    We’ve all been there. It’s another chicken-for-dinner kind of day and even we are feeling uninspired. The good news is, I’m a mom who’s been cooking for kids for a long time, so I’ve got a huge collection of quick and easy chicken dinner ideas. This chicken pan sauce is a great one to start with because it’s SO easy and delicious.     Oh chicken breast. You know, that flavorless sometimes dry piece of chicken that no one is really THAT excited to see on the plate. Take that chicken breast and turn it into a tender, juicy, flavorful dinner with a chicken pan sauce! I’m serious, it CAN be done. I just did it last week with this recipe and I promise, your family is going to love it just as much as mine did. Why? Because it’s foolproof. It’s a simple sauce of olive oil, butter, garlic, shallot, and chicken broth. Add in a few seasonings, and there is nothing in this sauce that picky eaters won’t like, and everything to love!

    We make chicken a lot at our house. Feeding a family isn’t cheap these days and chicken gets the bellies full on a budget. I’ve found a lot of ways to dress up chicken because it gets bland and boring without a little effort. That’s why I love this chicken pan sauce because when I’m not feeling creative, this pan sauce is flavorful and filling without a bunch of extra ingredients. Serve this chicken with some instant pot rice, some quick air fryer frozen broccoli, or an air fryer vegetable mix for a well rounded and seriously simple dinner.

    Ingredients

    I love how simple the ingredients are for this chicken pan sauce. You most likely have all of these ingredients on hand already. This is a chicken dish that is totally flavorful while still really easy to cook. You don’t have to have any chef skills to cook this chicken to perfection. Everyone will be asking you for your recipe! This sauce is also amazing with steak, pork chops, or really any protein. You can find the measurements below in the recipe card.

    • Olive Oil: Olive oil has a really mild flavor and it is a healthy oil to cook your chicken in.
    • Chicken Breast: You will pound your chicken breast with a mallet until it is about a half inch thick. You will sear the chicken first to get a layer of flavor on the bottom of the pan.
    • Salt and Pepper: I used Kosher salt and freshly ground black pepper to season the chicken.
    • Italian Seasoning: I make my own homemade blend because the flavors are so much more fresh and there is no added salt in my mix.
    • Shallot: Shallot is a little more sweet and has a more mild flavor than onion. I really like to use it in this dish, but you could use an onion instead.
    • Garlic: Garlic is sweet and savory and so full of flavor. It really ramps up the flavor in this sauce.
    • Butter: I just think butter makes everything better! Butter has fats that really help to bring this sauce together.
    • Chicken Broth or White Wine: I use chicken broth because I rarely have white wine on hand, but either is a great option! They both have their benefits, so you can try them both out to see which one you like better.

    Chicken with Pan Sauce

    This chicken pan sauce is a simple recipe that seriously took me 20 minutes from start to finish. I just make sure to get all of my ingredients out and ready to go, and once you start cooking it all comes together so fast. Not to mention how amazing my house smelled while it was cooking! My family ended up in the kitchen asking what was for dinner, and seriously enjoyed this meal.

    1. Pound Chicken and Season: Pound the chicken breasts to ½ inch thickness using a kitchen mallet if they are too thick. Season both sides of the breasts with 1 teaspoon of Italian seasoning, salt, and pepper.
    2. Add Oil to Pan: Add the olive oil to a large skillet and heat over medium-high heat.
    3. Sear Chicken: Add the seasoned chicken to the pan to sear and then cook for about 5 minutes on each side. The chicken should no longer be pink and golden on the outside.
    4. Set Chicken Aside: Remove the cooked chicken from the pan and set aside.
    5. Make Sauce: To make the chicken pan sauce turn the heat down to medium-high. Add 1 tablespoon of butter to the pan. Then add the diced onion and garlic and saute for 2 minutes or until tender.
    6. Add Liquid: Pour the broth or white wine and deglaze the pan. Stir or whisk to get all the flavors from the pan into the sauce. Simmer to reduce the sauce to slightly thicken. Add more liquid and continue to reduce if you want more sauce.
    7. Whisk: Stir in 1 tablespoon of butter to add richness. Whisk in the remaining 1 teaspoon of Italian seasoning.
    8. Season: Season to taste with kosher salt and cracked black pepper. You can add more flavor using other dried herbs if you desire.

    Tips for Making Chicken Pan Sauce

    Chicken pan sauce is so simple to make, you might be looking for tips on how to switch it up! Each time you make it you can try new ingredients to add layers to your recipe. Here are some ideas that I’ve tried and loved.

    • Switch It Up: Use chicken broth one time, and try white wine another! They both add different flavors and are delicious in their own way. You can keep switching back and forth to keep the dish interesting for you and your family.
    • Add Vegetables: You can cook veggies in the pan when you are making the sauce for extra nutrients. Add mushrooms or greens for an extra boost of flavor and to make the meal more filling.
    • Add Acid: I love a little acid in my pan sauce. Using fresh lemon juice or some Dijon mustard can really take this dish to the next level. It brightens up the sauce and gives it a whole new flavor.
    • Fresh Herbs: You can top your chicken with fresh herbs to add some extra flavor at the end. Parsley and thyme are great options!

    • In the Refrigerator: Store your leftovers in an airtight container in the refrigerator for up to 5 days.

    This creamy lemon chicken piccata is a quick and easy one-pot meal that’s on the dinner table in 30 minutes! Tender breaded chicken in a creamy lemon sauce that the entire family will love.

    Creamy Lemon Chicken Piccata Recipe

    One of our favorite meals of the week was this creamy chicken piccata. My favorite part was that it was a one-pot meal and ready to eat in 30 minutes! This also means easy clean-up! It’s just like the classic chicken piccata dish, but with the added lemon tang. It gives it such a fresh and delicious taste to the creamy sauce. The chicken has a delicious breading on the outside and is so perfect served over some pasta. Everyone in my family loved this meal. It had such a delicious flavor and will be one that we make again and again!

    This American-Italian favorite is so creamy and delicious. Piccata literally means, pounded flat and cooked in a sauce of lemon, parsley, and butter. Cooked in one pan and in 30 minutes means you can have an incredible meal on the table in no time. Don’t be scared of the capers! They really make the dish amazing. If you have never had them, this is the perfect dish to try them with. If you love seafood, you’ll have to try this salmon piccata as well! It’s so delicious and packed with light, bright flavor!

    Ingredients Needed

    Super simple ingredients come together to make an irresistible meal. Serve your creamy lemon chicken piccata with a nice green salad, homemade breadsticks or rolls, and you have a winning dinner on your hands!

    • Chicken: Boneless skinless chicken breasts, pounded flat if needed. This is so they cook more evenly!
    • Salt and Pepper: Season to taste.
    • Flour: Creates a nice breading on the chicken.
    • Butter: To cook the chicken in. It also adds a deliciously rich flavor!
    • Olive Oil: Also used to cook and add flavor.
    • Chicken Broth: A savory base for the sauce.
    • Lemons: Fresh whole lemons to use for juice and garnish.
    • Heavy Cream: You can also substitute half and half, but it won’t be as creamy in texture.
    • Capers: Look for these with the pickles and jarred pepperoncini.
    • Parsley: (Optional) For garnish and extra flavor.
    • Angel Hair Pasta: You can also use spaghetti noodles if you would like.

    What are Capers?

    If you have never had capers before, this is the perfect introduction. They’re typically served alongside chicken and salmon dishes, adding a ton of flavor. Capers are under ripened flower buds of a plant known as the caper bush. The capers are picked and dried. Then they are pickled to create this tangy, salty, and briny flavor that is out of this world yummy.

    These little pea-sized condiments produce big flavor. A little goes a long way. Use them in salads, pasta, and chicken. Because of their lemony flavor, they are also great with fish. You’ll have to try them out in these other recipes: Pan Seared Scallops with Lemon Caper Sauce, Pasta Puttanesca with Chicken, and Lemon Salmon Piccata. 

    Making the Perfect Lemon Chicken Piccata

    If needed, take the time to pound your chicken to get it nice and thin. You won’t regret it. They will cook faster and more evenly!

    1. Prepare Skillet, Season Chicken: Heat 2 tablespoons butter and 2 tablespoons of oil in a large skillet over medium-high heat. Then salt and pepper each side of the chicken breasts
    2. Adjust Thickness: If the chicken breasts are overly thick, pound them to be thinner. Then the cooking time will be shorter.
    3. Flour: Using a shallow bowl, dredge the chicken in the flour mixture.
    4. Brown: Then put the chicken breasts in the skillet. Cook for about 3 minutes on each side, or until it is cooked throughout and no longer pink. Then remove from the skillet and set aside on a plate.
    5. Sauce: Turn the heat to medium-low. Then add juice from lemons, heavy cream, and capers. Bring the sauce to a boil and then return to medium-low heat. Test the sauce and then season with salt and pepper as needed. Allow the sauce to cook and bubble for about 3 minutes.
    6. Serve: Serve the chicken over cooked pasta and then spoon the piccata sauce over top. Sprinkle with fresh chopped parsley.

    Here are a few ways to switch up this simple dish! You’re going to love this lemon chicken piccata. And it can easily be tweaked to your personal tastes! It can also be made keto if you’re wanting a more diet-friendly option!

    • Noodles: Truly any kind of pasta can be used to serve this scrumptious lemon piccata dish with. (Want to switch things up? Try tagliatelle!) You can also serve it over steamed vegetables, mashed potatoes, or rice.
    • Keto/Low-Carb: To make this meal keto-friendly, use almond flour for coating your chicken in instead of all-purpose flour. You’ll also want to swap out the angel hair pasta for zucchini noodles or protein-packed chickpea noodles.
    • Chicken: Make sure your chicken is thin! You can pound each chicken cutlet thin or slice it in half, either way, it will create the size you are looking for.
    • Fresh Lemons: I wouldn’t recommend using bottled lemon juice here. It will not taste the same. The fresh lemon really brings this piccata together.
    • Capers: Some find the capers to be too salty. If you want to avoid that, just rinse the capers before adding.

    Storing Leftover Lemon Chicken Piccata

    Another reason why this recipe is the best: it makes fantastic leftovers! This chicken piccata can be heated up easily for a bright, flavorful lunch.

    • In the Refrigerator: Keep your lemon chicken piccata in the fridge in an airtight container for up to 4 days. Then warm leftovers in the microwave or over the stove.

    Note: It’s best to store the chicken and sauce separately from any noodles so they don’t get soggy.

    I love soups all year round! I just think they are so warm and cozy, and there’s usually a good reason to have soup on the table.     Chicken Pozole Verde

    Pozole verde is a classic Mexican dish that is made frequently and reminds me of our classic chicken noodle soup. It is homey with so much rich and satisfying flavors. The first thing you do is cook the chicken and verde ingredients like tomatillo, onion, jalapenos and garlic. Then you remove the chicken and blend up the verde. It is so simple and yet SO packed with delicious flavors. I crave these flavors all the time and this dish just really hits the spot!

    If you have ever made salsa verde or verde tacos, you know that fresh verde is off the charts delicious! Tomatillos are something I don’t use every day, but when I make something like my slow cooker pork chili verde or this chicken pozole, I wonder why it isn’t in EVERYTHING. It is so flavorful and unique! If this is your first time cooking with them, you can find them fresh in the produce section of your grocery store. They aren’t hard to work with and will take your cooking to the next level.

    Ingredients

    Pozole is made from simple and fresh ingredients. This pozole has chicken in it, but you could also use pork or even beef. It’s super delicious any way you make it! Fresh tomatillos, onions, jalapeños and garlic make up this fresh verde. I like to use chicken broth to make the soup because it is really flavorful and adds lots of nutrients. You could use vegetable stock or beef broth instead. Some people add poblano peppers or serranos for extra flavor which sounds amazing! You can find the exact measurements below in the recipe card.

    Pozole Verde Ingredients

    • Chicken Breast: You will not want any skin in your pozole verde. You can also use other parts of the chicken, dark meat is full of flavor!
    • Tomatillos: Tomatillos are kind of like tomatoes because they are considered a fruit. Tomatillo actually means “little tomato” in Spanish! They taste similar to a tomato but are a little less sweet.
    • Yellow Onion: These onions are flavorful and affordable, and they are perfect for adding extra flavor to this soup.
    • Jalapeños: Fresh jalapeños add a punch of heat and flavor.
    • Garlic: Fresh garlic cloves add a ton of flavor to the verde.
    • Dried Oregano: I like to add oregano to balance out the acid from the tomatillos. You could also use Mexican oregano.
    • Cumin: Cumin has a warm and nutty flavor that really deepens the soup.
    • Salt: Add some salt to bring out all the delicious flavors of the other ingredients.
    • Pepper: I like to add some pepper to add extra heat and another layer of flavor.
    • Chicken Broth: Chicken broth is the perfect base for the soup. It has a lot of nutrients and will make the soup taste incredible.
    • White Hominy: Hominy is a type of field corn. You will want to use the canned version so it is nice and soft and you don’t have to worry about cooking it.
    • Cilantro: Cilantro can be touch and go for some people, but I love the fresh and citrusy flavor it has.

    Fresh Toppings

    • Shredded Cabbage: Fresh shredded cabbage adds a really nice crunch and some fresh flavor to the pozole verde.
    • Lime Wedges: I like to add a fresh squeeze of lime juice once I dish up the bowl. I sometimes just drop the whole wedge in the soup so that it keeps adding flavor as I’m eating.
    • Radishes: You will want to slice them pretty thin so they are easy to eat and don’t overwhelm the flavor of the soup.
    • Cilantro: I add fresh cilantro on top for an extra burst of fresh flavor.

    Pozole Verde Recipe

    Green pozole is just one of the many delicious ways to make pozole! It is super easy to make and will really wow everyone in your family. It is always a crowd pleaser at my house when I serve it. Add some fresh sour cream on top for a pop of extra flavor!

    1. Add Ingredients: In a large stock pot on the stovetop, add in the chicken breasts, tomatillos, onion, jalapenos, garlic, oregano, cumin, salt, pepper and chicken broth, then bring to a rolling boil on high heat. Reduce the heat to low and cover the pot. Simmer for 35-45 minutes, or until the chicken is tender and shreds easily.
    2. Shred Chicken: Remove the chicken from the pot and, using two forks, shred it on a cutting board and set aside.
    3. Make Verde: Remove the tomatillos, onions, jalapenos, garlic, and ½ cup of the liquid from the pot and add them to a blender with the cilantro. Blend until it is smooth and pour it, along with the shredded chicken and cans of hominy into the pot.
    4. Simmer: Simmer everything together for an additional 10-15 minutes uncovered.
    5. Add Fresh Toppings: To serve, pour the Pozole into bowls and top with finely shredded cabbage, lime wedges, sliced radishes, and cilantro.

    Tips for Making Pozole Verde

    Pozole is a really delicious Mexican stew that can be made in so many different ways! You can really make this dish your own by switching up the ingredients that you decide to add. Here are some tips for making your pozole verde.

    • More Heat: If you like your soup on the spicy side, the best way to ramp up the heat is to leave the seeds in your jalapeños! That will add plenty of extra heat without adding different flavors to the mix.
    • Other Fresh Garnishes: There are a lot of ways to dress up your pozole. I like to add sour cream, avocado, and fresh cabbage on top. Some people add pepitas, which are a delicious pumpkin seed that really taste amazing in this dish. You can get creative and add whatever you like!

    • In the Refrigerator: You can store your pozole verde in an airtight container in the fridge for up to 5 days. You can also store it in the freezer for up to 3 months.

    I love how easy this recipe is and that I have these 8 cans on hand at any given time. Add it all together and create one amazingly easy dish that is thrown into a stove top pot or slow cooker.     • Tomatoes: Diced in a can, I add the entire can.
    • Corn: Drain the corn and add to the pot.
    • Black Beans: First drain and then rinse the beans well to make sure the salt is washed off. I think they taste way better this way.
    • Pinto Beans: Adds the extra thickness that are creamy. Prepare them the same way as the other canned beans.
    • Cream of Chicken Soup: Thick soup mixed with small chicken bites. All ready to be added to the soup once opened. You could also use a homemade recipe if you are trying to cut back on salt!
    • Chicken Breast: Tender chicken in a can that is ready in minutes. Drain and add it in, or use a rotisserie chicken or boil chicken, then take it off the bone and add.
    • Green Enchiladas Sauce: Bring on some spice with this enchilada sauce.
    • Chicken Broth: A savory liquid that fills this soup with chicken flavoring.
    • Homemade Taco Seasoning: My homemade taco seasoning is so good and easy to make. Make ahead of time and store for 3 months! Obviously you can use a store-bought version, they are just much higher in salt.

    Optional Toppings

    • Olives: Sliced from a jar or can.
    • Avocado: I like to add fresh avocado for a little contrast of flavor and color. They are delicious and full of vitamins.
    • Sour Cream: A dollop on top is just what this soup needs!
    • Tortilla Strips: A crunch that brings texture to the soup.
    • Lime Wedges: The acid in the lime brightens up the whole soup, it’s perfect!

You really can’t go wrong with this recipe because it is simple and so full of flavor. Here are some tips for making this recipe your own.

    • Cook In Slow Cooker: You can definitely make this in a slow cooker! Follow the instructions for all of the ingredients, then put them in the slow cooker for 2-3 hours on low until warmed through. Then serve with your favorite toppings! So easy and full of flavor.

    Carbonara is an Italian pasta dish from Rome made with egg, hard cheese, guanciale, and black pepper. I finally found a carbonara recipe that I love. The sauce is so creamy, cheesy, and so good. The best part is that the pickiest eater gobbled this down, and my other boy had seconds! It was pretty easy to throw the whole thing together. I felt like it was the perfect Sunday meal served with a side salad and garlic bread! This is the dish if you want a quick and easy delicious meal in just minutes. This creamy bacon carbonara only takes 30 minutes from start to finish!

    It is simply delicious and so easy to make at home. Everyone will be raving over this incredible creamy pasta! I know many people are worried about the sauce breaking because of the egg. It was easier than I thought! Just go low and slow. It will totally work out! Once you try this recipe, you’ll want to try this easy pasta carbonara too. It’s delish!

    Ingredients

    Simplicity is key with this creamy bacon carbonara meal! The use of good quality ingredients is a must! For a fully traditional carbonara recipe, use pancetta instead of bacon. You can find the exact measurements below in the recipe card.

    • Eggs: All you need is the yolks!
    • Heavy Whipping Cream: Half and half will work, but for a rich, creamy blend, heavy whipping cream is my preference.
    • Parmesan: Use a sharp, hard cheese of parmesan that is shaved instead of grated for a less gritty texture on your pasta.
    • Parsley: Fresh and chopped up very fine, this adds color and some fragrant garnish.
    • Salt: Season to your liking.
    • Red Pepper Flakes: The red pepper adds a little kick of heat to the recipe.
    • Bacon: A good thick-cut bacon or even a high-quality standard cut of bacon will make a difference. You can also use pancetta which is the traditional meat in the dish.
    • Mushrooms: This is optional, but I love mushrooms and can’t leave them out.
    • Onion: This is optional but adds a great flavor.
    • Pasta: Linguine is my favorite, but spaghetti will work great too.

    Creamy Bacon Carbonara Recipe

    This creamy bacon carbonara recipe is simple to make but is a little delicate. Don’t try to rush through this recipe! The eggs will scramble if your pan is too hot, so make sure to take your time so you don’t end up with a scrambled mess. It is not a hard recipe. You just have to be a little patient.

    1. Beat: Beat the eggs, cream, parmesan, parsley, salt, and red pepper together in a bowl.  
    2. Fry: Fry the bacon until crisp, then crumble and set aside.  
    3. Saúte: With 1 -2 Tablespoons of bacon grease, sauté the onion and the mushrooms until the onions are translucent and golden.  
    4. Drain: Drain the pasta, and while it’s still warm, add the onions and mushrooms. 
    5. Combine: Pour the cream mixture into the pasta, and stir over low heat for one to two minutes. Do this on low heat, or you will make scrambled eggs.
    6. Garnish: Serve with additional parmesan.

    Tips and Tricks

    This creamy bacon carbonara is really a simple sauce with noodles. You are gong to fall in love with how much flavor it has! Here are a few tips to get the most out of this recipe.

    • Authentic Carbonara: If you want to make this a more authentic carbonara recipe mix the cream and use pancetta or guanciale which is a pork jowl. You can find at most specialty Italian supermarkets or in some unique grocery stores. Just keep in mind that when substituting the heavy cream it will result in a dish that may be a bit drier, hence not quite a creamy carbonara.
    • Don’t Scramble Eggs: Have you sauce completely prepared before starting on the pasta. You will want your pasta hot when making the egg mixture. You will not want to cook the sauce or you will make scrambled eggs. When stirring the egg mixture into the pasta it needs to be quickly but not hot enough to scramble the egg.
    • Add Protein: A great way to make this a filling and well rounded meal is to add a protein like chicken, shrimp or ham.
    • Double the Sauce: I doubled the sauce recipe and I saved a bit of the pasta water, just in case my sauce got thicker than I liked – simply add a bit if you need.

    Storing Leftovers

    You can definitely store your leftover creamy bacon carbonara. The key is reheating it really slow so that you don’t risk breaking the sauce. I would not recommend freezing this dish because of the cream in the sauce. Here is how to store and reheat your dish.

    • In the Refrigerator: You can store your leftovers in an airtight container in the refrigerator for up to 4 days.
    • To Reheat: When reheating, warm over low heat until the sauce is warm. You may need to add a tablespoon of milk or cream to keep a creamy consistency.

    I am a huge fan of chicken pot pie. We ate it growing up and it always just hits the spot! It’s a wholesome meal in just one dish and it’s something that everyone loves. It’s kind of like the perfect casserole!     Homemade Chicken Pot Pie

    When I think of comfort food, I think of a homemade chicken pot pie! It’s everything I want in a meal. Lots of flavor, delicious veggies, and covered in a buttery flaky crust. What’s not to absolutely love?! I have a great pie crust recipe that I share in the recipe card, but this butter pie crust recipe is also one of my favorites. I think some people shy away from making chicken pot pie at home because they think it will take forever. Think again! This recipe takes 20 minutes to make and an hour to bake.

    The inside of this chicken pot pie is so flavorful, and while it’s baking it becomes this perfectly creamy and gravy like mixture. You are seriously going to love it! The best part is, it’s the perfect meal all on it’s own. I definitely love it with some mashed potatoes and fresh vegetables like this chilled cucumber tomato salad. There is no right or wrong way to serve this chicken pot pie, it’s a classic that everyone will love.

    Ingredients

    This absolutely perfect chicken pot pie recipe is a total classic. These ingredients are simple, straight forward, and so tasty when they all come together. Fresh and quality ingredients will always taste best. I didn’t include this but you can make a simple egg wash or brush the top of the crust with heavy cream to help it brown nicely. You can find exact measurements below in the recipe card.

    Chicken Pot Pie

    • Pie Crust: I absolutely love this homemade pie crust recipe, I think you will too! I like making extra and freezing some so that I can always pull some out of the freeer. A store bought pie crust will work too.
    • Chicken Breast: You will want to either boil some chicken breast or roast it ahead of time. The chicken should be cooked and skinless for this recipe. You could use other parts of the chicken as well, the dark meat has lots of flavor.
    • Butter: Butter makes everything better!
    • Onion: Onions add a lot of flavor to the filling.
    • Carrots: They get so soft and delicious!
    • Celery: They have a nice light flavor and a great texture.
    • Peas: This is optional. My picky eaters don’t like them but I love them!
    • Flour: This will help the gravy get thick.
    • Chicken Broth: This is what makes the filling so perfectly flavorful.
    • Half and Half: This helps the sauce get nice and creamy.
    • Lemon Juice: A little acid really brightens up the sauce and brings out all of the delicious flavors.

    Seasonings

    • Dried Parsley Flakes: This has a milk sweet flavor. You could also use dried basil instead.
    • Pepper: This adds extra flavor and a little heat.
    • Nutmeg: This might be a surprising ingredient, but nutmeg has a warm earthy flavor that goes a long way in this dish!
    • Dried Thyme: I absolutely love thyme, and it is the perfect herb for this dish.
    • Chicken Boullion: This is where a lot of the flavor comes from, and you will add it to taste. I would start with one teaspoon and give it a taste to see if you want more or not.
    • Salt: Salt helps to bring out all the flavors in this dish.

    Chicken Pot Pie Recipe

    Homemade chicken pot pie is actually really easy to make! You don’t have to do anything special, just cook the filling in a pan before baking it. You will cook the vegetables until they are aldente, because you are still cooking them in the oven for an hour afterward. Other than that, there is nothing to worry about with this recipe!

    1. Prep Crust: Prepare the pie crust by rolling out one crust to place in the bottom of a deep dish 9″ pie dish. Make sure the crust is bigger than the pan dish so there is extra to create a pretty edge when you seal it.
    2. Cook Veggies: Melt 2 tablespoons butter in a medium-sized pot over medium heat. Add the onion, carrots, and celery. Cook until soft and tender for about 5 minutes. Set aside.
    3. Make Roux: In a large stock pot, melt ¼ cup butter. Stir in the flour and whisk to make a roux. The mixture will look like a paste. This helps to thicken the filling
    4. Whisk Liquids In: Slowly whisk in the chicken broth and milk.
    5. Add Seasonings: Add the lemon juice, salt, pepper, parsley, thyme, nutmeg, and chicken bouillon. Stir frequently until the mixture becomes thick.
    6. Stir in Veggies: Remove from the heat. Then stir in the cooked chicken pieces and veggie mixture.
    7. Taste: Taste and adjust the seasonings or add salt or chicken flavoring if needed.
    8. Add to Crust: Pour the mixture into the crust of the pie dish.
    9. Top with Crust: Roll the remaining pie crust over the top and then pinch the edges shut. Then cut slits in the top of the pie.
    10. Bake: Bake for 1 hour at 375 degrees Fahrenheit, or until golden brown.
    11. Cool and Enjoy: Allow to cool slightly and serve!

    Tips for Making Chicken Pot Pie

    This absolutely perfect chicken pot pie is one for the recipe book! It is a totally classic recipe, which means there is lots of room to play with the ingredients and the techniques. Try some of these alternative ingredients and substitutions to get the most out of this recipe!

    • Add to the Filling: This is a pretty classic chicken pot pie recipe, but that doesn’t mean you have to keep it that way! You can absolutely add whatever you think would go great in this dish. I think other veggies like mushrooms and potatoes would be incredible. You can also change how you cook the vegetables, like caramelizing the onions first. Yum!
    • Use A Different Protein: You can literally use whatever cooked protein you want in a chicken pot pie. Beef, turkey, ham, and even short ribs are all great options. You can also choose to keep this dish vegetarian by leaving out the protein, or using mushrooms instead.
    • Keep the Edges From Burning: When you are topping your chicken pot pie, make sure the edges of your crust are even or slightly below the center of the pie. You can pat the edges down if they get too tall. This will help to keep them from burning before the chicken pot pie is done. If they start to get too dark, you can cover the edges with aluminum foil.

    Chicken pot pie makes great leftovers! You can also freeze it to have a ready to go meal to pull out at any time. It is a great meal to make to feed your whole family.

    • To Reheat: You can totally reheat the whole thing in the microwave! The sauce doesn’t break and it tastes just as good as when you first made it! You can also reheat it in the oven at 300 until warm in the center.

I love that I can throw it in the crockpot, let it cook all day and dinner is ready to go. It’s a lifesaver for busy days! This is definitely my new go-to meatloaf recipe.

    Since this crockpot meatloaf is the kind of thing you can set and forget, you can use the extra time to make some easy sides to go with it! Mashed potatoes are an absolute must. Add in some delicious homemade rolls and a leafy green salad and you have a meal that will become a go-to for any busy night!

    Ingredients in Crockpot Meatloaf

    This recipe for crockpot meatloaf is perfect for a cozy weeknight dinner! The combo of the savory beef, sweet glaze, and tangy balsamic vinegar creates a delicious blend of flavors that is sure to please your taste buds! Check out the recipe card at the bottom of the post for measurements.

    • Ground Beef: I always get beef that is no leaner than 85 percent. The higher fat content helps the meatloaf stay moist! If you want a healthier version of crockpot meatloaf, you can also swap out the beef for ground turkey. Keep in mind, though, turkey tends to dry out more easily so you’ll want to add more liquids in order for it to turn out nice and moist.
    • Onion: The onions add a sweet and savory flavor to the meatloaf and also help to bind the ingredients together.
    • Parsley: Parsley adds a fresh and herby flavor to the meatloaf and also adds a pop of color!
    • Italian Bread Crumbs: Using Italian-style breadcrumbs adds a subtle flavor to the meatloaf. You can even make your own breadcrumbs using this recipe.

    How to Make Meatloaf in the Slow Cooker

    The best part about this meal is that the crockpot does most of the work, leaving you with plenty of time to relax and enjoy your meal with the rest of your family!

    1. Line: Line the inside of a crockpot with foil. Spray the foil with non-stick cooking spray.
    2. Combine and Mix: In a large bowl combine beef, onion, parsley, Italian breadcrumbs, milk, Worcestershire sauce, eggs, garlic powder, salt, and pepper. Use your hands to mix until combined being careful not to overmix. 
    3. Shape the Meatloaf: Using your hands, shape the meatloaf into a large oval and place it on top of the foil in the crockpot.
    4. Whisk the Glaze: In a small bowl whisk together ketchup, vinegar, and brown sugar. Brush half of the mixture on the top of the meatloaf. Save the other half for later.
    5. Cook: Cook on low for 6 hours, or on high for 3 hours. Bake until the beef is cooked throughout and reaches 160 degrees Fahrenheit. 
    6. Top with Glaze: When finished cooking, top it with the remaining glaze.
    7. Slice and Serve: Serve sliced, with remaining glaze sauce served on the side for drizzling.

    What is the Secret to Moist Meatloaf?

    There are a few things you can do to ensure that your meatloaf doesn’t turn out dry:

    • Use Meat with a Higher Fat Content: Using ground beef with a higher fat content helps keep the meatloaf moist and flavorful while it cooks.
    • Don’t Overmix: Overmixing the ingredients can cause the proteins in the beef to break down, resulting in a dry and tough meatloaf.
    • Add Moisture to the Recipe: Adding ingredients like milk, eggs, or even some grated vegetables can help to add moisture to the meatloaf.
    • Don’t Skip the Glaze: Brushing a glaze or sauce on top of the meatloaf while it cooks can help to add moisture and flavor to the meatloaf.
    • Check the Temperature: Meatloaf should be cooked to an internal temperature of 160 degrees Fahrenheit. Cooking it for too long or at too high a temperature can cause the meat to dry out.
    • Let it Rest: Letting the meatloaf rest for a few minutes before slicing lets all the liquids soak into the meatloaf to make sure it doesn’t dry out.

    Storing Leftovers

    Crockpot meatloaf will last for up to 3-4 days in the fridge and up to 2-3 months in the freezer. Here’s how you can store it! Psst- it makes fantastic leftovers! Heat it up for a delicious, easy meal.

    • In the Refrigerator: Let your meatloaf cool down to room temperature before storing it. This helps to prevent any bacteria from growing. Wrap the meatloaf in plastic wrap and place in an airtight container or a zip-top bag. It should stay nice and fresh for 3-4 days.
    • In the Freezer: If you want to keep your meatloaf for longer, wrap it tightly in plastic wrap and then in foil. Label it with the date and store it in the freezer for up to 2-3 months. Thaw in the fridge before reheating.
    • Reheating: You can easily reheat your crockpot meatloaf in the microwave for a minute or two, or in the oven for about 15 minutes at 350 degrees Fahrenheit.

    • Line the inside of a crockpot with foil. Spray the foil with non-stick cooking spray.

    • In a large bowl combine beef, onion, parsley, Italian breadcrumbs, milk, Worcestershire sauce, eggs, garlic powder, salt, and pepper. Use your hands to mix until combined being careful not to overmix.

    • Using your hands, shape the meatloaf into a large oval and place it on top of the foil in the crockpot.

    • In a small bowl whisk together ketchup, vinegar, and brown sugar. Brush half of the mixture on the top of the meatloaf. Save the other half for later.

    • Cook on low for 6 hours, or on high for 3 hours. Bake until the beef is cooked throughout and reaches 160 degrees Fahrenheit.

    • When finished cooking, top it with the remaining glaze.

    • Serve sliced, with remaining glaze sauce served on the side for drizzling.

    Juicy and succulent Steak Diane is the perfect dinner for any occasion. Diane refers to the delicious cream sauce made that includes mustard, Worcestershire sauce, and Cognac. The steak is flattened and seared in butter, and couldn’t be more flavorful!

    At my house, a steak dinner is a real treat that we can all look forward to. It’s everyone’s favorite and always what they ask for on their birthdays and other special occasions. If your family is the same way, you have to try this super easy Juicy Air Fryer Steak, this delicious Skillet Salisbury Steak, and this divine New York Steak.

    What is Steak Diane?

    Steak diane is a beef dish that is served with a mushroom cognac sauce that is typically flambeed. The sauce has heavy cream, mustard, and broth to give it lots of depth of flavor. There are no flames needed to get a great flavor in this sauce! It really hits the spot, and the whole family loves it too! The best part is, it’s almost a complete meal all on it’s own. I like to add some grilled asparagus or air fryer broccoli for an extra veggie. This dish is of course AMAZING served with some mashed potatoes too!

    Sometimes I just really crave a good steak! Sometimes its as simple as some slow cooker beef tips, and other times I want a full on prime rib. The latter is usually just for special occasions! Sometimes, I want a dinner that feels and tastes just as expensive as a prime rib dinner, but for half the cost. This steak diane recipe is the perfect solution! It’s a delicious, tender, and flavorful piece of meat smothered in a yummy creamy mushroom sauce. You tenderize the steak, then make a delicious mushroom and cream sauce in the same pan that you cook the meat. It blends all the flavors together for a delicious balanced flavor.

    Ingredients

    The traditional steak diane recipe doesn’t include mushrooms. I really like including them because they add a lot of rich and hearty flavor to the sauce. You could also include garlic, it does the same thing for the sauce. This dish would also be delicious garnished with fresh parsley and chives. Make this recipe your own!     • Olive Oil: I prefer to cook my steaks in olive oil, but you can use your favorite cooking oil here.
    • Butter: This adds a lot of flavor to the steak and helps them get a nice color.
    • Beef Tenderloin Steaks: The quality of the meat will make a difference. I would get a nice piece of meat but it doesn’t have to be the most expensive since you will be tenderizing it.
    • Shallot: This adds tons of flavor to the sauce.
    • Button Mushrooms: I prefer button mushrooms for this sauce, but you could use pretty much any kind of mushroom.
    • Cognac or Brandy: It is traditional to add cognac to the sauce. You could substitute brandy or broth if you don’t want to add any alcohol.
    • Beef Broth: Beef broth adds extra flavor and liquid to the sauce which makes it the perfect consistency.
    • Heavy Cream: This is what makes the sauce so thick and creamy. It really makes a huge difference!
    • Worcestershire Sauce: It’s sweet, sour, and spicy, and perfect in the sauce!
    • Dijon Mustard: It’s tangy and sharp and keeps the sauce really flavorful.
    • Dried Italian Seasonings: I like to make my own blend for the freshest flavors, you can find the recipe here.
    • Kosher Salt and Cracked Black Pepper: To taste!

    Steak Diane Recipe

    Don’t be fooled by the number of steps in this steak diane recipe, it is all really easy! First, you will pound the meat until it is about 1 inch thick. This will keep it really tender and help it all cook evenly. You sear the steaks in the pan, and then make the sauce in the same pan. This gets all of those delicious flavors into the sauce. Add your steaks back in to finish warming and you have the most amazing dinner!

    Cook Steak

    1. Pound: Pound the steaks down to 1-inch thickness with a kitchen mallet then season both sides of each steak with salt and pepper.
    2. Cook Steak: Heat the butter and oil in a large skillet over medium-high heat. Add the steaks to the skillet and cook for about 4-5 minutes on each side. Then cook to the desired doneness. Medium-rare steak is cooked to 135 degrees Fahrenheit, but you can cook it longer if you like it more well done. Transfer the cooked steaks to a plate and then tent with foil. Now you will make the sauce for steak diane.

    Make Sauce

    1. Cook Mushrooms: In the same skillet cook the sliced mushrooms for 3-5 minutes, or until softened. Then remove from the skillet and set aside.
    2. Saute Shallot: Again, in the same skillet sauté the shallot over medium heat for 1-2 minutes, until softened. Add additional olive oil if needed.
    3. Add Cognac: Add the cognac and cook for 1 minute until the alcohol is almost evaporated. Then use a spatula to scrape any browned bits from the bottom of the skillet. You can substitute the alcohol with beef broth if you prefer to leave it out.
    4. Add Broth: Stir in the beef broth and bring to a boil over high heat. Cook until thickened, about 2 minutes.
    5. Add Ingredients: Stir in the cream, dijon mustard, and Worcestershire sauce. Cook for 2-3 minutes.
    6. Add Mushrooms: Add the cooked mushrooms back into the sauce.
    7. Season: Season with dried Italian seasonings, salt, and pepper.
    8. Add Steaks: Return the steaks to the sauce in the skillet. Spoon the sauce over the steaks and heat through until warm.
    9. Season: Season with additional salt and pepper if needed. Garnish with fresh herbs and enjoy!

    Tips for Making Steak Diane

    This simple steak diane recipe is so fun to make! There are so many different ways to make it, you don’t have to stick to just what I do. You can change the recipe to fit your taste buds! Here are some tips for making steak diane.

    • Grilling the Steaks: You could grill the steaks if you didn’t want to cook it all in the pan. You can just make the sauce separately and add it on top after the steak is done cooking.
    • Without Mushrooms: I know some of us have picky eaters. You don’t have to add the mushrooms if you don’t think they will work for you. The sauce is still incredibly flavorful without it.
    • Leave out the Cognac: If you don’t want to use alcohol while cooking, you could just add extra broth instead. The traditional recipe calls for veal demiglace, which you would be able to find at a specialty store or local butcher. That will add all the flavor you are looking for.

    Storing Leftovers

    This steak diane sauce just gets more flavorful over time. When you reheat it you will want to do it slowly so that you don’t break the sauce or overcook the meat. Here is how to store leftovers.

    • Which Crab Meat to Use: I recommend fresh, refrigerated, lump crane meat.
    • Smaller Crab Cakes: For smaller cakes, divide the mixture into smaller 1 to 2 inch size circles. For mini crab cakes, divide into even smaller pieces, about 1 to 2 tablespoons for each cake. Bake at the same oven temperature. The bake time is shorter for these smaller sizes, so keep an eye on them. You’ll know the crab cakes are done when the tops and edges are lightly browned.
    • Cooked Crab Cakes: According to the USDA’s official website, seafood is cooked through and safe to eat when the internal temperature reaches 145 degrees F.

    • In the Refrigerator: Crab cakes are best kept in the refrigerator once they have been cooked. It is best to store them in an airtight container for 3-4 days.
    • In the Freezer: Follow the instructions on how to prepare the crab cakes. Once ready to bake you can freeze the pre-made crab cakes in a Ziploc bag. Lay flat in the freezer for up to 1 month. If you are wanting to cook them before freezing, cook them and let cool. Once cooled, freeze them in a Ziploc bag and lay flat in the freezer for up to 3 months. Thaw before reheating for best results.

    • Pork Chops: Bring meat to room temperature and pat them dry before seasoning and cooking.  Make sure your pork reaches an internal temperature of 145 degrees.
    • Mushrooms: Do not salt your mushrooms until after you have sautéed them to allow them to get great color.
    • Don’t Wipe Out Pan: Leave the drippings and brown pieces in the pan after cooking the meat because it adds great flavor to the gravy. In fact you may want to scrape them off the bottom with your spatula to be sure they mix in.

    • Reheat: To warm up stored leftovers, place on a skillet on medium low until warm throughout.


    • In a medium sized skillet over medium high heat add the olive oil. Salt and pepper the pork chops and add to the sauce pan. Cook on each side for 4-5 minutes on each side until cooked through and golden. Remove and set aside on a plate.
