Pair it with your favorite veggies for some added nutrition and you have the perfect lunch. The chicken in these meal prep bowls is perfectly seasoned, juicy, and tender. You’ll love every bite!

    Good news is- these chicken and rice meal prep bowls take less than 30 minutes to prepare. A weeks worth of meals in a snap!     How to Make Chicken and Rice Meal Prep Bowls

    These are going to be your new favorite lunch. They’re so delicious yet so simple to throw together! Plus, it’s easy to work them into your macros. The perfect diet-friendly meal!

    1. Precook Rice: Cook the rice ahead of time. You can also use prepackaged cooked rice for convenience.
    2. Season Chicken: Prepare the chicken by seasoning it with my homemade chicken seasoning.
    3. Sear: Add the olive oil to a skillet and then cook the chicken over medium-high heat for 5-7 minutes on each side. The chicken should be cooked through and no longer pink. You can also use my air fryer method for cooking the chicken if you prefer!
    4. Steam Veggies: Steam the vegetables until tender.
    5. Assemble: To assemble the bowls, evenly divide all of the cooked ingredients into four sealable containers. Each container will contain ½ cup rice, ½ cup cooked chicken, and ½ cup green beans.

    • Keto/Low-Carb: To make these meal prep bowls keto-friendly, swap out the white rice for cauliflower rice, zucchini noodles, or Konjac rice. I also love using Banza chickpea rice and pasta because it’s low-carb and adds an extra boost of protein to any meal.
    • Seasoning Your Chicken: To switch up your meal preps, try seasoning your chicken breasts with lemon pepper, blackened, or Cajun seasoning!

    How Long Do Chicken and Rice Meal Prep Bowls Last?

    In an airtight container, these meal prep bowls will last for up to 4 days in the fridge. For a quick and easy lunch, simply pop them into the microwave until warmed through and enjoy!

    Better than at your favorite restaurant, this miso-glazed salmon is sweet, savory, and full of flavor. It cooks with a delicious caramelized miso glaze on the outside and stays flaky and moist in the middle. You are going to love everything about this recipe!

    I think it’s safe to say salmon is my favorite kind of fish. It’s flaky and flavorful, without a super strong fish flavor.     Miso Glaze Salmon

    This glazed miso salmon is insanely good! It is also super easy to make, so you are definitely going to love this recipe. The real magic in this recipe is the miso glaze. Miso glaze tastes like the best sweet and savory sauce you’ve ever had that pairs perfectly with salmon. Miso paste is made from fermented soybeans that has a deep umami flavor with a hint of funk. If you like soy sauce, you are going to love this glaze. If you do love the glaze, you’ll have to try this homemade hoisin sauce and pot sticker sauce next!

    I love seafood, especially with an Asian twist. I feel like the savory flavors in things like sesame oil, rice vinegar, and miso paste just go so well on fish. You can definitely try this glaze on other pieces of fish like snapper or cod. I bet it’s even delicious with scallops and shrimp! No matter what you cook, it’s going to be amazing. I have never had anyone try this miso glaze that didn’t ask me for the recipe.

    Ingredients

    The salmon is definitely the star of this glazed miso salmon recipe. If you aren’t confident in picking out the perfect piece of salmon, I share my tips below in the tip box. The best part about this recipe in my opinion is that you also get the perfect miso glaze recipe! You can use this glaze on a lot of other protein and veggies (it’s perfect with a stir fry!).

    • Salmon Fillets: I like to buy one half of a salmon which is usually about 2 pounds and slice it into four salmon filets.
    • Salt and Pepper: This is to season the salmon. The glaze is pretty salty already from the soy sauce, so you could choose a low sodium soy sauce to cut down on some of the salt.
    • Miso Paste: Miso paste is a fermented soybean paste. You can use white miso or red miso, I chose red for this sauce.
    • Soy Sauce: This is the perfect pair with miso paste. It pairs perfectly with all of the other flavors and helps the sauce get to the right consistency.
    • Brown Sugar: Brown sugar adds a sweetness that balances out the savory flavors. You could use honey instead if you would like.
    • Rice Vinegar: This is the perfect way to brighten up the glaze. It’s sweet and acidic kind of like apple cider vinegar. In fact, you can actually substitute rice vinegar for apple cider vinegar in a pinch. Rice wine vinegar could also work.
    • Sesame Oil: This has a nutty earthy flavor that is perfect in addition to all of the other ingredients.
    • Green Onions and Sesame Seeds: This is an optional garnish. I think it makes the dish look complete, and adds a lot of fresh flavor

    Miso Glazed Salmon Recipe

    Cooking miso glazed salmon is so simple! You will start cooking the fish in a skillet in the oven. Then you will take it out and add a little more of your miso glaze to give it a nice caramel crust and broil it. It makes all the sugars in the sauce nice and sticky, just like they do at a restaurant! This dish is easy and so full of flavor, and a great way to get the whole family to try something new.

    1. Season Salmon: Salt and pepper the salmon.
    2. Whisk Ingredients: In a small bowl add the miso paste, soy sauce, brown sugar, rice vinegar, and sesame oil. Wisk together until smooth. Reserve 1 tablespoon of marinade.
    3. Marinade: In a medium sized bowl add the salmon and the sauce. Let it marinade for 1-3 hours.
    4. Cook Salmon: Preheat oven to 375 degrees. In a large skillet or oven safe frying pan add the salmon and discard marinade. Bake for 12-15 minutes, or until fish is almost done and opaque. Brush with reserved glaze and Broil on high for 1-2 minutes until fish reaches 125-130 degrees in the center.
    5. Garnish and Enjoy: Garnish with green onions and sesame seeds if desired.

    Tips for Making Miso Glazed Salmon

    I think you are going to love this miso glazed salmon recipe because it is full of unique flavor and still really easy to cook. So if you go to make this recipe and have a few questions, be sure to check out these tips that will help make this recipe a success. I also share a few ideas of what to eat this salmon with!

    • Choosing Good Salmon: When you are looking for salmon at the store, the color of the fish will tell you a lot. If it has a really nice deep pink color, it is going to be flavorful and full of good nutrients. You don’t want a pale, orange, and wet-looking piece. When you poke it, the meat should spring back. If it leaves an indent then the fish is not as fresh as you want it.
    • What to Serve It With: I love miso salmon over some brown rice and a side of edamame. It also goes great with roasted vegetables or even miso soup (never too much miso in my opinion!). You can also serve this salmon on top of a Asian ramen salad for a heartier and more complete meal.
    • Making the Glaze: This glaze is so simple. You just put all of the ingredients in a bowl and whisk! I prefer red miso paste, which you should be able to find in the refrigerated section of your grocery store. You can use a low sodium soy sauce to cut down on some of the salt content. If you don’t have rice vinegar on hand, you can use apple cider vinegar as a great substitute. The sesame oil is really strong in flavor, so make sure you don’t overdo it, and you will have the perfect glaze!

    Storing Leftovers

    Miso glazed salmon is so flaky and tender. It is definitely best enjoyed fresh in my opinion, but if you have leftovers here is how to store them.

    • In the Refrigerator: You can store leftovers in an airtight container in the refrigerator for up to 3 days.

    Creamy Sausage Tortellini Soup

    Tortellini soup is the perfect comfort food! Imagine a warm bowl filled with plump, cheesy tortellini pasta swimming in a creamy tomato broth. But wait, it gets even better – I’ve added some yummy ground pork sausage for a little extra protein and flavor. And for a touch of green, some fresh kale leaves add a pop of color, texture and most importantly- a boost of vitamins! This soup is sure to warm you up on a chilly day and satisfy your taste buds. Plus, it’s super easy to make.

    All you need to do is throw all of your ingredients (most of which I’m sure you already have) in a pot and voila! You have a delicious, hearty soup that will rival your favorite Italian restaurants. You can even serve it up with some tasty homemade breadsticks to complete the meal with.     Ingredients Needed

    Creamy sausage tortellini soup is so simple to make and loaded with flavor. It has everything you need from meat to vegetables all cooked to perfection in a savory tomato broth. It’s the perfect combination! As the sausage tortellini soup is cooking, the flavors continue to build and infuse. One sip and you’ll be hooked! *Note: exact measurements can all be found in the recipe card below.

    • Ground Pork Sausage: Try cooking this ahead of time for easy prep! Ground turkey also works if you want a leaner option.
    • Vegetables: I sautéed the ground sausage with chopped carrots, onion, and garlic for the perfect texture and savory flavor.
    • Italian Seasoning: Adds the best flavor! You can use prepackaged Italian seasoning or make your own blend using this recipe here.
    • Flour: This will thicken up your soup base. Cornstarch also works if that’s what you have on hand! You’ll just need to use half the amount as flour, mixed with cold water and then added to the soup.
    • Chicken Broth: This acts as the base of the soup. Vegetable broth also works!
    • Tomato Paste: A flavorful thickener.
    • Heavy Cream: A must for making this soup rich and creamy! Greek yogurt is another great substitute.
    • Three Cheese Tortellini: Packs cheesy flavor into each bite! Both fresh and frozen tortellini work here. You may just need to add on a few more minutes of simmering time if using frozen tortellini.
    • Kale: Adds a delicious texture and great nutrients to the soup. This can be swapped out with fresh baby spinach as well.
    • Salt and pepper: Add to taste!

    Make it Dairy-Free

    Trade the cheese tortellini for a regular pasta like bowtie or penne and use dairy-free heavy cream or almond milk as a thickener. It will not be the same thickness and the taste will change slightly, but it’s still delicious and perfect for those avoiding lactose!

    How to Make Creamy Sausage Tortellini Soup

    Making this creamy sausage tortellini soup is a breeze. Simply throw all of your ingredients together and then let the flavors meld on the stove! Want to set it and forget it? This soup can also be cooked in a slow cooker or crockpot on low for 6 hours. It’s the perfect meal to come home to at the end of the day!

    1. Sauté Pork and Vegetables: In a large pot over medium-high heat add the sausage. Then cook and crumble until brown. Once cooked, remove and set aside on a plate. Then add the carrots and onion and sauté until tender. Add in garlic and Italian seasoning and sauté for a minute more.
    2. Stir in the Remaining Ingredients and simmer: Add in the flour to the vegetables and sausage and pour in chicken broth. Add in the tomato paste and stir. Add in heavy cream and tortellini and bring to a simmer for about 7 minutes until the tortellini is cooked. Add in the kale right before serving and salt and pepper to taste.

    Delicious Variations

    Creamy sausage tortellini soup is literally my favorite! It’s super simple to whip up and can be customized just as easily. Here are some variations to help make it your own!

    • Meat: Change up your meat if you prefer turkey sausage, cubed chicken or ground beef instead!
    • Cream: Heavy cream is best but if you are looking for a lighter substitute try half and half. Greek yogurt also works and adds some extra protein as well!
    • Vegetables: Add in chunks of potatoes, mushrooms, zucchini or even bell peppers.
    • Broth: For other flavoring try beef broth or vegetable broth. Use what you have on hand!
    • Make it Spicy: For a spicier soup, try using a hot Italian sausage or adding red pepper flakes (¼ teaspoon to start out with) to the soup.

    Storing Creamy Sausage Tortellini Soup

    This Italian sausage tortellini soup does so well made ahead and even frozen! As the soup sits together in a ziplock bag or airtight container, the flavors continue to meld and become more delicious. It’s so easy to reheat and makes the perfect comforting meal for chilly winter days.

    • In the Refrigerator: Cook the creamy sausage tortellini soup leaving out the tortellini pasta if you are not serving it. Once completely cooled, add to a ziplock bag or airtight container and store in the refrigerator for 3 to 4 days.
    • Reheating: You can either thaw your sausage tortellini soup in the refrigerator overnight or simply add your ziplock bag to a bowl of hot water. Once thawed or taken from the refrigerator simply add the soup to a skillet or slow cooker. If you left out the tortellini, this would be a great time to add that back in and let cook for a few minutes before serving.

    I love a simple chicken meal. It’s a great protein choice to feed the whole family and everyone is always full and happy. You can make so many different kinds of meals too!     I am all about meal prep! Deciding what to make for every meal of the day with 4 kids was so overwhelming. I used to get so burned out so quickly. Now I take extra time at the beginning of the month to decide the meals that I want to make and I plan it out. I have a great list of crock pot dinners and air fryer meals that really help me decide what to make.     Once I’ve chosen my meals, I actually put them into containers and into the refrigerator! Just like these chicken teriyaki meal prep bowls, I can pull one out of the refrigerator and pop it into the microwave for a quick and healthy meal in minutes. I make these chicken teriyaki meal prep bowls for my kids lunches, and they have been so much happier because of it! A full belly at school is so important.

    Ingredients

    Just a few simple ingredients make up these chicken teriyaki meal prep bowls. The whole point of meal prep is to make life easier right? That’s why I love this simple chicken recipe that is flavorful and easy to make. It’s a simple recipe that all of my kids love. The teriyaki sauce is made of soy sauce, ginger, garlic and other ingredients. It’s so flavorful and easy to make! You can find the measurements below in the recipe card.

    • Boneless Skinless Chicken Breast: You will cut the breast up into bite sized cubes before cooking them. That way you don’t need a knife or any extra utensils. It’s so easy and convenient!
    • Rice: You can cook your rice however you usually do or use the pre-cooked rice from the store. I share some of my favorite rice recipes below in my tip box.
    • Broccoli Florets: You can buy the frozen version, or fresh. Whatever you like. You will want to steam them until soft.
    • Snap Peas: Again, fresh or frozen you are going to steam them until soft.
    • Teriyaki Sauce: I have a great teriyaki sauce recipe that you should try! Homemade teriyaki sauce is so simple to make, and you know exactly what is in it! There are lots of store bought options that work great too.
    • Sesame Seeds: This is for garnish and is totally optional. I love the flavor they give so I always add them.

    These teriyaki chicken meal prep bowls are a family favorite. I love making them for my kids school lunches. They are filling and easy to reheat! Make sure you put your food in a microwave safe bowl so that it is easy to reheat when you are ready to eat.

    1. Cook Rice: Cook the rice ahead of time or use prepackaged cooked rice for convenience.
    2. Cut and Cook Chicken: Cut the chicken into bite-sized pieces. Cook the chicken over medium high-heat for 5-7 minutes. The chicken should be cooked through and no longer pink.

    Tips for Making Teriyaki Chicken Meal Prep Bowls

    I love these simple teriyaki chicken meal prep bowls. You can always change the recipe however you like to fit your needs. You can add more to it if you need more calories, and you can use different sauces to make it sugar free or lower calorie. Here are some tips when you go to make this recipe.

    • Using Other Chicken Parts: My kids like all of the different parts of chicken meats, so I usually cook a whole chicken and cut up the entire thing. They don’t all have to be the exact same size. I make this air fryer whole chicken all the time because of how easy it is.
    • Using Other Proteins: You can absolutely change up this recipe and use whatever protein you like. You could even make it vegetarian by using chickpeas instead of meat. I like pork and chicken the best.
    • Ways to Cook Rice: You can cook the rice however works best for you. I like to make instant pot rice or this simple and more flavorful lemon rice. You could also cook brown rice for more nutrients. You could also make quinoa or cauliflower rice for an even healthier option.
    • Adding Veggies: If your family would like green bell peppers or carrots instead, you should make what your family will love! Just steam or saute them before assembling your bowls so they are easy to warm up and eat.

    Storing Leftovers

    Slow cooker chicken tikka masala is an easy sweet and spicy sauce that is thick, rich, and creamy. It is so flavorful with spices like garam masala, paprika, and even cinnamon! It’s not too spicy and perfect served over rice and with a side of naan.

    I love a good slow cooker recipe! Slow cookers are good for so many reasons, but my favorite reason is how easy they make making a full meal. You can throw everything in the crock pot and have a delicious and flavorful meal in a few hours.     The hubby and I went to an amazing Indian restaurant last year. I always get the butter chicken and I realized I had never tried anything else! I ordered the chicken tikka masala and I was blown away! The spices were incredible. I was so glad to try something new and love it!

    I knew right away that I had to make a slow cooker recipe! The flavor of the dish is really complex and usually requires a few hours on the stove to blend together. The slow cooker is the perfect solution for being short on time! I love all of my slow cooker recipes on my blog, but this one just might be my favorite! I love serving this with coconut rice, or instant pot rice when I need to be totally hands-off.

    Ingredients

    Don’t let this ingredient list scare you away! It is mostly spices and things that you will already have on hand. This slow cooker chicken tikka masala is simple to put together and throw in the crock pot. The slow cooker is going to do it all for you. Simply add in all the ingredients together in a certain order and you will be AMAZED once you serve it! You can find the measurements below in the recipe card.

    Fresh Ingredients

    • Boneless Skinless Chicken Breasts: The chicken does not need to be cooked prior to adding in the slow cooker, it is that simple!
    • Onion: Even if you are not an onion fan like myself, this is actually a small and subtle hint of flavor in this chicken tikka masala recipe. 
    • Garlic: Always a favorite in my book!
    • Ginger: Fresh and grated. Using a grater with the smallest grated holes is best.
    • Tomato Puree: This is the base and does turn the sauce to a orange/red color. 
    • Plain Greek Yogurt: I am a huge fan on using yogurt when possible. It is rich, thick and creamy with an extra flavor.
    • Olive Oil: Adds flavor as well as richness to this creamy sauce. 
    • Heavy Cream: Thick, flavorful cream that adds flavor and texture.
    • Cornstarch: Finely coats the chicken and helps to thicken the sauce.
    • Cilantro: Chopped and used for a garnish.

    Seasonings

    • Garam Masala: This is a special seasoning with a blend of seasons within it. This seasoning will add warmth and sweetness to the sauce.
    • Cumin: This spice is perfect for using in a curry mixture.
    • Paprika: Adding a little bit of spice to this is a fun touch!
    • Salt and Pepper: Just a pinch.
    • Cinnamon: A secret ingredient that adds so much flavor and sweetness!
    • Cayenne Pepper: A little extra heat added to the sauce.
    • Bay Leaves: This is strictly for flavoring and soaking in throughout the slow cooker process. Before serving, you will remove the bay leaves.

    Recipe for Chicken Tikka Masala Slow Cooker

    This slow cooker chicken tikka masala is so simple to make and is effortless in so many ways. Simply mix together the tikka masala sauce, then add the chicken. It is basic and no extra prepping or cooking. Within hours you will be smelling a delicious dinner that will be hands down one of the BEST you make!

    1. Mix together sauce: In your slow cooker combine onion, garlic, ginger, tomato puree, greek yogurt, olive oil, garam masala, cumin, paprika, salt, cinnamon, black pepper, and cayenne pepper.
    2. Add in chicken and cook: Add in the chicken pieces and then toss to coat in the sauce. Then add in the bay leaves. Cook on low for 6 hours or high for 4 hours.
    3. Mix and cook a little longer: During the last 20 minutes of cooking, whisk together cornstarch and heavy cream. Then add in to the sauce and continue to cook for another 20 minutes.
    4. Serve: Serve over rice.

    Tips for Making Chicken Tikka Masala

    This slow cooker chicken tikka masala is so easy! There really isn’t anything to it. I just wanted to share some tips that I think will be helpful when you go to make this dish.

    • Finding the Spices: Garam masala should be in the spice section of your local grocery store. You will probably be able to find it in a powder or liquid form. I use powdered spices, but there are a lot of benefits to the liquid one too! You can use whatever you like best. If you can’t find garam masala, all-spice mixed with cumin is a great substitute! You will mix 1 part cumin with ¼ part all-spice.
    • Serve with Naan: To get the full restaurant experience, you will definitely want to make some naan. It is a great bread to make at home, or you can get some premade naan at the store. Whatever you do, just make sure it’s on the table!
    • Make It Dairy Free: You can substitute coconut milk for plain yogurt and heavy cream in this recipe. You will get a slightly different flavor but it will still be amazing. You will want to get the coconut milk in a can that still has all the coconut fat in it.

    Storing Leftovers

    I love this slow cooker chicken tikka masala recipe so much because it makes great leftovers! It is an easy recipe to make a big batch of and have leftovers throughout the week.

    • In the Refrigerator: You can store your leftovers in an airtight container in the refrigerator for up to 4 days.
    • In the Freezer: You can freeze your leftovers for up to 3 months in a plastic bag or freezer safe airtight container.

    Two of my goals for the new year are to eat healthier and stop eating out as much. Meal prepping is a great solution for both! I know it can seem overwhelming (and time consuming) but it’s actually a lot easier than you’d think! You just need a few good recipes in your arsenal. A few meal prep necessities: Instant pot shredded chicken, Instant Pot brown rice, and air fryer frozen broccoli! You can have a week’s worth of healthy meals prepared in less than 30 minutes.

    Korean Beef and Rice Bowls (For Meal Prep!)

    These Korean ground beef and rice bowls are one of the most popular recipes on the blog. You really can’t go wrong with a bed of warm steamed rice and juicy marinated beef on top! Now you can enjoy it for a quick lunch throughout the week with this easy meal prep recipe! It’s something the whole family can enjoy.

    The savory Korean beef is marinated in a mouth-watering sauce, and paired with fluffy white rice for the perfect balance of protein and carbohydrates. (I also have options below to make it low-carb and keto-friendly!) Plus, the added veggies provide a dose of freshness and healthy greens. Trust me, your taste buds (and your waistline) will thank you for giving these meal prep bowls a try!

    Everything You’ll Need

    This is everything that you will need to make this delicious marinated beef as well as other things to add in to your meal preps. This way, you have a meal balanced with protein and carbs! The beauty of meal prepping is that you can easily customize things to fit all sorts of dietary needs. Find more substitutes and ideas in my tips section below! Looking for measurements?     • Ground Beef: I used 90% lean ground beef. You can also use ground pork or even ground turkey if you want an even leaner protein.
    • Minced Garlic: Fresh minced garlic is a must when making Korean-inspired dishes.
    • Brown Sugar: Adds a smoky sweetness to the beef.
    • Soy Sauce: I used reduced sodium soy sauce, but any kind you have on hand will work!
    • Sesame Oil: Adds a delicious nutty flavor to the ground beef!
    • Seasonings: Time to break out your spice rack! I used ground ginger, red pepper flakes, and cracked black pepper here.
    • Rice: Use precooked rice to make your meal prep bowls with easy. White and brown rice both work.
    • Steamed Broccoli Florets: I add these to my meal prep bowls for a little extra nutrition! You can use any of your favorite steamed veggies here.

    How to Make Korean Beef and Rice Meal Prep Bowls

    You’re going to fall in love with the flavor of this Korean beef marinade. It’s the perfect combination of savory and sweet and tenderizes the ground beef beautifully! I love how easy it is to throw together, too! It makes the perfect lunch for both you and the kids.

    1. Cook Ground Beef: In a large skillet, cook the ground beef and garlic breaking it into crumbles over medium heat until no longer pink.
    2. Prepare Sauce: Then in a small bowl, whisk brown sugar, soy sauce, sesame oil, ginger, red pepper flakes and pepper.
    3. Pour Over Beef: Pour over the ground beef and then let simmer for another minute or two.
    4. Assemble Bowls: To assemble the bowls, place one half cup cooked rice into four sealable containers. I like to use leftover rice or prepackaged cooked rice for convenience.
    5. Add Korean Beef: Place one half cup of cooked Korean beef into the containers.
    6. Add Broccoli: Then add one half cup cooked broccoli florets into the containers. I like to use frozen florets in steam safe bags because it makes it easy!
    7. Seal and Store: Seal the containers and store in the refrigerator until ready to eat. When ready to eat, warm in the microwave, garnish with green onions, and sesame seeds and enjoy!

    Customizing Your Meal Preps

    Here are a few ways to customize these Korean beef meal prep bowls so they fit into any diet!

    • Keto/Low-Carb: For keto-friendly meal prep, swap out the white rice for cauliflower rice, zucchini noodles, or a rice replacement like Shirataki rice! (This is also known as Konjac rice.) To keep carbs low, you’ll also want to swap out the brown sugar in the marinade for Stevia or monk fruit sweetener.
    • Make it Meat-Free: You can easily make these bowls vegetarian! Just swap out the beef for scrambled tofu or plant based sausage crumbles.
    • Adding Other Veggies: Feel free to pack your meal prep bowls full of all of your favorite veggies! Sliced bell peppers and carrots are both great options. If you’re feeling adventurous, add some kimchi (pickled cabbage) to your meal prep bowls for a more traditional version of this meal! Kimchi is a superfood side packed with vitamins and antioxidants.     How Long Do Korean Beef Bowls Last?

    This easy shrimp creole is my new favorite shrimp dish! I grew up in the north, so these delicious and heartwarming southern dishes are still new to me. As I’ve started branching out and trying new things, I’ve fallen in love with southern cuisine! This recipe originated in Southern Louisiana where gulf shrimp are famous there. I have enjoyed my time in Louisiana and have learned so much about their style of cooking.

    Every time I travel I love to try the local foods. Traveling is where I have found some of my favorite recipes like my fish and chips recipe, Chicago-style deep dish pizza, and the best fried chicken I’ve ever had. There is nothing like experiencing life through other people’s food!

    Ingredients

    There are so many ingredients you can include in this easy shrimp creole! This is a list of the most basic ingredients, but you could also add bay leaves, thyme, cayenne pepper, cajun seasoning, the list goes on! However you fix it, you are going to love the blend of flavors in this dish. You can find measurements below in the recipe card.

    • Olive Oil: I prefer olive oil for the flavor and it can handle a lot of heat. You can use your favorite oil, or whatever you are used to cooking with
    • Green Bell Pepper: They are a little sweet, and add lots of flavor to this meal. They just get better over time!
    • Onion: They are great at adding lots of flavor to the dish, and help make all of the other flavors in the dish shine.
    • Celery Stalks: I like to cut off the tops and the white ends, and dice them into small pieces. You want them to cook quickly and be the perfect bite size.
    • Garlic Cloves: Fresh garlic adds a sweet and savory flavor. It makes for a great sauce.
    • Stewed Tomatoes: You can buy stewed tomatoes in a can in the canned tomato section. I don’t use a specific brand, and you should be able to find them at your local grocery store.
    • Tomato Sauce: I also buy this from a can.
    • Chicken Broth: You could also use vegetable stock or a shrimp stock.
    • Chili Powder: Chili powder adds a little kick. You can add more if you prefer more spice, or add hot sauce too.
    • Worchestershire Sauce: This sauce makes such an amazing base for any dish.
    • Shrimp: This is the key ingredient!
    • Cornstarch: This helps thicken up the sauce.
    • Water: Helps to make more sauce.

    1. Add Ingredients: In a medium sized skillet over medium high heat add the olive oil. Then add in bell pepper, onion and celery and then cook until tender.
    2. Cook: Add in stewed tomatoes, tomato sauce, chicken broth, chili powder, and Worcestershire sauce. Add shrimp and cover and let simmer for about 5-7 minutes until the shrimp are cooked through.     • What to Serve It With: We love to serve this shrimp creole with white rice. You can enjoy it with mashed potatoes or a pasta, such as angel hair, if you are looking for something other than rice. It is best garnished with parsley and/or green onions. Lemon also adds a great sweetness and flavor to the overall dish because of the acid in it.
    • Alternative Proteins: If you are looking for other types of meat to serve with this, sausage or catfish are great substitutions. Catfish and shrimp also blend well with this meal.
    • Using Different Stock: If you prefer a more fish-flavored stock, such as shrimp or seafood stock, you can replace the chicken broth for that added flavor.

    Storing Leftovers

    Easy shrimp creole makes such good leftovers! The flavors just get better with time. The only thing you have to look out for is not overcooking the shrimp when you reheat it. I like to put it back on the stove and warm it really slowly and definitely don’t let it get too hot.

    • In the Refrigerator: You can keep your leftovers in an airtight container or the pot you cooked it in covered in plastic wrap in the refrigerator for 3-4 days.

    Recipe for Salmon with Pesto

    Once you try this pesto salmon, you are going to be hooked! I like to use a fresh basil pesto, but there are so many great options at the grocery store too. Salmon is a great fish to try if you are making fish for the first time. The key is to not overcook it! You want the internal temperature to be 135 degrees. It also matters what fillet you choose. There are tips for choosing the best salmon fillet piece in my tips box.

    I think that pesto and salmon were made for each other! I love pesto on so many things, like this pesto alfredo chicken casserole and this easy baked pesto chicken. It turns out, I think pesto is my favorite on salmon. It adds such a bright and fresh flavor to the fish, as well as adds moisture. It’s the perfect ingredient!

    These six ingredients come together to make the juiciest and most delicious pesto salmon you’ll ever have! It’s so simple to make and loaded with flavor. All of my kids loved this dish, which is saying something! It’s not fishy at all, and it’s so tender. It just flakes with your fork! It’s actually perfect on top of salads, with rice, or cauliflower rice to keep it lower in carbohydrates! You can find measurements below in the recipe card.

    • Olive Oil: I like to cook my fish in olive oil because it has a great flavor and won’t brown like butter.
    • Salmon Fillet: The key to choosing the best salmon filet is included in the tip box below.
    • Cherry Tomatoes: Cherry tomatoes are really sweet and have acid that helps keep the salmon tender and juicy.
    • Kosher Salt: High quality salt will taste better and make a difference in the dish!
    • Freshly Ground Black Pepper: I like to grind some fresh pepper over the top for a little extra spice.
    • Basil Pesto: This is the key to your pesto salmon! You can make it yourself at home, it’s super simple! Or there are lots of great fresh options at the store too.

    Pesto Salmon Recipe

    There is nothing tricky about this pesto salmon recipe! It is really easy to cook a perfectly juicy and tender baked salmon fillet with just a few tips. I like to sear the salmon in a skillet and then finish it off in the oven. That way the salmon skin is nice and crispy, but the fillet doesn’t get over done.

    1. Prep: Preheat the oven to 350 degrees Fahrenheit.
    2. Drizzle: Drizzle 1 tablespoon of olive oil in a large oven-safe skillet or cast iron pan.
    3. Pat Dry: Pat the salmon fillet dry with paper towels and then place it in the middle of the skillet.
    4. Add Cherry Tomatoes: Add the cherry tomatoes to the skillet to surround the salmon fillet. Then drizzle the remaining olive oil over the tomatoes and salmon.
    5. Season: Season the salmon and tomatoes with salt and pepper.
    6. Bake: Bake the salmon and tomatoes for about 15 minutes or until the tomatoes start to blister and soften.
    7. Add Pesto: Spread the pesto sauce over the salmon and then continue to bake for an additional 5-8 minutes.
    8. Bake: Bake until it registers 135 degrees Fahrenheit when a thermometer is inserted at the thickest part of the salmon.
    9. Garnish: Garnish with fresh basil and parmesan cheese. Enjoy!

    Tips for Cooking Pesto Salmon

    I absolutely love cooking salmon! It’s a great piece of fish that is healthy and full of nutrients. It also has a mild flavor so all of my family can enjoy it together. Here are a few tips that I’ve picked up over the years of cooking salmon.

    • How to Pick the Right Fillet: Poke it! Sounds weird, but you can actually tell a lot about the quality of the fillet by feeling it. It should be firm and the flesh should spring back. It should not smell at all, and it should have a nice bright pink-orange color. If it is a pale pink, it is not as fresh.
    • Seasoning Your Salmon: The pesto really does most of this for you! It’s the perfect marinade and seasoning all in one. Don’t underestimate how much flavor the tomatoes add either! They are super great at infusing the dish with juicy sweet flavor. Other than those ingredients, all you really need is a little salt and pepper. You could squeeze some fresh lemon juice to finish it off, and then add a little lemon zest to the pesto!
    • What Pan to Use: You could use whatever pan you have on hand. A lot of the time I will choose a cast iron skillet because they heat up really evenly and hold heat really well. You can use a non-stick pan if that’s what you are used to cooking with!

    Storing Leftovers

    Pesto salmon is super tasty leftovers! The only tricky part is reheating the salmon without drying it out and overcooking it. Sometimes I will just eat it cold to keep it nice and tender, and it’s great that way!

    • In the Refrigerator: You can store your leftovers in an airtight container for up to two days in the refrigerator.
    • To Reheat: I like to wrap my salmon in parchment paper with butter inside and put it on a pan in an oven preheated to 175 degrees and reheat it as slowly as you can! I know it sounds like a lot of extra work but it will taste exactly like the day you made it.
