Pumpkin Chiffon Pie with Biscoff Crust

If you are looking for a fun twist on a classic pie often served at Thanksgiving dinner, this Pumpkin Chiffon Pie with Biscoff Crust is your new best friend! It’s fluffier than a typical pumpkin pie, and the cookie crust is spoon licking good. This recipe is one you’ll want to serve for the holidays or any day!

It’s no secret I’m a fan of pie. I mean, can you blame me? Creamy filling with a sweet crunchy or flaky crust, who could find fault with that?! I love making pies all year round, but since the Holidays are approaching, I am looking forward to fall-inspired pies! This classic Chocolate Pie is one I make every year for those who don’t like pumpkin. Take it up a notch and try this amazing German Chocolate Pie! This Sweet Potato Pie has also become a favorite around the holidays.

    What is a Chiffon Pie?

A chiffon pie is similar to a custard pie, but the filling is folded with meringue to make it light and fluffy. And this pie definitely is! This silky smooth pumpkin pie will knock your fuzzy socks off. It is SO full of fall flavor and is gone faster than my regular pumpkin pie recipe (which is fantastic so that’s saying something). This Pumpkin Chiffon Pie is my current favorite pumpkin dessert, it’s just so creamy and doesn’t feel heavy in my stomach. I can’t get enough of it!

If you love a graham cracker crust, you are going to LOVE this Biscoff cookie crust. It’s a similar texture, but with so much flavor! Biscoff cookies go perfectly with this creamy pumpkin filling. It’s a great way to surprise your family this holiday season with something new. And the best part is, it’s not hard to make! If you are worried about whipping egg whites, I’ve got my tips listed below. They will turn out perfectly!

    Ingredients in Pumpkin Chiffon Pie

This pumpkin chiffon pie is so full of fall flavors! It has classic spices that warm your taste buds and is complimented by a light and fluffy filling. It’s just too good! And it really doesn’t take too many ingredients to make which is always a plus. See the recipe card below for exact measurements.

    • Biscoff Cookie Crumbs: You can actually buy Biscoff Cookie crumbs, or you can pulse them in a food processor until fine. Or you can use the method I used growing up- put them in a Ziplock bag and crush them with a rolling pin!
    • Granulated Sugar: The sugar you have in your pantry is what you should use for this pie.
    • Butter: I used salted butter in this chiffon pie. This recipe calls for melted butter.
    • Vanilla Extract: Whatever you use for baking will work great for this pie.
Process photos of a pie dish with pie crust pressed in it, a bowl with pumpkin puree, eggs and milk, a pot with the ingredients mixed together, and the final combined bowl of the filling.

    Pumpkin Chiffon Pie Filling Ingredients

    • Unflavored Gelatin: You should be able to find unflavored gelatin in the baking aisle of your grocery store. This helps the pie set up.
    • Ground Cinnamon: It’s a classic pairing with pumpkin, and great for the holidays!
    • Ground Nutmeg: Adds warm, earthy flavor.
    • Ground Clove: Cloves are a little floral, and a bit sweet! They really bring the wow factor to this pie!
    • Ground Ginger: Adds a sharp flavor that pairs perfectly with pumpkin.
    • Salt: Enhances the flavors in the pie.
    • Sugar: To sweeten the filling.
    • Pumpkin Puree: You should be able to find a can of regular pumpkin puree without the spices. If you have canned pumpkin pie filling and want to use that, you’ll want to cut back on the other spices in this pie.
    • Egg Yolks: You will need to separate your egg whites from yolks, so I like that this recipe calls for both so you don’t have any extra whites or yolks.
    • Whole Milk: Whole milk really is best for this recipe. You could probably get away with 2%, but your milk needs to have fat in it.
    • Egg Whites: This is to make the meringue.
    • Cream of Tartar: This helps to stabilize the egg whites and helps them get nice and fluffy.

How to Make Pumpkin Chiffon Pie

This pie is so worth the time that it will take to make! The meringue is not as difficult to make as you may believe. I have tips listed below that will help you know how to whip the egg whites. Other than that, this pie is a breeze to make! It’s so simple, creamy and fluffy you’ll want to make two!

    Making the Biscoff Crust

    1. Mix: Using a hand mixer, combine all ingredients in a bowl and mix well.
    2. Press: Press mixture into a 9” pie pan firmly and evenly with the back of a spoon
    3. Bake: Now bake the crust in an oven preheated to 325℉ for 10 minutes.
    4. Cool: Remove from oven and let cool completely before filling.
Dessert with a few slices taken out with pumpkins in the background.

How to Make Pumpkin Chiffon Pie Filling

    1. Whisk: In a medium saucepan whisk together gelatin, all the spices, and ½ cup of the sugar
    2. Mix Wet with Dry: In a separate bowl whisk pumpkin, egg yolks, and milk. Pour wet ingredients into your saucepan with the dry ingredients and mix well.
    3. Boil: Over medium-high heat bring the mixture to a gentile boil, stirring constantly. Once bubbles start to form around the edges of the pan, remove from heat, pour into a separate bowl and let cool to room temperature.
    4. Whip Egg Whites: In another bowl either using a hand mixer or a stand mixer fitted with the whisk, whisk the egg whites and cream of tartar until soft peaks form.
    5. Add Sugar: Start adding the rest of the sugar in 1 tablespoon at a time while you whisk. Continue until the rest of the sugar is used, and stiff peaks have formed. Don’t overmix the egg whites!
    6. Fold: Take about ¼ of your egg white mixture and gently fold it into your cooled pumpkin mixture.
    7. Fold the Rest: Add the remaining egg white mixture to your pumpkin mixture, gently folding until well combined. Be careful not to degas the egg whites when folding in, this is what gives your pie the fluffy airy texture.
    8. Chill: Pour mixture into your cooled pie shell and chill in the fridge, for at least 2 hours, or overnight before serving.
    9. Eat: Serve with whipped cream and enjoy!

How to Make Perfect Whipped Egg Whites

If whipped egg whites intimidate you, you are not alone! They can be tricky, but not impossible. And you CAN do it! Here are a few tips to give you the confidence to make these egg whites for your pumpkin chiffon pie.

    • Using a Clean Bowl: It’s important that your bowl and whisk are spotless. If you have any fat from oil or something you’ve made before it will affect the egg whites.
    • Using Room Temperature Eggs: Eggs will separate more easily when they are cold, but they will whip up better when at room temperature. I recommend separating them before you start making your crust, then leave the whites out for 20 minutes. Then they will be ready to whip up and get fluffy!
    • Whip to Stiff Peaks: You want to whisk them until you get stiff peaks but not much past that. A stiff peak means the eggs are smooth, white, shiny, and stand up straight when you pull the whisk out. You will know if you over-whip them because they will get grainy and won’t look shiny anymore.
    • Folding Egg Whites In: When folding them into the pumpkin mixture take care to fold gently, not stir or whisk. I recommend adding about ¼ of your egg whites and folding that first. Then you can add the rest and finish folding it in.

Note: This recipe uses raw beaten egg whites, if you are nervous about using raw eggs you can use pasteurized egg whites instead.

How to Store Leftover Pumpkin Chiffon Pie

This pie is best when eaten within 24 hours because of the whipped egg whites. After two days the pie will start to relax and deflate. But if you do need to store your pie, here is how you can do that.

In the Refrigerator: Store this pie in an airtight container or covered in plastic wrap for 3-4 days in the refrigerator.

In the Freezer: You can freeze this pie, although it won’t be as good as when it is fresh. Store in an airtight container without the whipped cream on top for up to a month.

This dessert is so easy to make and kind of magical. Not to mention it is perfect for Fall baking! I know it sounds crazy, but just trust me on this! You will end up with a moist cinnamon cake that hides an indulgent caramel sauce underneath!

Magical right?? This cake did not last long in my house! The best is that caramel sauce that is hiding underneath. Make sure you spoon some out and drizzle it all over the cake. And of course the ice cream too. Because, of course, just like with any cobbler, it isn’t complete until you top it off with some vanilla ice cream. The combination of warm gooey snickerdoodle cobbler with the cold ice cream is definitely something you need to experience this Fall season!

    Baked Pumpkin Donuts Recipe

Happy October! Are you obsessed with all things pumpkin right now like me? I think I have already gone through 4 or 5 cans and I have no plans of stopping anytime soon. These tasty donuts are the best addition to the pumpkin treat list, you’re going to LOVE them! My family went nuts over them. They disappeared SO fast! I was already getting asked to make another batch the same day.

The donut itself is super tender and moist, packed with so much amazing pumpkin flavor and warm fall spices! But can we talk about this brown butter glaze? It’s rich, nutty, and the perfect topping for this incredible donut. You can’t go wrong with brown butter, it makes every dessert even better! (You’ll have to try these brown butter Rice Krispies treats to see what I mean!) These baked pumpkin donuts are a must-make this holiday season. You may just want to make them year-round, and I don’t blame you!

    Ingredients You’ll Need

    For the Donuts:

    • Vegetable Oil: Adds moisture to your donuts.
    • Large Eggs: Help all of the ingredients bind together!
    • Sugar: Granulated sugar works great here to sweeten up your donut batter.
    • Pumpkin Puree: Be sure to use pure pumpkin puree and not pumpkin pie filling since we’re adding in our own spices! You can use canned pumpkin for easy prep or make your own puree for the freshest flavor. Find my full recipe here!
    • Spices: I used a blend of cinnamon, nutmeg, and ground ginger for some classic fall flavor. You can also use pumpkin pie spice if you’d like!
    • Salt: A pinch is all you need to enhance the flavors of these tasty baked pumpkin donuts.
    • Baking Powder: Helps the donuts become light and airy instead of dense.
    • Flour: All-purpose flour works great here!

    For the Brown Butter Glaze:

    • Unsalted Butter: I like the flavor of my glaze to be rich and nutty rather than salty, so I went for unsalted butter here.
    • Powdered Sugar: Adds the best sweetness and silky-smooth texture to the glaze.
    • Vanilla: Use pure vanilla extract if you can!
    • Milk: Helps to adjust the consistency of the glaze. Any kind of milk works fine.

How to Make Baked Pumpkin Donuts With Brown Butter Glaze

Baked pumpkin donuts are such a quick and easy treat! They bake in 15 minutes with a short prep time so that you can spend less time in the kitchen and more time enjoying a tasty fall treat with your family and friends.

    1. Preheat Oven, Prep Pan: Preheat oven to 350 degrees. Lightly grease a standard donut pan and set aside.
    2. Donut Batter: In a large bowl, beat the oil, eggs, sugar, pumpkin, spices, salt and baking powder until smooth and well combined. Add the flour and stir until just combined.
    3. Add to Donut Pan and Bake: Fill the wells of the donut pan ¾ full, about ¼ cup batter per donut. Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
    4. Cool: Remove from oven, wait a few minutes and then use a toothpick to loosen and remove the donuts from the pan and place on a wire rack. Repeat with remaining batter.
    5. Add Glaze: When donuts are cool, dip in the glaze. Makes around 17 donuts.

    Brown Butter Glaze

    1. Brown the Butter: Melt the butter in a small saucepan over medium heat and heat until golden brown specks appear in the bottom of the pan, swirling the pan occasionally. The butter will get foamy and if you swirl the pan around, you will see brown bits at the bottom and it will have a nutty smell.
    2. Add Remaining Ingredients: Remove from heat and pour into a medium bowl, using a rubber scraper to get all the brown bits at the bottom. Add the powdered sugar and vanilla and stir until smooth and well combined. Add enough milk, as needed, to reach desired glaze consistency.
    3. Frost: Dip tops of cooled donuts in glaze and set on a wire rack and allow glaze to harden. Sprinkle with sprinkles, if desired, before the glaze crusts over.

    Tips and Variations

Here are a few extra ways you can customize your tasty baked pumpkin donuts! They’re going to turn out perfectly! Prepare to have them on repeat all season long.

    • Don’t Overmix: Overmixing your donut batter can cause gluten to develop which will make your pumpkin donuts hard and rubbery instead of soft and moist. Only mix until ingredients are combined.
    • Toppings: Try out different toppings for your donuts! Sprinkles are always a good idea, as well as a chocolate or caramel drizzle, or chopped nuts! Be sure to add any toppings to the glaze before it sets!
    • Use Homemade Pumpkin Puree: If you want to take the flavor of your baked pumpkin donuts to the next level, use homemade pumpkin puree instead of canned! It’s super easy to make and tastes a million times better! Plus, it’s free of additives and preservatives! You can find my full recipe here. It comes in handy for so many different recipes, from pumpkin pecan pie bars to pumpkin hummus!

    Ingredients

    • 1/2 cup vegetable oil
    • 3 large eggs
    • 1 1/2 cup sugar
    • 1 1/2 cup pumpkin puree
    • 1 1/4 tsp cinnamon
    • 1/4 tsp nutmeg
    • 1/4 tsp ground ginger
    • 1 1/2 tsp salt
    • 1 1/2 tsp baking powder
    • 1 3/4 cup + 2 tbsp all-purpose flour

    Brown Butter Glaze

    • 4 tbsp unsalted butter
    • 2 cup powdered sugar
    • 1 tsp. vanilla
    • 1-2 tbsp milk or more if needed

    Instructions

    • Preheat oven to 350 degrees. Lightly grease a standard donut pan and set aside.
    • In a large bowl, beat the oil, eggs, sugar, pumpkin, spices, salt and baking powder until smooth and well combined. Add the flour and stir until just combined.
    • Fill the wells of the donut pan ¾ full, about ¼ cup batter per donut. Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
    • Remove from oven, wait a few minutes and then use a toothpick to loosen and remove the donuts from the pan and place on a wire rack. Repeat with remaining batter.
    • When donuts are cool, dip in the glaze. Makes around 17 donuts.

    Brown Butter Glaze

    • Melt the butter in a small saucepan over medium heat and heat until golden brown specks appear in the bottom of the pan, swirling the pan occasionally. The butter will get foamy and if you swirl the pan around, you will see brown bits at the bottom and it will have a nutty smell.
    • Remove from heat and pour into a medium bowl, using a rubber scraper to get all the brown bits at the bottom. Add the powdered sugar and vanilla and stir until smooth and well combined. Add enough milk, as needed, to reach desired glaze consistency.
    • Dip tops of cooled donuts in glaze and set on a wire rack and allow glaze to harden. Sprinkle with sprinkles, if desired, before the glaze crusts over.

    Cheese Danish

These cheese danishes are flaky, buttery, and full of tangy flavor. Topped with a sweet glaze and baked to perfection, this cheese danish recipe will make the perfect breakfast or dessert for any occasion. They were irresistibly good and gone way too fast!

I am a huge fan of puff pastry. Pre-made dough sheets of puff pastry are the way to go. If you are looking for other recipes to use your puff pastry with, you HAVE to try this Raspberry Baked Brie. It’s brie and raspberry preserves baked in puff pastry, and WOW! You might also love this Apple Danish or these Simple and Delicious Sausage Rolls. Get using those pastry sheets, you can thank me later!

    Homemade Cheese Danish Recipe

Let me tell you, these Cheese Danishes are a home run. They are stunning, flaky, and everything you want to wake up to in the morning. They are simple to put together and the list of ingredients is mostly things you already have on hand. These Danishes are so simple because you don’t have to worry about making the dough, and you get all the reward of a delicious flaky dessert or breakfast treat in just 45 minutes.

It’s no secret I’m a fan of flaky crusts (hello Grandma’s Perfect Pie Crust), and gooey sweet fillings. Cream puffs are probably one of my all-time favorite desserts, but sometimes I just don’t want to go through all the effort to make the dough and the custard fillings. This Cream Cheese Danish is the perfect compromise because I get the flaky chewy outside with the soft creamy inside for half the effort. And the taste is really hard to beat! I think your family will be just as wowed with this recipe as mine is.

    Ingredients in Cheese Danish

You may have to run to the store for some frozen puff pastry sheets and cream cheese, but that’s it for this recipe! Everything else comes right out of your fridge and pantry and is ready to eat in just 50 minutes. It’s a simple recipe that will become a household favorite!

    • Puff Pastry: I bought one box of frozen puff pastry from the frozen section at the grocery store.
    • Cream Cheese: You will need an 8-ounce package of cream cheese, and make sure to leave it out for at least 2 hours before making this dessert so it is room temperature.
    • Granulated Sugar: I use the regular sugar out of my pantry. This is to sweeten the cream cheese filling.

    Egg Wash

    • Egg: You will need one whole egg, I always use large Grade A eggs in my recipes.
    • Water: This is to mix with the egg for the egg wash.

    Glaze

    • Vanilla Extract: Whatever your usual baking vanilla extract is will work.
    • Powdered Sugar: This is the key ingredient for this glaze, you won’t be happy with the results without it!
    • Milk: Milk makes the glaze creamy and smooth, any kind of milk will work.

How to Make Cheese Danish From Scratch

This recipe was really simple and came out stunning. They looked so professional and everyone was so blown away by their delicious flavor. I know your family will love these Cheese Danishes as much as mine did!

    1. Prep: Preheat the oven to 375℉ and then line a baking sheet with parchment paper.
    2. Mix: In a medium bowl, beat the cream cheese with the sugar and lemon juice until smooth. Then, in a small bowl mix the egg and water together with a fork to make the egg wash.
    3. Fold: Next open the first sheet of puff pastry and cut into 9 even squares. Then fold each square in half to form a triangle. After that, slice two slices along the open sides of the triangle, but leave a small space at the peak of the triangle uncut.
    4. Form: Open the triangle and use a pastry brush to brush the whole square. Then fold the cut corners of the square over to form the kite.
    5. Fill: Scoop a teaspoon of cream cheese filling into the center of the pastry and brush the edges with egg wash.
    6. Bake: Bake for 13-15 minutes, until the pastry begins to turn golden brown. Then move them to a cooling rack and let cool completely.
    7. Glaze: In a medium bowl, whisk together the powdered sugar, vanilla, and milk to make the glaze. Drizzle over the top of the Danishes and serve.

    Tips and Variations

I loved making this cheese danish recipe, they turned out so beautifully and they were so tasty. Here are a few tips from my experience that will help you make the most out of this recipe.

    • Make a Different Shape: If you prefer not to make the more complex kite shape, keep the pastry cut in squares, add the filling to the center and fold the corners of the pastry in until they touch (but not cover) the filling. Brush with egg wash and bake.
    • Try a Different Flavor: For a variation in flavor, try adding ¼ teaspoon almond extract or ½ teaspoon vanilla extract to the filling. You could also flavor the cream cheese, my favorite is Strawberry Cream Cheese!
    • Thawing the Puff Pastry: If your puff pastry doesn’t have time to thaw, wrap it in a paper towel and heat in the microwave in 10-second intervals until it’s able to unfold without cracking. Be careful not to thaw it too much.
    • Room Temperature Cream Cheese: Leave the cream cheese on the counter for 2-3 hours to ensure it’s soft enough to beat into a smooth filling.

    How to Store Leftovers

These cheese danishes make a lovely breakfast the next day. Here are a few tips on storing them to maintain freshness.

    • On the Counter: Store in an airtight container or covered with plastic wrap at room temperature for up to 4 days.

Note: These do not freeze well. They are best if baked and eaten within a few days.

    The Best of Pumpkin Recipes

Whether sweet or savory is your thing, I’ve got you covered with this pumpkin roundup! Ranging from cookies to truffles to soup to pasta and everything in between, pumpkin season is the best season. And who are we kidding? With all of these amazing recipes, I am not just waiting for the fall to make these! I am cooking them all year round! Not only are they delicious, but pumpkins are rich in potassium which is so good for our bodies! Even pumpkin seeds are very nutritious!

If you haven’t branched out with pumpkin before, you are probably only really familiar with its taste in the traditional pumpkin pie! While I do love a good pumpkin pie, I am here to introduce you to what will be a revelatory moment! Pumpkin is used in ALL things. They bring the most amazing texture to baked goods. Moist, delicious, and soft cakes and cookies definitely benefit from the pumpkin in their ingredients. Tried and true, this pumpkin roundup will really bring you some joy and good tasting for your fall season!

    Tips for Baking with Pumpkin

When you try out some new pumpkin recipes, there are a few helpful hints you will want to keep in mind! Read through these before you begin, and you will be well on your way to becoming a pumpkin expert!

    • Pumpkin Puree: Not really a baking tip but one that will be well used. Always have a can or two of pumpkin puree on hand! It gets crazy out there at the grocery stores in the fall, and sometimes, I go to pick some up, and it’s all out of stock! Grab a couple when you see them so that you will be all set!
    • Substitute: Did you know that you can use pumpkin as a substitute for recipes that call for applesauce? It’s a 1:1 ratio so you don’t even have to do any extra math to figure out how much! This opens a whole new world of recipes that can now taste like fall!
    • Pumpkin Pie Filling: Don’t try and use pumpkin pie filling in place of pumpkin puree. It has a different blend of sugar and spices so it will make your recipes calling for puree taste odd!
    • Don’t Undercook: If you go by touch or feel when deciding if something with pumpkin puree is done, you may end up with an undercooked treat! Because pumpkin is so moist, the standard “toothpick that comes out clean” trick doesn’t always work. A tried and true method is to use a thermometer to test the thickest part of your bread or pie. Bread loaves and muffins are done at 200 degrees and a pie is complete at 175 degrees!

How to Decorate Mini Halloween Donuts (3 Ways!)

If you are looking for simple and easy instructions on decorating mini Halloween donuts, then you are in luck! Candy corns, pumpkins, and Frankenstein will grace the presence of your Halloween party this year with these decorated donuts!

If you love Halloween treats that are festive and spooky, you have got to try out these cute Halloween Donut Hole Pops, these cute Halloween Cupcakes, and this delightful Halloween Charcuterie Board. Halloween is such a fun holiday and is made that much better with festive food!

A platter of mini donuts that are decorated like candy corn, Frankensteing and a pumpkin.

    Decorating Mini Halloween Donuts

This how-to guide is simple because it starts with some store-bought donuts! You can totally make them from scratch at home (try out this recipe!). But because these take a while to decorate, I like to try and skip a step to make things go a little quicker. And when you see how cute these are, you will want to get right to work!

I did three different ways of decorating donuts because, to me, candy corns, pumpkins, and Frankenstein are classic to Halloween! However, once you understand how I did these, feel free to get some more colors and decorations! You could make ghosts, goblins, witches, and whatever you love! This is such a fun activity to do with your kids during this holiday. My kids adore making their very own monster creations!

Ingredients to Decorate Mini Halloween Donuts

This list of ingredients mostly includes all of the different colors and decorations. You can easily switch these up to make these unique for your family! Check out the recipe card at the bottom of the post for exact measurements.

    • Mini Donuts: I bought some of these at the store (get glazed or plain). But you can easily make them at home using this recipe!
    • Yellow Candy Melts: You can’t have a complete candy corn donut without some yellow candy melts!
    • Orange Candy Melts: Orange is a classic Halloween color! You will use this for the candy corn donuts and the pumpkin donuts!
    • White Candy Melts: You will use this color to complete your candy corn donuts. I also think another design of a white ghost would be darling using this color as well!
    • Green Candy Melts: I love the color of green candy melts because it is perfect for Frankenstein’s face.
    • Black Candy Melts: The black is used for Frankenstein’s hair but could also be used for a cat design or even a cute little witch hat!
    • Green Mike and Ike Candies: If you want your pumpkin to really look like a pumpkin, then you need a stem! This goes right in the middle, and I love that it’s edible too!
    • Small Eyeball Sprinkles: Look for these on the baking aisle at your local grocery store. Especially around Halloween!
    • Edible Black Marker: You will use this to draw on Frankenstein’s stitches.

How to Decorate Mini Halloween Donuts

Before we begin with all of the individual designs, you must get everything set up and ready to go in your kitchen! This will help the process go faster and allow the candy melts to cool perfectly in place on your donuts!

    1. Prep Counter: Line the counter with parchment paper and cover with a cooling rack.
    2. Set up Donuts: Lay out ten mini donuts on the cooling rack.
    3. Melt Candy Melts: Melt the candy melts needed for one design by placing them in a small bowl, one bowl for each color, and microwave at half power for 1 minute. Stir thoroughly and microwave for an additional 30 seconds if needed.
4 pictures showing how to decorate mini donuts to be Frankenstein and candy corns.

    Candy Corn Design

This mini Halloween donut design is so cute and festive. In fact, you could add this (or any of these) onto a Halloween Charcuterie Board and your guests will be fighting about who gets to eat the cute donuts!

    1. Orange: Add the melted orange candy melts to a piping bag and snip off the end of the bag. Pipe a wide orange stripe right across the middle of the donuts.
    2. Yellow: Add the melted yellow candy melts to a piping bag and pipe a stripe across the bottom of the donuts, just slightly overlapping the still-wet orange stripe.
    3. White: Add the melted white candy melts to a piping bag and pipe a stripe across the top of the donuts, just slightly overlapping the still-wet orange stripe.
    4. Let Set: Carefully lift the donuts and transfer them to the other side of the cooling rack, so they don’t end up with cooled drips of candy melts hanging off them. Let them set completely before serving.

    Pumpkin Design

A pumpkin is a classic Halloween (and fall) decoration! This is the easiest of all three mini Halloween donut designs but one that can’t be left out. It’s especially cute when you add in the edible candy stem!

    1. Dip and Shake: Carefully dip the top of the donuts one by one in the melted orange candy melts. Shake off excess before placing top up on the cooling rack. While the candy melts are still wet, press a green Mike and Ike candy into the center of the donut to act as the stem.
    2. Let Cool: Let them set completely before serving.

    Frankenstein Design

This mini Halloween donut may just be my kid’s favorite! They love adding any sort of eyeballs to decorate things, plus they love piping out his hair!

    1. Dip: Carefully dip the top of the donuts in the melted green candy melts. Shake off the excess before placing them top up on the cooling rack. While the green candy melts are still wet, place two small eyeball sprinkles just above the center of the donut.
    2. Pipe Hair: Once the green has set up, add the melted black candy melts to a piping bag and pipe hair along the top third of the donut, just above the eyeballs.
    3. Add Stitches: Once the black has set up, use an edible black marker to draw a couple of stitches on Frankenstein’s face.

    How to Store Donuts

These mini Halloween donuts are so easy to make ahead of time, making them the perfect party treat! Once you have decorated your donuts and let the candy melts set, you can place them in an airtight container. Make sure to use parchment paper in between layers so they don’t stick together. You can store them at room temperature for about 2-3 days.

  • Homemade Chocolate Pudding

    Homemade Chocolate Pudding

A classic dessert, this homemade chocolate pudding is here to please! Rich, indulgent, and silky-smooth, it’s everything you could want from a chocolate dessert!

I’m going to say it- there is NOTHING better than homemade pudding. It tastes so much better than anything you can find at the store! It’s just so smooth and creamy. A few more recipes to add to your dessert lineup are homemade vanilla pudding, rice pudding, and tapioca pudding. They won’t disappoint!

Closeup of chocolate pudding in a glass jar, garnished with whipped cream and a raspberry.

    Homemade Chocolate Pudding Recipe

I posted this recipe for homemade vanilla pudding last week, and now it’s time for its chocolate counterpart. As much as I love vanilla, you always have to save the best for last, right? There’s just something about chocolate pudding that is so unbelievably good! (As much as I love them) we’re upgrading from those pudding cups that you get from the store today.

Making homemade pudding is so much easier than you’d think! Once you get a taste of the rich chocolatey flavor you’re going to want to make it all the time. I don’t blame you! Homemade chocolate pudding has quickly become one of my family’s favorite treats and I know yours will love it too. Just be sure to save some for yourself before it gets eaten!

    Ingredients You’ll Need

Since chocolate is the main flavor of this dessert, using high-quality chocolate is key! As long as you’ve got some good chocolate, you likely have the rest of these ingredients in your pantry and fridge ready to go! Check out the recipe card below for exact measurements.

    • Cocoa Powder: Gives your whole batch of pudding rich chocolate flavor.
    • Granulated Sugar: Adds the perfect sweetness to the pudding.
    • Cornstarch: Adds thickness and helps the pudding solidify.
    • Salt: Just a pinch is all you need to enhance the chocolatey flavor!
    • Large Egg Yolks: Egg yolks help bind all of the ingredients together and also create a nice, smooth texture.
    • Whole Milk: The high fat content in whole milk will make your pudding extra creamy.
    • Chocolate: I used semi-sweet chocolate so the pudding isn’t too sweet, but feel free to use dark or milk chocolate, whatever you prefer! Adding chopped chocolate gives the pudding an extra layer of flavor.
    • Unsalted Butter: Adds richness and flavor!
    • Vanilla Extract: Use pure vanilla extract if you can for the best flavor!

How to Make Homemade Chocolate Pudding

As delicious as this homemade chocolate pudding is, it needs to be chilled for 4 hours (preferably overnight) to set properly. Because of this, it’s not the best for making last minute but it’s great for making ahead of time!

    1. Combine Ingredients: Mix the cocoa powder, sugar, cornstarch, and salt together in a heavy-bottomed medium saucepan. Whisk in the milk and egg yolks.
    2. Cook: Heat over medium, whisking constantly until the mixture thickens and bubbles, which takes about 5-8 minutes. Once thickened, continue to cook for an additional 1-2 minutes all while still whisking constantly.
    3. Add Flavorings, Transfer to Container: Remove from the heat and whisk in the chopped chocolate, butter, and vanilla. Pour into a heat-proof container and press a layer of plastic wrap to the top of the pudding, making sure the plastic wrap makes contact with all of it in order to prevent a film forming as it cools.
    4. Chill: Chill in the fridge for 4 hours, or overnight.
    5. Stir and Enjoy: Before serving, stir the pudding well. Transfer to serving dishes, if desired. Top with toppings of your choice.

How to Make the Best Homemade Pudding

If you incorporate these simple tips and tricks into your cooking, your next batch of homemade pudding will be absolutely divine!

    • Don’t Let Your Pudding Burn: Whisk constantly while on the heat to avoid the eggs and milk burning.
    • Thicken: Once the mixture begins to bubble, be sure to continue to cook for a minute or two to ensure the pudding thickens properly. Undercooked pudding will turn out soupy.
    • Add Plastic Wrap: Press the plastic wrap directly to the surface of the pudding (careful, it’s going to be hot!) to prevent a film from forming on top of it as it cools. Once it is completely cooled, it won’t need the plastic wrap directly on it again.
    • Toppings: Fresh berries and a dollop of whipped cream is always a good idea! You can also add things like chopped nuts, toffee bits, or a drizzle of salted caramel sauce for extra indulgence!

    Storing Leftovers

I love making a big batch of homemade chocolate pudding to enjoy throughout the week. It’s great for eating straight out of the fridge when you get a craving for something sweet!

    Strawberry Chocolate Cake Recipe

This strawberry chocolate cake starts with the BEST homemade chocolate cake you will ever have! Rich chocolatey layers baked to perfection and frosted with a sweet creamy strawberry frosting. Freeze-dried strawberries are the secret to elevating the strawberry flavors in the frosting. Try not to eat it with a spoon before frosting your cake!

Strawberry and chocolate are meant to be together! The sweet ripened strawberry flavors compliment the chocolate perfectly. If you love the combination of strawberry and chocolate, you have to try these amazing cookies or these luscious brownies. And of course, chocolate-covered strawberries are a MUST!

    Ingredients For Strawberry Chocolate Cake

You will find a new love for homemade cake mixes after you make this cake. It’s easy and the ingredients are all stuff that you have heard of before! I always make this cake when it’s strawberry season and strawberries are the most fresh. See the recipe card below for a list of exact measurements!

    Chocolate Cake

    • Vegetable Oil: You can use butter but it will change the texture! So I recommend vegetable oil if you can!
    • Warm Coffee:  This enhances the chocolate flavor. (It does not make it taste like coffee though!) But if you would rather, buttermilk or warm water works too!
    • Eggs: This will bind the batter together!
    • Vanilla Extract: Gives flavor and sweetness to the batter. Vanilla also enhances the flavor of chocolate.
    • All-Purpose Flour: This creates a base to mix all of the ingredients together!
    • Granulated Sugar: This balances out the cocoa powder making the overall taste sweet!
    • Unsweetened Cocoa Powder: Make sure you use unsweetened and NOT Dutch process.
    • Baking Soda: This makes the cake rise and becomes fluffy!
    • Baking Powder: Baking powder lightens the texture of cakes by enlarging air bubbles within the batter.
    • Salt: Enhances all of the ingredient flavors!

    Strawberry Frosting

    • Unsalted Butter: Unsalted butter is best for making frosting.
    • Powdered Sugar: Powdered sugar adds sweetness to the frosting.
    • Salt: Balances the flavors and enhances the sweetness.
    • Heavy Cream: Helps add moisture and makes the frosting creamy.
    • Freeze Dried Strawberries: The secret to the intense strawberry flavor and vibrant color!
    • Fresh Strawberries: Fresh strawberries add texture and sweetness to this incredible cake.

How to Make Strawberry Chocolate Cake

This strawberry chocolate cake recipe is so impressive and even more delicious! The moist chocolate cake has an intense flavor of chocolate with the addition of coffee in the batter. I always dip the strawberries ahead of time because it’s all ready to frost and assemble as soon as the cake cools.

    Cake

    1. Preheat Oven/Prepare Pan: Preheat the oven to 350℉. Spray three 8-inch round cake pans with cooking spray. Add parchment rounds to the bottom of the pans and spray lightly with cooking spray. Set aside.
    2. Whisk Wet Ingredients: In a large bowl, whisk together the vegetable oil, coffee, eggs, and vanilla until combined.
    3. Combine and Add Dry Ingredients: In a medium bowl sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add the dry ingredients to the wet ingredients and gently whisk together until fully combined.
    4. Bake: Fill the three pans evenly and back for 20-25 minutes until the centers of the cake spring back when lightly pressed, or a toothpick comes out clean. Allow the cake to cool for 10 minutes in the pan before inverting the pans onto a cooling rack to cool completely before frosting.

    Strawberry Frosting

    1. Whip Butter: In the bowl of a stand mixer, use the paddle attachment to beat the butter on medium-high speed until light and fluffy, about 4-5 minutes.
    2. Add Powdered Sugar, Salt and Cream: Add the powdered sugar and salt. Mix the ingredients on low speed until the sugar is incorporated. Add the cream 1-2 tablespoons at a time until the frosting begins to get creamy and smooth, not too stiff.
    3. Add Freeze-Dried Strawberries: Add the powdered freeze-dried strawberries to the frosting and beat until combined.

    Assembly

    1. Frost/Add Strawberries to First Layer: Place the bottom layer of cake upside down on a plate or a cake stand. Add a generous dollop of frosting to the center and spread evenly over the cake, all the way to the edge. Add sliced strawberries on top of the frosting, but leave ½ inch of space around the edge of the cake round.
    2. Repeat For Remaining Layers: Place the second layer of cake upside down on top of the first and repeat the process with frosting and sliced strawberries. Top with the third layer of cake, again upside down.
    3. Frost First Outer Layer: Scoop 3-4 large dollops of frosting on top of the cake and spread to the edges of the cake. Use a straight frosting spatula to bring the frosting down the sides of the cake. Be careful not to lift it straight off the cake, because it will pull chocolate crumbs off with the frosting.
    4. Frost Final Outer Layer: Once the outside of the cake has a thin layer of frosting, continue to add more frosting until it is thicker. Smooth the sides and the top of the cake.
    5. Dip Strawberries: Wash and dry the whole strawberries. Dip them in the melted candy-coating chocolate. Set dipped strawberries on parchment paper to allow the chocolate to harden.
    6. Make Ganache: In the microwave, heat the chocolate chips and cream in 30-second intervals. Stir until smooth and combined.
    7. Drizzle Ganache: Pour the chocolate ganache on the center of the top of the cake and use an offset spatula to carefully spread it out to the edges, letting it gently spill over the edge of the cake to create the chocolate drips down the sides. Let the ganache set before finishing.
    8. Pipe Frosting/Place Strawberries: Use a piping bag fitted with a large star tip to pipe swirls of frosting on top. Place a chocolate-dipped strawberry on each swirl.

Tips For Assembling a Layered Cake

This strawberry chocolate cake is easy to assemble and I’ll tell you why! Here are a few of my favorite tips when baking and frosting cakes. I hope you find these tips helpful! I love giving tips that make baking easier so you feel confident in the kitchen!

    • Weigh Batter For Even Layers: Even layers make assembly easy! For even layers of cake, it is best to use a kitchen scale to weigh the batter. I had 1218 grams of batter, so I weighed out 406 grams into each of my cake pans. The weight may vary slightly.
    • Chill Cake Before Frosting: Chilled cake layers are easier to frost! Wrap the cooled layers in plastic wrap and chill in the fridge for at least a few hours before stacking and frosting. You can also freeze the layers, just follow my freezing tips below.
    • Make Frosting Right Before Assembly: The strawberry frosting is best when made right before assembly. This helps the frosting be smooth and spreadable. The longer the frosting sits, the thicker it becomes. It may be necessary to add more milk 1 tablespoon at a time. Milk softens the frosting to ensure it goes on nice and smooth.

Side photo of a slice of strawberry chocolate cake being lifted off the cake platter.

    Storing Leftover Cake

The cake layers of this strawberry chocolate cake can be made several days in advance. When I plan ahead for this cake, these directions are so helpful. Wrap the layers in plastic wrap and chill in the fridge until you are ready to assemble the cake.

    • In the Refrigerator: The finished cake can be stored in an airtight container in the fridge for up to 3 days. The chocolate-dipped strawberries typically only last 1-2 days. Any longer than that and they will begin to weep and the chocolate will pull away from the berry.
    • In the Freezer: Unfrosted chocolate cake layers can be stored in the freezer for up to 3 months. When freezing, wrap the layers in plastic wrap and also wrap in a layer of aluminum foil. Once completely frozen, transfer them into a large freezer ziplock bag to help keep out freezer burn. The layers can be frosted frozen, or you can let them thaw in the fridge before frosting!

    Chocolate Cake

    • ¾ cup vegetable oil
    • 1 ¼ cup warm coffee
    • 2 large eggs
    • 2 ¼ teaspoons vanilla extract
    • 2 cups all-purpose flour
    • 1 ½ cup granulated sugar
    • ¾ cup unsweetened cocoa powder, not Dutch process
    • ½ teaspoon baking soda
    • ¾ teaspoon baking powder
    • 1 teaspoon salt

    Strawberry Frosting

    • 2 cups unsalted butter, room temperature
    • 5 cups powdered sugar
    • ¼ teaspoon salt
    • ¼-⅓ cup heavy cream, as needed
    • cup freeze-dried strawberries, blended to powder before measuring
    • fresh strawberries, sliced

    Topping

    • Fresh strawberries whole
    • Candy coating chocolate both white and dark chocolate
    • cup semi-sweet chocolate chips
    • cup heavy cream

    Instructions

    Cake

    • Preheat the oven to 350℉. Spray three 8-inch round cake pans with cooking spray. Add parchment rounds to the bottom of the pans and spray lightly with cooking spray. Set aside.
    • In a large bowl, whisk together the vegetable oil, coffee, eggs, and vanilla until combined.
    • In a medium bowl sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add the dry ingredients to the wet ingredients and gently whisk together until fully combined.
    • Fill the three pans evenly and back for 20-25 minutes, until the centers of the cake spring back when lightly pressed, or a toothpick comes out clean. Allow the cake to cool for 10 minutes in the pan before inverting the pans onto a cooling rack to cool completely before frosting.

    Strawberry Frosting

    • In the bowl of a stand mixer, use the paddle attachment to beat the butter on medium-high speed until light and fluffy, about 4-5 minutes.
    • Add the powdered sugar and salt and mix on low until the sugar is moistened. Add the cream 1-2 tablespoons at a time until the frosting begins to get creamy and smooth, not too stiff.
    • Add the powdered freeze dried strawberries to the frosting and beat until combined.

    Assembly

    • Place the bottom layer of cake upside down on a plate or a cake stand. Add a generous dollop of frosting to the center and spread evenly over the cake, all the way to the edge. Add sliced strawberries on top of the frosting, but leave ½ inch of space around the edge of the cake round.
    • Place the second layer of cake upside down on top of the first and repeat the process with frosting and sliced strawberries. Top with the third layer of cake, again upside down.
    • Scoop 3-4 large dollops of frosting on top of the cake and spread until it is pushed over the edges of the cake. Use a straight frosting spatula to bring the frosting down the sides of the cake, taking care to not lift straight off the cake as that will cause you to pull chocolate crumbs off with the frosting.
    • Once the outside of the cake is coated in a thin layer of frosting, continue to add more frosting until it is thicker. Smooth the sides and the top of the cake.
    • Wash and dry your whole strawberries and dip in the candy coating chocolate that has been gently melted. Set dipped strawberries on parchment paper to allow the chocolate to harden.
    • In the microwave, heat the chocolate chip and cream in 30 second intervals, until the mixture can be stirred smooth.
    • Pour the chocolate ganache on the center of the top of the cake and use an off-set spatula to carefully spread it out to the edges, letting it gently spill over the edge of the cake to create the chocolate drips down the sides. Let the ganache set before finishing.
    • Use a piping bag fitted with a large star tip to pipe swirls of frosting on top. Place a chocolate dipped strawberry on each swirl.

    Halloween Donut Hole Pops

Trust me when I say this was one of the easiest and most enjoyable holiday treats I’ve made in a long time! They are so simple, yet blew everyone away with their look and taste! I have some pretty great Halloween recipes up my sleeve, but this one may take the cake… pop (corny, I know). I love making things from scratch, and you could make the donut holes or the cake for these pops if you wanted to. But it was nice to just get right to decorating and to have a lot less to clean up.

I decided to make some of my favorite Halloween characters. Frankenstein is probably my favorite, he’s just so loveable! The mummy and eyeball were so simple and really wowed everyone. You could also get a few more characters by drawing a face on the pumpkin to turn them into Jack-O-Lanterns. There are so many possibilities with these fun Halloween Donut Hole Pops!

    Halloween Donut Hole Pops Ingredients

This recipe is so fun to put together, and would be a great activity to do with guests too! It’s so simple, and all that is required is the decorating tools and lots of creativity. If you are going to grab all the ingredients listed here, you’ll want to make quite a few pops. These Halloween cake pops come together so quickly, you won’t be able to stop making them! Check out the recipe card below for the full recipe.

    • Donut Holes: I bought 20, and found that plain donut holes worked the best.
    • Candy Melts: I bought White for the mummy, Green for Frankenstein, Black for Frankensteins’ hair, and Orange for the pumpkin. You can buy whatever colors you like, or stick to this recipe!
    • Green Mike and Ikes: These are for the stems of the pumpkin.
    • Small Eyeball Sprinkles: I used small eyes for my Frankenstein and mummy.
    • Large Eyeball Sprinkles: The large sprinkles were the perfect size for the eyeball pop.
    • Edible Black Marker: This is great to have on hand for lots of projects, so you’ll want to get one! I used it to make the small details on Frankenstein which totally bring him to life.
    • Red Sanding Sugar: I used sanding sugar to get the veins of the eyeball to really pop (see what I did there?). It turned out great!
    • Lollipop Sticks: You can find these cake pop sticks in the baking aisle, you may be able to find other colors than just white which would add to the theme!

How to Assemble Halloween Donut Hole Pops

Now the fun part! Assembling these donut hole cake pops was way too much fun. Using my imagination to create Halloween creatures makes the holiday feel as exciting as it did when I was a kid. Get creative with your designs, or if you want to make them the same way I did, here is how to do it.

    Let’s Get Started!

    1. Prep: Prep your work area by laying down parchment paper. Poke holes in either an upside-down egg carton, a large Styrofoam block, or a small cardboard box. This will act as a stand for the pops as they set up.
    2. Melt: In four small bowls add the candy melts, one color to each bowl. Melt in the microwave one bowl at a time with the power on 50% for 1 minute. Stir and microwave again for 30 seconds as needed.
    3. Dip: Dip the end of a lollipop stick in the melted candy melts and then insert into the bottom of a doughnut hole. Let the candy melts fully set up before proceeding with decorating. Five with green, five with orange and ten with white.

    Pumpkin Design

    1. Dip: One at a time, dip five donut holes (the ones with orange candy melts holding the stick in them) in the melted orange candy melts until fully covered. Tap off the excess and place a green Mike and Ike (cut in half) right on top to act as the pumpkin stem. Let set up completely.
    2. Decorate: Once the orange is set, remelt the remaining orange candy melts and add to a piping bag. Snip off a very small bit of the end of the bag and pipe 5 lines up and down the pumpkin to give it definition.
    3. Let Them Set Up: Let set up completely before serving.

    Eyeball Design

    1. Dip: One at a time, dip five donut holes (ones with white candy melts holding the stick in them) in the melted white candy melts until fully covered. Tap off the excess and stick a large eyeball sprinkle to the front. Let set up completely.
    2. Decorate: Remelt some of the white candy melts and add to a piping bag. Snip off the very end of the bag and pipe vein-like strands all around the eyeball. White the candy melts are still wet, dust generously with red sanding sugar.
    3. Let Them Set Up: Let set up completely before serving.

    Mummy Design

    1. Dip: One at a time, dip five donut holes (ones with white candy melts holding the stick in them) in the melted white candy melts until fully covered. Tap off the excess and stick two small eyeball sprinkles to the front of the donut hole, about ⅓ of the way down from the top.
    2. Decorate: Remelt some of the white candy melts and add to a piping bag. Snip off the very end of the bag and pipe stripes of white all around the front and eyes.
    3. Let Them Set Up: Let set up completely before serving.

    Frankenstein Design

    1. Dip: One at a time, dip five donut holes (ones with green candy melts holding the stick in them) in the melted green candy melts until fully covered. Tap off the excess and stick two small eyeball sprinkles to the front of the donut hole, about ⅓ of the way down from the top.
    2. Dip Top: Once the green has set up, dip the top ⅓ of the donut hole into the melted black candy melts and use a toothpick to carefully make the hairline pointed or rough all around the head.
    3. Decorate: Once the black has set up, use an edible black marker to draw a couple stitches on Frankenstein’s face.
    4. Let Them Set Up: Let set completely before serving.

    Switch It Up!

I chose the candies I like the most for the features of my little creatures. You can totally customize these designs to make the most out of this recipe!

    • Get Creative: Are you a chocolate lover? Use Sixlets or Green M&M’s instead of Mike and Ikes to make the pumpkin stem.
    • Make a New Creature: Get clever with the Halloween characters you love and create something new! Use the natural colors of your favorite candies and flavors to inspire your next cake pop design.
    • Use Different Donut Flavors: Keep your guests guessing by using different donut hole flavors! There are so many fun flavors you can create.
    • Use Melting Chocolates: You can easily use melting chocolates instead of melting candies. White chocolate, dark chocolate, and milk chocolate will still give you a range of fun colors to create with, and some may like the flavor better!

    How to Store Leftovers

I doubt you will have any of these left over, but if you do make extra, or make them ahead of time, here is how you can keep them fresh.

    • On the Counter: You can leave these out at room temperature in an airtight container or covered with plastic wrap. You can store them for up to 3 days, but I recommend eating them within 24 hours.

Note: Do not store your donut cake pops in the fridge or freezer. This will cause them to sweat and crack, and they could also develop mold.
