an additional 20 minutes until golden brown.
    6. Release Steam and Cool: Remove the popovers from the oven and prick the top of each one with a knife to allow steam to escape. Remove from the pan to cool slightly before serving.

Tips and Tricks for Making the Best Popovers

Here are a few easy tips to keep in mind as you make your tasty popovers! This is such a great side for the holidays or even just to spice up a weeknight dinner!

    • Give Them Room To Rise: Arrange the racks in your oven so the popovers have plenty of room to rise without interference. I like to place the baking rack in the bottom third of the oven and remove any racks that are above it, just in case the popovers end up rising a whole bunch.
    • Let The Batter Rest: Allow the batter to rest for 10-15 minutes before adding to the hot popover pan. This will help yield a more tender popover.
    • Room Temperature Ingredients: Use room temperature ingredients to ensure the batter blends well. If the milk is cold, warm is gently in the microwave for 20-30 seconds.
    • Let The Steam Escape: Right when the popovers come out of the oven, use a sharp knife to poke a hole in the top of each of them. I twisted the knife just slightly to enlarge the opening. Once I saw steam escape from the top, I knew the hole was large enough. If you don’t prick the popovers, the steam will be trapped inside and can make your popovers soggy.
    • Use a Muffin Tin: While popover pans allow the popovers to have that classic tall and thin shape, if you don’t have one, a muffin pan works just as well!
    • Serve With: I like the classic pairing of a popover and some butter, but you can add cinnamon honey butter or a drizzle of caramel sauce if you want them to be sweet!

6 popovers in a serving dish.

    Storing Leftovers

I always like to serve my popovers straight out of the oven because the longer they sit at room temperature, the more they’ll deflate. If you have extras though, you can keep them for a few days after they’re made for a quick and easy treat!

    • At Room Temperature: Popovers may be stored in an airtight container for 2-3 days, though they are best consumed when fresh out of the oven!

    Snickers Salad Recipe

Who says that you can’t mix candy into a recipe and call it a salad?! You guys, this salad is the THE BEST! When I first heard of Snickers in a salad, I have to admit that I was a little skeptical. But, then I realized that it’s a dessert salad! (It also makes a fantastic potluck dish— everyone goes crazy over it!) Plus Snickers go incredibly well with apples so it had to be good, right?

This is a perfect dessert for those backyard BBQs. It’s cool and creamy, with a bit of crunch and the best part is that it is SO easy! You just stir everything together and let it chill for about an hour and voila, a summer dessert everyone will go nuts for!

Ingredients in Snickers Caramel Apple Salad

I love the freshness of fruit combined with the sweetness of a snickers bar.  Not to mention the creamy cool whip!  These ingredients are simple but pack a big flavor! Check out the recipe card at the bottom of the post for exact measurements.

    • Apples: I used both granny smith apples and honeycrisp apples for this salad, but you can just use one kind if that’s what you have!
    • Snickers Candy Bars: This is the secret ingredient and the best part of the salad!
    • Instant Pudding Mix: You don’t need to prepare this vanilla pudding mixture, you just need the powder to mix into this salad.
    • Cool Whip: The cool whip should be thawed before you mix it in.
    • Peanuts: Chop them up to garnish the top of the salad.
    • Chocolate and Caramel syrup: Drizzle the salad with these sweet sauces at the end according to your preference.

    Let’s Make this Dessert Salad!

This snickers salad recipe is so delicious! Making a candy bar salad is an unusual idea that really works.  It is simple and easy dessert recipe to put together and there is no way to mess it up!

    1. Combine: In a large bowl, mix together cool whip and pudding mix until smooth.
    2. Chop and Stir:  Chop the snickers and apples up into bite-sized pieces. Add them to whipped topping mixture and stir in.
    3. Chill: Drizzle with caramel sauce and chocolate syrup and sprinkle with chopped peanuts. Chill at least 1 hour before serving. Enjoy!

    Quick Tips and Substitutions

To make this snickers salad your own, add in your family’s favorites.  The good thing is that there is no wrong way to put together a dessert salad.  Just think of balancing the sweet and salty flavors.  Then, consider the texture of your salad and be sure you have filled it with crunchy ingredients to cover with the creamy sauce.

    • Pudding mix: Try butterscotch pudding instead of vanilla pudding mix for extra depth of flavor.  Other pudding ideas I have seen that sound delicious are cheesecake and french vanilla.
    • Candy: Use a Twix or Butterfinger or whatever your favorite bar is instead of the Snickers.  I personally think the saltier candies work best, like a Payday or Take 5 Bar.
    • Fruit: Use any crisp tart fruit you have on hand.  I love the idea of adding pear too!
    • Use Cold Ingredients: Freeze or Refrigerate the candy bar before adding it in.  Keep your apples cool in the refrigerator until ready to use as well.

Can You Store Leftover Snickers Salad?

This recipe is best served the day it is made because the candy can get mushy.  However, you can store it for a day if needed! Just store it in an airtight container in your fridge.

The reason that I love caesar salads is because they are so versatile. The flavor and the ingredients seem to pair well with just about everything. And whipping it up with a wedge of lettuce really dresses it up and elevates your meal. Plus, the creamy caesar dressing adds in the absolute best flavor that will leave you wanting to lick your plate clean!

These ingredients are so simple and easy! Make your dressing ahead of time (it takes 5 minutes) and store it in your fridge. This makes a delightful lunch or even a starter before any meal. Check out the recipe card at the bottom of the post for exact measurements.

    • Butter Lettuce: I like to get miniature hearts (also known as little gems) for this wedge salad.
    • Grape Tomatoes: Cut your tomatoes in half so that you get that fresh, juicy flavor in every bite!
    • Authentic Caesar Dressing: You can make this at home with this easy recipe. Or, if you are short on time then you can just grab some from the store!
    • Parmesan Cheese: I like to grate my parmesan fresh from the block. The flavor is stronger and really, fresh is always best!

How to Make a Caesar Wedge Salad

This recipe is only four simple steps! You will love how easy it is yet it looks so elegant on your plate. Even my kids love this salad so we make it all of the time at our house!

    1. Prep the Lettuce: Wash and dry the miniature butter lettuce hearts. With a sharp knife, cut in half length wise and set on a small plate. Repeat for the other lettuce hearts.
    2. Add tomatoes: Cut and divide the tomatoes among all four servings and then add them to each serving.
    3. Add a drizzle of dressing: Drizzle 2 tablespoons of dressing on each lettuce wedge.
    4. Sprinkle on cheese: Sprinkle with freshly grated parmesan cheese and enjoy!

    Additional Toppings

If you really want to elevate this caesar wedge salad then you MUST try adding on some additional toppings to really take this to the next level!

    • Grilled Corn: Try adding in some grilled corn. Grill some outside during the summer months or on a skillet on your stove during cooler months. Trust me, this adds in such a delicious flavor and texture. It’s SO GOOD!
    • Croutons: I love croutons on any salad. The crunch is delicious and the flavor mixes so well with the caesar salad dressing. You can even make them at home with this recipe.
    • Salt and Black Pepper: Add a dash of salt and pepper to each individual salad and it will elevate all of the flavors in it!

Stir occasionally to make sure it’s evenly cooked. You can also reheat your rice on the stove, adding a sprinkle of water, then warming on medium heat. Stir occasionally.

If I had to choose one salad to have for the rest of my life, it would probably be Caprese. It’s so simple but fresh and bursting with incredible flavor. I really didn’t think there was a way it could get any better until I tried this version that adds in sliced peaches! With peaches being in season right now in Utah, I thought it was the best time to try out this combination! One bite in, I was obsessed.

This Caprese salad checks all of the boxes. It’s creamy, savory, tangy, and sweet, too, with the addition of fresh peaches! If you need more delicious peach recipes in your life, find my full list here.

    Ingredients for Peach Caprese Salad

This peach Caprese salad recipe uses super simple ingredients, so it’s important that they’re all as fresh (or high quality) as possible! Check out the recipe card at the end of the post for exact measurements.

    • Peaches: This recipe is best made with fresh peaches!
    • Tomatoes: I used 4 ripe, medium-sized tomatoes. Since fresh tomatoes are such an important part of Caprese salads, see my tips section below on picking the best of the bunch! Even better, use garden-fresh tomatoes if you have them!
    • Fresh Mozzarella Cheese: Use high-quality mozzarella for the best flavor. You can also use burrata!
    • Olive Oil: You want your olive oil to be as flavorful as possible, so I recommend using cold-pressed or extra virgin olive oil.
    • Balsamic Vinegar: You can add balsamic vinegar as-is, or make it into a balsamic reduction for a more glaze-like texture. See my tips section below for more info on making a balsamic reduction!
    • Flaked Sea Salt: I love the texture that flaky salt adds to this salad.
    • Fresh Basil Leaves: Fresh basil is a must-add for that signature fresh, minty flavor of Caprese.

How to Make Caprese Salad With Peaches

You’re going to love this fun and fruity twist on a traditional Caprese salad. It’s super easy to prepare, too, which makes it the perfect summer side dish!

    1. Prepare Peach: First, cut your peach into wedges.
    2. Cut Tomatoes: Slice tomatoes ¼ inch thick.
    3. Slice Mozzarella: Next, slice the cheese ¼ inch thick.
    4. Layer: Layer the tomatoes and cheese on a plate.
    5. Add Toppings: Drizzle with olive oil and balsamic glaze. Top with flaked sea salt and fresh basil.

Tips For Making the Best Salad

From picking the best produce to making a tasty balsamic reduction, here are a few easy ways to upgrade your peach Caprese salad! You’re going to absolutely love it.

    • Picking Peaches: Make sure when you’re picking out peaches, they’re large, slightly firm, and free of bruises and blemishes. I like buying my fruit from farmer’s markets for the best flavor and juiciness.
    • Picking Tomatoes: The perfect tomato will feel heavy, be deep red in color, and free of bruises or blemishes. I always go for heirloom tomatoes because they’re great this time of year!
    • Making a Balsamic Reduction: If you want your balsamic drizzle to be on the thicker side, try making a balsamic reduction! Simply add your balsamic vinegar to a small saucepan and cook over medium heat until some liquid evaporates. The thick, glossy texture of a balsamic reduction helps it to coat your fruit, veggies, and cheese perfectly.

How Long Will My Salad Last?

I recommend eating your peach Caprese salad within 24 hours while all of the ingredients are fresh. The salt added to the tomatoes and peaches will draw out liquid and over time make your salad soggy.

    • In the Refrigerator: Store your peach Caprese salad in an airtight container for up to 24 hours.

    Caprese Flatbread With Balsamic Drizzle

Caprese dishes are the best. The melty goodness of mozzarella, sweet acidity of tomato, and tangy balsamic glaze is the ultimate flavor combination. I’ve got quite a few Caprese dishes on the blog to date (with this classic Caprese salad and Caprese casserole being some of my all-time favorites!) but this amazing Caprese flatbread recipe is quickly rising to the top! It’s easy to see why! It’s simple but such a crowd-pleaser. Everyone will want a slice.

Really, I love this Caprese flatbread recipe because it only takes a few minutes to prepare. All it needs is a drizzle of balsamic glaze once it comes out of the oven and then it’s ready to serve! It looks just as good as it tastes. It’s going to fly off the table at your next get-together! You won’t be able to resist a piece of cheesy, flavorful goodness.

    Ingredients You’ll Need

The essential components of a Caprese dish are tomatoes, mozzarella, fresh basil, and balsamic vinegar for drizzling on top. Because this recipe is so simple, it’s important to use the highest quality ingredients you can! This will take the flavor of your flatbread to the next level. Measurements for each ingredient can be found below in the recipe card.

    • Flatbread: I used store-bought for easy prep!
    • Olive Oil: Brush this on top of your flatbread to soften it up and add extra flavor.
    • Minced Garlic: Adds a delicious layer of savory flavor.
    • Mozzarella Cheese: A must-add for that classic Caprese flavor! You can use slice your mozzarella or tear it into pieces.
    • Cherry Tomatoes: Add delicious sweetness and acidity.
    • Italian Seasoning: This is my favorite blend of herbs! It adds the best flavor. You can buy this premade or make your own batch using my recipe here.
    • Salt and Pepper: Sprinkle both on top to enhance the overall flavor of your Caprese flatbread.
    • Fresh Basil Leaves: Add bright, minty flavor throughout this dish.
    • Balsamic Glaze: A drizzle of balsamic vinegar brings all of the flavors together!

    How to Make Caprese Flatbread

Making this delicious Caprese flatbread only requires a few simple steps of layering, then it’s off to the oven! It only takes 15 minutes from start to finish! It’s one of my favorite recipes to whip up last minute for summer potlucks.

    1. Preheat Oven: First, preheat your oven to 450 degrees Fahrenheit.
    2. Prep Pan: Line a baking sheet with parchment paper, and place the flatbread on the prepared pan.
    3. Brush on Olive Oil: Brush the olive oil on the flatbread. Make sure to cover the entire flatbread by brushing the olive oil all the way out to the edges.
    4. Add Minced Garlic: Evenly spread minced garlic over the olive oil.
    5. Layer With Mozzarella: Next, top the flatbread with fresh mozzarella that has been torn or sliced.
    6. Top With Tomatoes: Layer on the halved grape tomatoes, and sprinkle on the Italian seasonings.
    7. Bake: Bake for 10-15 minutes or until the cheese is melted and the edges of the crust start to get dark golden brown.
    8. Broil: Feel free to broil for 1-2 minutes additional minutes if you want to crisp up the flatbread. Just be careful to watch it closely.
    9. Add Basil and Seasonings: Top the pizza with fresh basil. Season with salt and pepper, and drizzle with balsamic glaze. Enjoy!

    Tips and Variations

There are a lot of ways to switch up this quick and easy recipe, but here are a few of my favorites!

    • Balsamic Reduction: If you want your glaze to be a little thicker than balsamic vinegar, try making a balsamic reduction! All you have to do is simmer balsamic vinegar in a saucepan until excess liquid evaporates and it thickens.
    • Switch Out Crust: Instead of using store-bought flatbread, you can also use naan or pizza dough that has been rolled thin and cooked.
    • Add Pesto: For extra flavor, try spreading some pesto over your flatbread before adding the rest of your toppings! It’s earthy and delicious.

    Storing Leftovers

Flatbread pizzas make the best leftovers! It’s the perfect thing to heat up for lunch. Here’s how to keep your Caprese flatbread tasting fresh and delicious for as long as possible.

    • In the Refrigerator: Store leftover flatbread in an airtight container for up to 3 days.
    • Reheating: To keep the crust crispy, I like to warm leftover Caprese flatbread in the oven for about 10 minutes at 350 degrees Fahrenheit.

  • Fresh Peach Salsa

    Fresh Peach Salsa

Fresh peach salsa is sweet and savory and the best of both worlds! Vine ripe peaches combined with garden vegetables create a delicious salsa to enjoy with tortilla chips or on chicken or fish.

There is nothing like fresh salsa in the summertime when fruits and vegetables are in season! I am always looking for yummy salsa recipes to use up my harvest. I love this easy blender salsa, and this slow cooker salsa, but our favorite is this sweet mango salsa!

The top view of a bowl of peach salsa with tortilla chips.

    What Is Peach Salsa

The freshness and flavor of peach salsa are so incredible, and you won’t be able to stop eating it. The best thing to happen to traditional salsa is the addition of peach. Fresh tomatoes, cilantro, onion, jalapeño, and red pepper compliment the peach perfectly, and it is love at first bite. Gobble it up with my fresh tortilla chips, and you will see that they are a match made in heaven!

I love the combination of sweet and savory. This fresh peach salsa recipe is one of my favorites, but you have to try some of my other favorite sweet and savory recipes. This baked chicken, this crockpot chicken, and this easy grilled chicken are all so delicious!

    Peach Salsa Ingredients

With just a few fresh ingredients, this peach salsa can be ready in minutes. All of these ingredients can be found in the produce section at the grocery store. But if you have a garden, fresh peach salsa is even easier.

    • Peaches: Fresh vine-ripened peaches are the BEST! If it is peach season, you’re all set!
    • Tomato: I like Roma or on the vine tomatoes, but use any tomato you like.
    • Red Bell Pepper: Red peppers are a sweet and crunchy texture that is perfect.
    • Red Onion: I love red onions in salsa!
    • Cilantro: Fresh cilantro in salsa is the perfect herb to compliment the flavors.
    • Jalapeño: Add just a little kick to the salsa. Feel free to leave it out if you prefer.
    • Lime: Fresh lime juice brings a brightness to the salsa.
    • Salt and Black Pepper: Season with salt and pepper to balance the flavors.

    How To Make Peach Salsa

Making peach salsa is easy and is the perfect appetizer. It is simple to prepare and be enjoyed with so many dishes, but my favorite is on top of these easy shrimp tacos. Once you see how easy and delicious this salsa is, you’ll want it on everything!

    1. Dice: Dice all of the ingredients using a sharp knife or chopping appliance.
    2. Combine: In a medium sized bowl, combine the diced peaches, tomato, red bell pepper, red onion, cilantro and jalapeño.
    3. Add Lime Juice and Season to Taste: Add lime juice and salt and pepper to taste.
    4. Chill and Serve: Chilling is best to help all the flavors blend, but you can serve the salsa right away.

    Ways to Serve It

I love how versatile this easy fresh peach salsa recipe is! There are so many ways to enjoy it. You can even add pineapple or strawberries to it! I can’t wait for you to make it, so here are some ideas for serving it.

    • Chips: Serve with your favorite tortilla chips. (I love a salty chip to make a sweet and salty crunch)
    • Meat: Use it to top grilled meats, such as chicken or pork.
    • Seafood: Use it to top seafood, such as cod, tilapia, salmon, or shrimp
    • Mexican Dishes: Use it to top tacos, burrito bowls, rice bowls, or quesadillas
    • Appetizer or Side Dish: This mango salsa also makes a great appetizer or side dish to a summer BBQ – just grab a spoon!

    Storing Leftovers

Peach salsa is best made ahead of time and refrigerated a few hours before serving. It allows the flavors to blend together. If you have leftovers, the salsa can be stored in an airtight container in the refrigerator for 5 to 7 days.

This is one of my favorite ways to use up leftover zucchini because you only need a couple extra ingredients to bring it together! They’re all things that you can find in your pantry. See my tips section below for more ways you can customize the flavor of your zucchini chips!

    • Zucchini: I used medium zucchini here for the perfect sized chips! Pick zucchini that is dark green and free of blemishes.
    • Olive Oil: Extra virgin olive oil gives these chips the best flavor.
    • Paprika: Adds a touch of warm, smoky spice!
    • Salt and Pepper: Enhance the overall flavor of your batch of zucchini chips!

    3. Add to Air Fryer Basket: Lay the zucchini in a single layer in the air fryer basket.

Tips for Making Perfect Air Fryer Zucchini Chips

Here are a couple more things to keep in mind as you make your delicious air fried zucchini chips. You can easily tweak the flavor to your liking. Each batch will turn out so perfectly, you’re going to love them!

    • Use a Mandoline: Using a mandoline slicer will make your life so much easier! It gives you thin, even zucchini slices every time.
    • Don’t Overcrowd Air Fryer: Only cook a small batch of these chips at a time. Air flow is crucial for them to cook through properly. If there’s not enough space between each chip, they may end up soggy instead of crispy and golden.
    • Switch Up Flavor: Feel free to customize these zucchini chips with all of your favorite seasonings and spices! A few fun ideas to try are lemon pepper, Cajun seasoning, ranch dressing mix, or even just a sprinkle of parmesan cheese and garlic powder!

    Storing Leftover Chips

Because these zucchini chips are so easy to whip up, sometimes my eyes are bigger than my stomach when I make a batch. Good news is, you can easily store them and snack on them later!

    • At Room Temperature: Store any leftover chips in an airtight container for up to 3 days.

  • Tender Roasted Root Vegetables

    Tender Roasted Root Vegetables

You have not had delicious vegetables until you have tried these roasted root vegetables! They have SO much flavor, and their texture is so tender that you will want to eat these with every meal!

I absolutely love a good, hearty side dish! And one that is healthy is even better! Try out some more of these yummy veggies that you can pair with all of your entrees. Some of my favorites are grilled asparagus, this air fryer “roasted” cauliflower, or this delicious copycat Olive Garden salad.

A white bowl filled with roasted root vegetables.

    What are Roasted Root Vegetables?

If you are asking yourself what a root vegetable is, then you are not alone! This is a common question! A root vegetable is a veggie that is grown underground. The ones that I used in this recipe are carrots, parsnips, beets, and yams!

These vegetables typically are ones that you see made IN something (like this roasted beet, quinoa, and carrot salad). But this recipe, they are all on their own, and I am telling you, is the best! My favorite part is the beets. These roasted root vegetables are cooked to perfection and have the sweetest taste to them. I’m normally not a person who grabs veggies for a snack but with these… I could eat the entire pan!

    Ingredients in Roasted Root Vegetables

The key to this roasted root vegetable recipe is the seasonings and cooking these to that they are soft and tender. Luckily, that is pretty easy to do, and this recipe should take you less than 35 minutes. And that includes cooking time! Check out the recipe card at the bottom of the post for exact ingredient measurements.

    • Carrots: Use whole carrots and wash and peel them!
    • Parsnips: If you have never had a parsnip then this is the recipe to try them out in! They are similar to potatoes.
    • Beets: I am not normally a huge fan of roasted beets, but these were SO good and the best part of the recipe.
    • Yams: I love cooking up yams ( so that they are soft and tender.
    • Olive Oil: This is what will help the seasoning stick to the vegetables.
    • Italian Seasoning: You can make this at home using my easy recipe, or you can buy this at the store!
    • Kosher Salt: This enhances all of the flavors in the veggies.
    • Cracked Black Pepper: This adds just enough flavor without any heat.

How to Make Roasted Root Vegetables

These root veggies are so easy to roast that you will be singing its praises for a long time! It goes with everything so it’s a great go-to recipe for just about any occasion!

    1. Prep: Preheat the oven to 400° Fahrenheit and spray a baking sheet with non-stick cooking spray.
    2. Peel Vegetables: Using a vegetable peeler, peel the carrots, parsnips, beets, and yams.
    3. Cut: Remove the ends of the vegetables if needed, and cut them into 1 ½ inch pieces. Make sure to cut all the vegetables the same size so they all cook evenly.
    4. Separate: Add the carrot, parsnip, and yam pieces to a large bowl. Place the beets separately in another bowl. I like to keep the beets separate to prevent the beet juice from coloring all the other vegetables.
    5. Toss: Place 2 tablespoons olive oil in the large bowl with the majority of the vegetables and the remaining 1 tablespoon olive oil in with the beets. Toss to stir and coat the vegetables evenly.
    6. Cost: Sprinkle the Italian herbs and salt and pepper evenly over the vegetables. Toss to coat one more time.
    7. Add to Pan: Pour the large bowl of vegetables onto the prepared pan. Then, carefully place the beet pieces on the pan, being careful not to discolor the other vegetables. It’s ok if you do. I just prefer them not to for presentation reasons.
    8. Cook: Place the vegetables in the oven and bake for 25-30 minutes or until the vegetables are fork tender.

    Tips for Roasting Vegetables

I think this is the best recipe out there for roasted root vegetables! To make sure that yours turn out amazing as well then, you need to follow these easy tips!

    • High Heat: Roasted vegetables are meant to take the heat! To get them to roast perfectly then, you need them to be at a high temperature. Any temperature lower than 400 degrees Fahrenheit and your veggies will turn out soggy.
    • Don’t Crowd the Pan: In order for each and every slice of vegetable to cook perfectly, they shouldn’t be touching each other on the pan. Spread them out, and don’t stack them on top of one another or layer them. This is exactly why a large, rimmed baking sheet is perfect for cooking these on!
    • Oil: You definitely don’t want to skip out on the oil when cooking these. If you need to, then you can substitute the olive oil for extra virgin olive oil or even vegetable oil.
    • Variations: You can try adding in more delicious vegetables like sweet potatoes, golden beets, and onions, and try adding different seasonings to them! I love garlic, thyme, rosemary, or any fresh herbs!

A baking sheet with roasted root vegetables being scooped up with a wooden spoon.

    How to Reheat Leftovers

You can store any leftovers of these roasted root vegetables in an airtight container in your fridge for about 2-3 days. The key to making them taste delicious is reheating them!

    • In the Oven: I know it’s tempting to use the microwave to reheat things because it’s so convenient but trust me, you definitely want to reheat these veggies in the oven. The microwave will make them all soggy and fall apart! Spread the veggies out on a baking sheet and drizzle them with a little bit of fresh love oil. Cook them at 425 degrees Fahrenheit for about 5 minutes or until they are warmed through.
    • In the Air Fryer: You can also cook leftovers in the air fryer (remember, don’t stack or crowd them!) for about 3-4 minutes at 400 degrees Fahrenheit.

    Ingredients

    • 4 large whole carrots
    • 2 large parsnips
    • 1 large beet (or 4 small)
    • 2 medium yams
    • 3 tbsp olive oil
    • 1 tablespoon dried Italian seasoning
    • 1 teaspoon Kosher salt
    • 1/2 teaspoon cracked black pepper

    Instructions

    • Preheat the oven to 400° Fahrenheit and spray a baking sheet with non-stick cooking spray.
    • Using a vegetable peeler, peel the carrots, parsnips, beets, and yams.
    • Remove the ends of the vegetables if needed, and cut them into 1 ½ inch pieces. Make sure to cut all the vegetables the same size, so they all cook evenly.
    • Add the carrot, parsnip, and yam pieces to a large bowl. Place the beets separately in another bowl. I like to keep the beets separate to prevent the beet juice from coloring all the other vegetables.
    • Place 2 tablespoons olive oil in the large bowl with the majority of the vegetables and the remaining 1 tablespoon olive oil in with the beets. Toss to stir and coat the vegetables evenly.
    • Sprinkle the Italian herbs and salt and pepper evenly over the vegetables. Toss to coat one more time.
    • Pour the large bowl of vegetables onto the prepared pan. Then, carefully place the beet pieces on the pan being careful not to discolor the other vegetables. It's ok if you do. I just prefer them not to for presentation reasons.
    • Place the vegetables in the oven and bake for 25-30 minutes or until the vegetables are fork tender.
