    I love how convenient it is to boil chicken for weeknight meals. It cooks and shreds perfectly every time, and my meals come together so quickly when I have them cooked, shredded, and ready to go! My favorite recipes to use boiled chicken are chicken salad, chicken noodle soup, and this yummy broccoli chicken casserole.

    Boiled Chicken

    Boiling chicken at home is the best way to cook chicken for recipes that require it. Learn how to cook tender and moist chicken breasts over the stove in chicken broth. With just two ingredients, boiled chicken is simple and easy!

    There are endless ways to use boiled chicken in recipes, and I can’t wait for you to see how versatile it is! Other ways I love to use boiled and shredded chicken is in dips like this chicken alfredo dip. I also love to use the shredded chicken in chimichangas and enchiladas because it makes assembly of the recipes so easy!

    Ingredients Needed for Boiled Chicken

    Boiling chicken is so easy and only requires two ingredients… chicken breasts and chicken broth! I also love to use the leftover broth in soups or to cook rice because it adds so much flavor. So make sure to keep the broth for other recipes!

    • Boneless Skinless Chicken Breasts: Choose breasts that are the same size and thickness so the chicken cooks evenly.
    • Chicken Broth: I LOVE to use chicken broth because it adds so much flavor! Water also works, but you may need to add a little salt.

    How to Boil Chicken

    You no longer need to buy a rotisserie chicken to shred for recipes because cooking and shredding your own chicken is so easy! The chicken breast cooks gently in the chicken broth and retains so much moisture. You are going to love how simple this method is to shred your chicken.

    1. Add Boneless Skinless Chicken Into a Pot: Place the chicken in a large stock pot. Make sure all the chicken breasts are the same size and thickness. If the chicken is too thick, feel free to cut it thinner so the chicken cooks evenly.
    2. Add the Chicken Broth: Pour the chicken broth over the chicken making sure to completely cover the chicken. The broth should be 1 inch above the chicken. Add more broth if needed. You can use water instead of chicken broth, but the chicken broth adds great flavor!
    3. Bring to a Boil: Bring the chicken and broth to a boil over medium-high heat.
    4. Reduce Heat to Low: Once the mixture is boiling, reduce the heat to a low boil and cover it with a lid.
    5. Cook the Chicken: Cook until the chicken is cooked through and the internal temperature reaches 165° Fahrenheit. This takes approximately 15-20 minutes depending on the size and thickness of the chicken breasts. You can remove one of the chicken breasts and use a thermometer to check the temperature. Be careful not to overcook the chicken because the texture will become rubbery.
    6. Remove the Chicken and Shred: Remove the chicken from the broth and shred using two forks. My favorite way to shred chicken is in my stand mixer or with an electric hand mixer. It works wonders and is so fast! You can also slice the chicken if you prefer.

    Add More Flavor

    Feel free to any of the following items to your pot of boiling chicken! As the chicken boils it will take on the flavors infused in the broth. Here are some delicious ideas for you to give a try.

    • Whole Garlic Cloves
    • Sliced Onions

    • Fresh Herbs

    How to Store and Freeze Leftovers

    I love to boil extra chicken to use throughout the week! Shredded or sliced boiled chicken is great to make ahead. Here are some tips on how to store and freeze boiled chicken.

    • In the Refrigerator: Shred or slice the cooled chicken before placing it in the refrigerator. Place in a sealable container and store in the fridge for up to 5 days.
    • In the Freezer: Cool and drain the boiled chicken, then shred or slice before freezing. Place in a ziplock bag, seal tightly and freeze for up to three months.

    Beef Wellington originated in France and is the main dish. It’s an elegant and decadent meal that we like to save for special occasions. Beef Wellington is a nice cut of meat, usually a fillet steak, beef tenderloin, or filet mignon. It uses the center-cut portion of the meat that is known to be the most tender and juicy part of the cow. The meat is wrapped in a mustard sauce, then a mushroom duxelles and prosciutto. Then, it’s all wrapped in a puff pastry and baked until golden brown.

    What Cut of Meat is Used in Beef Wellington?

    Beef Wellington is made with a whole beef tenderloin fillet in this recipe. You want to use the most tender cut of meat that you can! Beef tenderloin is lean and juicy and will slice up beautifully for this recipe.

    Ingredients in Beef Wellington

    The cut of meat is the most important! You definitely want to splurge on some tender meat. Check out the recipe card at the bottom of the post for exact measurements.

    • Beef Tenderloin: Beef tenderloin is a tender cut of beef (as in its name!) and is the perfect meat for this recipe.
    • Salt and Pepper: These will enhance the flavor of the meat.
    • Olive Oil: This helps sear the tenderloin before wrapping it up.

    Mushroom Duxelles

    • Mushrooms: I used Bella mushrooms for this mixture.
    • Onion: The onion adds a delightful taste to the mushrooms.
    • Garlic: You can use fresh garlic cloves or minced garlic from a jar. ½ teaspoon equals about one clove of garlic.
    • Prosciutto: You wrap this additional layer of meat around the mushroom duxelles.
    • Yellow Mustard: You can use any kind of yellow mustard that you prefer! It will be a glaze for the beef wellington.
    • Puff Pastry Sheet: This wraps it all together before you bake it.
    • Eggs: The eggs help create a golden brown look on the pastry.

    How to Make Beef Wellington

    I can’t wait for you to try Beef Wellington! It is a sweet and savory blend of layers that melt in your mouth and tastes oh-so-good!

    1. Sear the Tenderloin: Generously salt and pepper your tenderloin. In a large skillet over medium-high heat, add the olive oil. Sear the tenderloin on each side for about 2-3 minutes until it gets a golden brown crust. Remove from the heat and set aside.
    2. Prepare the Mushroom Duxelles: In a food processor, add the mushrooms, garlic, and onion. Then, pulse in the food processor until it becomes a puree. Heat your skillet to medium high and add the mixture. Sauté the mushrooms until you have the moisture has left. Remove from heat and let cool.
    3. Wrap the tenderloin: Roll out some plastic wrap and lay the prosciutto so they are even and overlap. Spread the mushroom mixture on top leaving an inch boarder from the sides. Rub the mustard on the tenderloin and then roll the tenderloin up in the prosciutto and mushroom mixture folding up the sides around the tenderloin as you roll. Wrap the plastic wrap tightly around the beef and refrigerated for 30 minutes.
    4. Add Puf Pastry: Preheat oven to 400 degrees Fahrenheit. Roll the puff pastry sheet out on a lightly floured surface. Place the tenderloin in the center. Brush the egg mixture around the tenderloin on the sheet and roll the tenderloin tightly in the pastry. Brush the remaining egg mixture on the outside of the pastry and cut slits in the top.
    5. Bake: Bake until the pastry is golden and the beef registers to 120 degrees for medium rare. About 45 minutes. Remove the from the oven and let rest for 10 minutes before slicing.

    Tips for Making Beef Wellington

    • Let it Rest: It is best to let the meat rest in between each stage of wrapping. Sitting it in the refrigerator or freezer for a time will help firm up the tenderloin.
    • Tie it Up: Tie your beef tenderloin with kitchen twine. This will help hold its shape while it is being seared.
    • Brush the Meat with Egg: Brush your meat as well as the pastry with egg wash. This will make the top layer of the pastry stick to the meat and stop it from rising and leaving a gap.

    How to Know When Beef Wellington is Done

    The trick with Beef Wellington is to have a slice of rare cooked meat in a golden brown pastry. Once your Beef Wellington is in the oven you can reduce the temperature down to 425 degrees Fahrenheit. Then, after 10 to 15 minutes reduce the amount of temperature to 400 degrees Fahrenheit. Using a meat thermometer inserted into the center of the beef tenderloin, the meat should be 135 degrees Fahrenheit for medium rare.

    How to Store Beef Wellington

    Usually, you don’t have any leftovers after this meal. On occasion, it is nice to double the recipe or plan to make it ahead. Here are some ways to store it properly and still have a great recipe when warming up.

    • Can you Make Beef Wellington Ahead of Time? Yes! You can make Beef Wellington ahead of time, up to 24 hours. Prepare your Beef Wellington according to the recipe and stop before adding the puff pastry. Wrap that portion tightly with plastic wrap and place it in the refrigerator until you are ready to bake it. Finish the recipe according to the Beef Wellington directions.
    • Can you Freeze Beef Wellington? Yes, this is best to do before baking it with the pastry over the top. Freeze your beef tenderloin with all the layers for three days. When ready to bake, place the meat in the refrigerator overnight to thaw. Finish the recipe by adding the puff pastry layer over the top.
    • How to Reheat Beef Wellington: Reheating Beef Wellington is a little tricky, making sure that it is not soggy or overcooked with the pasty now over the top. It is not as good as the first time you enjoyed it warm and freshly baked but it will come close! Heat the oven to 275 degrees Fahrenheit and preheat for about 10 to 12 minutes or until warm. Be careful when using a microwave, Use less power and heat in small increments flipping it back and forth. Remember you are warming it up, not cooking it.

    This quick and easy 30-minute tomato soup recipe will knock your socks off. The flavor is incredible! If you have never made tomato soup from home before, get ready to make your new favorite recipe! I like to use canned tomatoes because it really speeds up the process. If you want to make this recipe from fresh tomatoes I have some tips on how to do that later on in this post.

    For years I have made this delicious Tomato Basil Soup and I realized the other day, I haven’t shared my classic tomato soup recipe with you! I love a good tomato soup for a lot of reasons. I used to eat tomato soup and grilled cheese sandwiches all the time growing up. Now I get to serve a next level version to my kids! They love the homemade soup and usually request a grilled cheese pull apart or pizza grilled cheese to go with it.

    Ingredients

    These simple ingredients will come together to make the most flavorful homemade tomato soup you’ve ever had. I am in love with this recipe because it’s so easy to whip up and way better than canned. You could also add some croutons, olive oil, and fresh basil to top it off for a really stunning presentation! You can find the exact measurements at the bottom of the page in the recipe card.

    • Butter: I would use unsalted butter in this recipe because you will be adding salt.
    • Yellow Onion: You will want to dice it up evenly so it all cooks at the same time. I love the flavor and aroma onions add to this dish!
    • Garlic: Garlic is a must for this recipe, it compliments the flavors of the tomatoes perfectly!
    • Canned Whole Peeled Tomatoes: This really cuts down on the amount of prep time you will need to make this recipe. The flavor is still divine and it’s half the work!
    • Chicken Broth: This adds so much depth of flavor to the soup. You could try other broths or stocks if you don’t want to use chicken.
    • Heavy Cream: This is what gives the soup its silky smooth texture. You will miss it if you don’t add cream!
    • Kosher Salt: You can use regular salt if you don’t have Kosher, but a higher quality salt will make a difference in flavor. You can salt to taste or follow my recommended amount.

    How to Make Tomato Soup

    It’s just four simple steps! This recipe is so easy and quick, you’ll find yourself wanting to make it all the time! You will be blown away by how flavorful homemade tomato soup is compared to the canned version. This recipe is a total crowd-pleaser!

    1. Saute: Add the butter and onion to a soup pot over medium-high heat. Sauté the onion for 5-7 minutes or until it’s lightly browned.
    2. Stir: Stir in the garlic and stir until fragrant for 30 seconds.
    3. Simmer: Add in the tomatoes and chicken broth. Increase the heat to high and bring the soup to a boil. Reduce the heat and simmer for 20 minutes, covered, with the lid slightly ajar.
    4. Blend: Blend the soup (I like to use an immersion blender) until it’s smooth (you may want to let it cool a little bit first). Stir in the cream and salt. Season with additional salt & pepper as needed.

    How to Make Homemade Tomato Soup From Fresh Tomatoes

    If you have fresh tomatoes from the garden or just want to make it from scratch, I have a few tips for how to prep your tomatoes. It’s hard to beat fresh homegrown tomatoes in a warm soup! Follow these tips to adapt this recipe for fresh tomatoes.

    • Fresh Tomatoes: You will need four large, fresh tomatoes if you are going to cook the soup this way!
    • Blanch and Peel: You don’t want the skins in the soup because they won’t blend up smoothly and add a different flavor than you will want. To remove the peel, boil a large pot of water. Cut an x on the bottom of each tomato. Drop the tomatoes in the boiling water for 60-90 seconds. Then pull them out and drop them in a bowl of ice water. This shock will loosen the skins off of the tomatoes.
    • Halve and Scrape Seeds (optional): If you don’t want any seeds in your soup, you can cut the tomatoes in half. Then using a spoon, you can scoop out the seeds.
    • Saute: After you have sauteed the onions and garlic, add the tomatoes and a little bit of broth. Saute until the tomatoes break apart when stirring, which would be about 10 minutes. Then add the broth and blend.

    Storing Leftovers

    Homemade tomato soup is so delicious and makes wonderful leftovers. You can even make extra and freeze it, and you might want to because this recipe is one you’ll want again and again!

    In the Refrigerator: Put your cooled tomato soup in an airtight container and store it in the fridge for up to 4 days.

    In the Freezer: Put your tomato soup in a plastic airtight bag and freeze for up to 6 months. I would recommend leaving out the heavy cream if you plan to freeze the soup. You can add it in when you are reheating the soup on the stove.

    This just might be your new Christmas dinner tradition! It’s so simple to make and it turns out absolutely stunning. It’s easy to make ahead of time so that it’s ready for the big day. Not to mention how gorgeous it looks as a centerpiece for your table. It’s not a complicated recipe either. You don’t need to be a pro at making bread for these rolls to turn out perfectly soft, fluffy, and delicious.

    Ingredients

    • All-Purpose Flour: It’s the easiest to work with for this recipe.
    • Granulated Sugar: A little sugar helps the bread to rise better and gives it a nice flavor.
    • Rapid Rise Yeast: You want to get rapid rise because we are only doing one rise for this recipe.
    • Salt: A little salt brings out all the great flavors in this bread.
    • Milk: Your milk should be warm, which means between 110 and 120 degrees. It should be warm to the touch but not hot.
    • Butter: You will want to use unsalted butter.
    • Italian Seasoning: This blend makes a great savory flavor in the bread.
    • Fresh Rosemary: This is for garnish around the rolls. It looks like a pine tree branch so it’s perfect for the season.
    • Fresh Cranberries or Pomegranate Seeds: These add a great pop of color, and awesome flavor too. Something red on your wreath is a must!

    If you haven’t made bread before, don’t be intimidated! You can totally make this dinner roll wreath, and I’ve written out each step with lots of details so that it will be easy to follow. You will be so happy with how it turns out!

    Make the Dough

    1. Prep Baking Station: Set the oven to warm, or as low as it will go if you don’t have a warm option (about 170℉). Line a large baking sheet with parchment paper. Spray a small glass (oven-safe) bowl or storage dish with cooking spray and place upside down in the center of the baking sheet. Set aside.
    2. Mix Dough: In the bowl of a mixer, whisk together the flour, sugar, yeast and salt. In another bowl, combine the warm milk and 6 tablespoons of melted butter.
    3. Knead: Using the dough hook attachment on low, slowly add the liquid to the dry ingredients. Knead the dough for 8-10 minutes, until it is smooth and elastic. If the dough is still very sticky and sticks to your fingers, add more flour 1-2 tablespoons at a time.
    4. Rest: Once you have achieved smooth dough, cover the bowl and let it rest for 10-15 minutes.
    5. Divide Dough: Once the dough has rested, turn it out onto a lightly floured surface and divide the dough into four even sections. Divide each section into 6 smaller, even sections so you have a total of 24. If you would like a precise weight, use a kitchen scale to measure your dough’s weight in grams before dividing it. Divide that number by 24 and then weigh 24 individual balls of dough with that weight.

    Shape, Let Rise, and Bake

    1. Shape: Shape each section of dough into a small ball and pinch the dough together at the bottom. Place 10 of the balls around the glass bowl to form the inner ring of the wreath. Use the remaining 14 balls to form the outer ring.
    2. Let Rise: Cover the rolls with a clean kitchen cloth and set in the warm oven to rise until doubled in size, about 45-60 minutes. I find it helpful to use a clean spray bottle to spray the sides and bottom of my oven with water to create steam. This will help accelerate the rising time.
    3. Bake: Remove the rolls from the oven once they have doubled in size and bump the oven temperature up to 375℉. Gently brush the rolls with the remaining melted butter and sprinkle with Italian seasoning. As soon as the oven has reached 375℉, place the rolls back in the oven and bake for 16-18 minutes, until the tops are a deep golden brown.
    4. Cool and Garnish: Let the rolls cool before gently removing the glass bowl from the center. Serve on a large platter and garnish with sprigs of fresh rosemary and a sprinkle of fresh cranberries or pomegranate seeds. If desired, add a bowl of your favorite spread or dip right in the center!

    How to Make Dinner Roll Wreath by Hand

    If you don’t have a stand mixer with a dough hook, you can still make this recipe! And it will take you about the same amount of time. I personally love making bread by hand because it feels like art. Here are some tips to adapt this recipe.

    • Get a Large Bowl: Instead of putting your dough ingredients in the mixer, put them in a large bowl. Use a hand whisk for the first step and then use a wooden spoon when you start adding wet ingredients.
    • Knead on the Counter: You will take the dough out of the bowl to knead it on a lightly floured surface. You will knead for 5-10 minutes. Your hands will help develop the gluten and warm the dough so it will combine quickly. If the dough is still really sticky and unmanageable, knead in 1 tablespoon of flour at a time until it is the right consistency.

    Tips for Making a Dinner Roll Wreath

    Here are some simple tips to make the most out of this recipe!

    • Watch Temperatures: You’ve got to make sure the temperature of your milk isn’t too high when adding it to your yeast mixture. The sweet spot is about 100-110 degrees Fahrenheit. If you add liquids that are too hot, they will kill your yeast and you’ll have to start the whole process over.
    • Moisture Helps Rising Process: To create the best rising environment for your rolls, set the oven to “warm”, or 170℉, and place the covered rolls in the warmed oven. Use a clean spray bottle to spray water on the bottom and sides of the oven, shutting the door quickly to trap in the steam. This will help accelerate the rising process. You may need to check on the rolls sooner than the recipe suggests since it can speed things up significantly. Be sure to remove the rolls from the oven before increasing the temperature for baking.
    • Use Oven-Safe Glass Bowl: Be sure the bowl you use in the center of your rolls is oven safe. If you don’t have an oven-safe bowl, simply remove the bowl after the rolls have risen and bake without one. The center circle may shrink just a little, but it will still maintain a wreath shape!
    • Experiment with Decor: Dress the roll wreath up with fresh herbs, fresh cranberries or pomegranate seeds, or even make a decorative bow out of holiday ribbon! You could also use additional herbs like parsley or thyme.

    Storing Leftovers

    This Dinner Roll Wreath is great for making ahead of time because it stays good for 5 days. For the best tasting rolls on the big day, make them no more than 24 hours ahead of time.

    On the Counter: Cover your rolls with plastic wrap or put them in an airtight container and leave them on your counter. They will stay fresh for up to 5 days. They dry out a little bit every day, so it’s best to eat them fresh!

    Tomato Basil Soup Recipe

    I hope you’re all enjoying the fall weather! Even though I’m a warm weather girl at heart, I can’t resist soup season. Soups are some of my favorite things to make, and I know you’ll love this easy tomato soup recipe! Tomato soup has always been one of my favorites. Basil and a splash of cream take it to the next level of yumminess!

    We are well into fall now, but I can eat tomato soup all year. It’s such a classic! I always keep some fresh basil plants during the warmer months, and this soup is perfect for using it up if you have some. It adds the most amazing flavor and aroma! Really though, this is going to be some of the best soup you make this season. Pair your tomato basil soup with a grilled cheese for dipping and you have a winning combo on your hands.

    All Ingredients Needed

    The great thing about this tomato soup recipe is that is has such a short ingredient list. The one thing you want to make sure you don’t substitute are the San Marzano tomatoes! They give this soup the best flavor ever. Note: If you are looking for exact measurements, they can all be found in the recipe card below.

    • Olive Oil: Used for sautéing your onions in.
    • Butter: Adds rich, delicious flavor!
    • Onion: I love adding chopped onion because it will give your whole pot of soup the best savory taste.
    • Minced Garlic: You can never go wrong with garlic. Add some in for an extra pop of savory flavor and aromatics!
    • Italian Seasoning: Add a dash of Italian seasoning for another layer of flavor.
    • San Marzano Tomatoes: These are a high quality type of canned tomato that will make all the difference in the way your soup tastes!
    • Chicken Broth: Adjusts the consistency of the soup and also adds flavor. For a vegetarian version, use vegetable broth.
    • Heavy Cream: Makes your tomato basil soup extra creamy! You can also add a drizzle on top for a pretty garnish.
    • Fresh Basil: Fresh basil really takes the flavor of this soup to the next level. Because it can be tricky to find in the winter months, you can substitute it with dried basil. See my tips section below for more information and how much to use!
    • Salt & Pepper: Add to taste.

    What are San Marzano Tomatoes?

    San Marzano tomatoes are known as some of the best quality/tasting canned tomatoes available. They’re a variety of plum tomatoes that are grown in the San Marzano region of Italy, and various brands sell them (you should be able to find them fairly easily in most grocery stores).

    How to Make Tomato Basil Soup

    Tomato basil soup is one of my favorite recipes for chilly days because it’s so easy to whip up! It’s such a delicious lunch and especially good served with bread (or a grilled cheese!) for dipping.

    1. Sauté Onions: Add the oil, butter, and onion to a soup pot over medium-high heat. Sauté the onion for 5-7 minutes or until it’s lightly browned.
    2. Add Garlic and Seasonings: Stir in the garlic and Italian seasoning, followed by the tomatoes and chicken broth. 
    3. Cook: Increase the heat to high and bring the soup to a boil. Reduce the heat and simmer for 8 minutes, covered, with the lid slightly ajar. 
    4. Blend and Garnish: Blend the soup (I like to use an immersion blender) until it’s smooth (you may want to let it cool a little bit first). Stir in the cream and basil and season with salt & pepper as needed.

    Tips and Serving Suggestions

    Whether you’re wanting to use dried basil or need some ideas on what to serve your soup with, I’ve got you covered! Here’s how to make your tomato basil soup extra tasty!

    • Can I Use Dried Basil? I recommend fresh for this soup if you can get your hands on it, but the rule is that 2 teaspoons of fresh basil = about 1 teaspoon of dried basil. I’d start with 1 teaspoon, taste the soup, and then add more if necessary.
    • Adjust Flavor: If you find the soup is a little too tart for your liking, add a little bit of sugar (it’s an old trick). Start with ½ teaspoon.
    • Serve With:  You can’t go wrong with some crusty bread (sourdough or French bread are my favorites), or try these Grilled Cheese Pull Aparts! A normal grilled cheese sandwich is delicious as well. Some fresh parmesan cheese grated over top would also taste heavenly.

    How Long Does Homemade Tomato Soup Last?

    Here’s how to store your tomato basil soup so you can enjoy it for a tasty lunch throughout the week! I love it because it’s so easy to heat up and serve.

    • In the Refrigerator: Store in an airtight container for 3-4 days.
    • In the Freezer: Store in a freezer bag for 4-6 months. Thaw overnight in the fridge before reheating.

    It’s no secret I love Mexican food! Especially street food. There’s nothing like a taco truck to absolutely make my day.     What is a Chorizo Taco?

    If this is your first time having a Chorizo taco, you are in for a treat! Chorizo is a spice blend that is put on ground pork and usually made into a sausage. The Spanish version is a cured pork sausage. Mexican Chorizo is usually fresh (uncured), which is what we are making today. The seasoning is made up of warm and flavorful spices like garlic powder, paprika, chili powder, cumin, and oregano.

    This dish is traditionally ground pork, but you can use your favorite ground meat. This recipe is fast and easy which I love! It’s also great for feeding a large group! You can also make this meat and use it in other things like enchiladas or even pasta! It’s full of great flavors that will have everyone wanting it again tomorrow!

    What is in a Mexican Chorizo Taco?

    These delicious Mexican Chorizo Tacos have only a few simple ingredients which makes it the perfect meal for a busy night! This recipe serves about 4 people, but you could double or even triple the recipe for a group. This ground pork is so full of flavor and tacos are always a crowd pleaser. See the recipe card below for exact measurements.

    • Onion: Cooking them first adds flavor to the pan before you even add the meat!
    • Garlic: Garlic is a MUST in this recipe, it actually adds a little sweetness to the dish
    • Ground Pork: Mexican chorizo traditionally uses ground pork. You can use other ground meats too!
    • Chorizo Seasoning: I love making this sesaoning at home. I think homemade seasoning blends have more flavor and are fresher!
    • Corn Tortillas: I really like making these at home too. But any tortilla you like will work, even flour tortillas.
    • Cilantro: I add cilantro on top as a garnish. If you aren’t a fan, you could leave this out if you wanted to!
    • Water: I like to add water when I’m cooking the meat. It adds a little more moisture to keep it from being dry.

    How to Make Chorizo Tacos

    These Mexican Chorizo Tacos are so easy to make, you will have a delicious and flavorful dinner ready in just 15 minutes! They are always a favorite at my house, and it’s so easy to make for a large crowd! The best part (besides the amazing flavor) is that you only need one pan to make this meal. Cleaning up afterward is really fast too!

    1. Cook Veggies: Heat a large skillet over medium-high heat. Add the olive oil and minced onions. Cook for about 3 minutes until onions begin to soften and become a little seethrough. Add the garlic and cook for 30 seconds until you can smell them.
    2. Cook Pork: Add the ground pork and cook for 8-10 minutes. Stir occasionally until the pork is completely cooked.
    3. Season: Add the chorizo mixture and stir to incorporate it into the meat. You will continue to cook the seasonings into the meat for about 3 minutes. Taste and add more seasoning if needed.
    4. Add Water: Add water if the meat dries out too much as it cooks. I like my chorizo on the wetter side, so add water if you like it that way too.
    5. Warm Tortillas: Warm the corn tortillas in a separate hot skillet or over the open flame on a gas stove for about 30 seconds per each side until warmed through with some toasty brown spots.
    6. Assemble: Fill the corn tortillas with the cooked chorizo and add your favorite toppings.
    7. Garnish: Garnish and enjoy with chopped cilantro, chopped onions, or any taco toppings you want!

    Additional Optional Toppings

    Sometimes I just like to keep my Mexican Chorizo Tacos simple. Other times I want to add different flavors on top! If you want to have more toppings for your tacos, here are some that I recommend. Or just use your personal favorite toppings!

    • Cheese: Who doesn’t love cheese on a taco? I would use aged cheddar or a classic Mexican cheese like queso fresco. Some crema on top would be delicious!
    • Fresh Salsa: You can never go wrong with a great pico de gallo! I also love this simple blender salsa recipe that is so fast and easy. If you don’t have time to make a salsa, fresh tomatoes are also really yummy.
    • Other Herbs and Vegetables: Every time I share a recipe with cilantro, I always get asked if you have to use it. Of course not! You can use whatever you like best! Green onions would be perfect. Roasted peppers and avocados would add so much flavor and extra nutrients.

    Storing Leftovers

    Mexican Chorizo Tacos make the perfect leftovers! It can taste even better the next day because the flavors get really mixed together in the perfect way. Here are some tips to help you store your tacos.

    In the Fridge: You can store your taco meat in an airtight container in the fridge and it will stay fresh for up to 5 days. I don’t recommend storing your taco already assembled because the meat will make the tortilla soggy. I like to store my toppings separately from my meat too. This will help keep everything fresh for 5 days.

    Reheating Chorizo Tacos: You can reheat the meat in the microwave. I recommend reheating your tortillas on the stove because this will help them crisp up again and they will taste fresh! Add your toppings cold just like you did the first day.


    • Heat a large skillet over medium-high heat. Add the olive oil and minced onions. Cook for about 3 minutes until onions begin to soften and become translucent. Add the garlic and cook for 30 seconds until fragrant.

    • Add the ground pork and cook for 8-10 minutes, stirring occasionally, until the pork is completely cooked.

    • Add the chorizo seasoning and stir to incorporate it into the meat. Continue to cook the flavor into the meat for about 3 minutes. Taste and add more seasoning if needed.

    • Add water if the meat dries out too much as it cooks. I like my chorizo on the wetter side, so add water to your preference.

    • Warm the corn tortillas in a separate hot skillet or over the open flame on a gas stove for about 30 seconds per each side until warmed through with some toasty brown spots.

    • Fill the corn tortillas with the cooked chorizo and add desired toppings.

    • Garnish and enjoy with chopped cilantro, chopped onions, or any taco toppings you desire!

    Quick and Easy Pesto Pasta

    The Kohler Food and Wine Festival is a four-day extravaganza of food, good wine, and plenty of fun activities. We loved attending the events featuring the celebrity chefs. Fabio Viviani was such a blast to watch and so much fun. He showed us how to make some homemade pasta and an easy pesto. We all got to taste what he had created and it stood out as one of my favorites! I love when you can create something so easy and have it be so fresh and full of flavor. He is an incredible chef and has some amazing recipes in his book. What an experience to be able to meet celebrity chefs!

    The recipe that I am sharing with you today is the creamy pesto pasta that he created. I love it because it is ready in just 10 minutes! It can be used as a simple side or you can easily add some protein in (this shredded chicken is perfect!) to make it the main dish! Either way, you’re going to absolutely LOVE the fresh, nutty, and savory flavor of this homemade pesto. It’s so much better than store-bought!     Ingredients for Pesto Pasta

    Since this recipe has such a simple ingredient list, the key to making the best pesto is to make sure everything is as fresh as possible! This is one of my favorite pasta dishes because I usually have everything needed to make it on hand! All measurements can be found below in the recipe card.

    • Basil Leaves: This gives pesto its signature fresh and aromatic flavor.
    • Garlic: You can never go wrong with garlic! This gets blended with the basil, nuts, and cheese to add the perfect savory flavor to the sauce.
    • Toasted Pine Nuts: Add a soft nutty flavor to the pesto.
    • Parmesan Cheese: If you really want to take your pesto to the next level, try grating your own parmesan! The flavor is unmatched.
    • Extra-Virgin Olive Oil: Olive oil helps everything blend together smoothly. I love adding it because it has the best earthy flavor, too! I would recommend using a high-quality, extra virgin olive oil here because it really adds a great flavor to the dish.
    • Salt and Pepper: Add to taste!
    • Pasta: I used shell pasta to hold in the delicious sauce, but feel free to use your favorite kind here! Penne, ziti, and classic spaghetti are all great choices!

    How to Make Homemade Pesto

    This is such a quick and easy meal to make for your family. Everyone is going to love it! It really doesn’t get any easier than this. Simply blend the ingredients together, season to taste, and toss it with your favorite pasta!

    1. Add Ingredients: In a food processor combine basil, garlic, toasted pine nuts, parmesan cheese, olive oil, and salt and pepper.
    2. Blend: Pulse until desired chunkiness.  Adjust to desired seasonings.  
    3. Combine: Heat pesto in a medium skillet and toss with hot pasta.

    What Can I Serve With Pesto?

    Pesto is usually tossed with pasta, but it’s also a delicious sauce for meat, fish, chicken, and vegetables. Just spread the pesto onto salmon or chicken! If it’s too thick, you can thin it out a bit with olive oil until you reach your desired consistency.

    As easy as pesto is to make, if you keep these simple tips in mind, you can really take it to the next level! If you’re anything like me, you’ll want to make it all the time because it’s so incredibly tasty!

    • Wash Your Basil: Before you add your basil to a food processor or blender, make sure it’s clean and free of any dirt. Be sure to wash your greens in cold water, they’ll wilt if you wash them in warm water.
    • Use Other Nuts: Although pesto is made traditionally with pine nuts, you can substitute these for pecans, pistachios, or walnuts.
    • Swap Out Cheese: You’ll want to use harder cheeses here instead of melty cheeses like mozzarella. If you don’t use parmesan, I suggest trying out shredded asiago or romano.
    • Making Pesto Without Nuts: If you have a nut allergy, you can substitute the pine nuts for sunflower seeds.
    • Make it Vegan: This pesto recipe is great for vegetarian diets, but if you want to make it vegan, simply swap out the parmesan for dairy-free cheese!

    Storing Leftovers

    The best way to store 10-minute pesto pasta is in the refrigerator. Homemade pesto will keep for about a week or so. An unopened bottle of pesto will keep for about 3 weeks and an opened bottle will keep for about two weeks in the fridge.

    • In the Refrigerator: Pesto tossed with cooked pasta will last for 2-3 days in an airtight container. Pesto stored alone in an airtight jar will last for 1 week.
    • In the Freezer: Store leftover pesto in a freezer bag for up to 6 months. Thaw in the fridge overnight before use.

    What is Mexican Chorizo?

    Mexican Chorizo is a flavorful sausage that is traditionally made from ground pork. It is so yummy with a side of dirty rice and fresh pico de gallo. This fresh Mexican Chorizo is flavorful and known for being well seasoned with spices like chili powder, paprika, cumin, and oregano. You don’t have to make this ground pork dish into a chorizo sausage. You can just eat the meat on its own, in a taco, or in enchiladas.

    Mexican Chorizo is different from Spanish Chorizo because Spanish Chorizo is usually cured like salami or pepperoni. You don’t have to cure this Mexican Chorizo. It is just cooked in a pan with all of the seasonings. You will love this recipe because the spices are so unique and really make this dish stand out. I love to make Chorizo because it is so easy and everyone compliments the flavors.

    Ingredients in Homemade Chorizo

    Chorizo is so full of flavor without very many ingredients. I love how simple this meal is because it is so filling and fun to eat. Your family will ask for this dish again and again! Most of the ingredients you will have on hand already. If you have to buy any spices you can add them to your spice cabinet to use again and again. See the recipe card below for exact measurements.

    • Ground Pork: Chorizo translates to spicy pork sausage, so it is the traditional meat to use for this dish. If you want more fat in your chorizo, then you can buy a regular package of ground pork instead of a lean one.
    • Homemade Chorizo Seasoning: This Chorizo Seasoning is a blend of spices like paprika and garlic that gives this dish its traditional flavor.
    • White Vinegar: Vinegar helps the meat to crumble.
    • Olive Oil: You can use your favorite oil. I like using olive oil the best, but vegetable oil or canola oil would work great in this recipe.

    3. Cook Pork: Add the pork mixture to the skillet and saute for 8-10 minutes. Then add water if the meat dries out too much as it cooks. I like my chorizo on the wetter side, so add water to your preference.

    • Use Different Meats: If you don’t like ground pork, you could use ground chicken, ground beef, or ground turkey. You could try all four ground meats to see which one you like best!
    • Try Different Seasonings: Use different chili powders! You can get ancho chili powder or even dried ancho and guajillo chiles and grind the peppers up yourself. This will take the flavor to a whole new level. Then get creative and try different flavors that you think would be delicious!

    This slow cooker chicken tortellini soup is the best of the best! Who doesn’t love a soup that has veggies and cheesy noodles? It’s a fun and easy twist on the classic chicken noodle soup. I especially love this soup because you can make it in the crockpot! That means little to no prep time and lots of flavors. This soup simmers low and slow for 6 hours!

    Not only is it easy to make, and you come home to your house smelling delicious, but you can use frozen tortellini, which then makes the process so much easier! This soup takes very little prep, and the reward of the finished dish is absolutely delicious. Serve it with some rolls and then a yummy salad. Your entire family will love it!

    Ingredients in Chicken Tortellini Soup

    This chicken tortellini soup is comforting at its best! You won’t go wrong with this flavorful, SO DELICIOUS soup that will warm your soul. It is quick and easy to make with all the simple ingredients. Check out the recipe card at the bottom of the post for exact measurements.

    • Chicken Breast: I used boneless, skinless chicken breasts in this recipe.
    • Vegetables: Onions, carrots, and celery make this similar to a classic chicken noodle soup.
    • Garlic Cloves: You can use fresh garlic cloves or minced garlic from your fridge. ½ teaspoon equals about one clove of garlic.
    • Chicken Broth and Water: I used low-sodium chicken broth as the base of this soup.

    1. Add Ingredients: Add all of the ingredients to a slow cooker except for the tortellini.
    2. Cook: Cook on low for 6 hours.
    3. Shred chicken: Remove the cooked chicken from the slow cooker and then shred (or cube) and add back to the slow cooker.
    4. Add Tortellini: With 15 minutes left then you can add the tortellini to the soup.
    5. Season: Season with salt and pepper to taste. Discard bay leaves and then serve immediately with chopped parsley, if desired.

    • Cut Vegetables: It is best to cut the vegetables into larger sizes and all about the same width. This will ensure the vegetables cook throughout during the same time. Then, the larger veggies won’t become mushy while it cooks!
    • Fresh is Best: Fresh tortellini cooks quicker compared to frozen. If you are using frozen tortellini, then add a little more time to cook them longer in the slow cooker.
    • Creamier Broth: Half and half or whipping cream can make this a creamier base broth if you are looking for a creamy broth.
    • Leafy Greens: Looking for a healthier version with leafy greens?! Try adding kale or spinach to the soup.

    Storing Chicken Tortellini Soup

    This recipe is great for busy nights and making ahead or using as a freezer meal. Here are the instructions on how you can store this soup or make this ahead of time!

    • Can You Make Chicken Tortellini Soup Ahead of Time? Yes, this is a great soup to make ahead of time. Simply follow the instructions and leave out the tortellini. Once it is cooked and cooled, place the chicken tortellini soup into a ziplock bag or airtight container. Store in the refrigerator for 4 to 5 days long. When you are ready to warm up, add the tortellini pasta once the soup is warmed through.
    • Prepare Vegetables Ahead of Time: Trying to get a head start on this soup. Simply chop your vegetables the night before. When ready to make, add it all to the slow cooker to cook.
    • Can you Freeze Chicken Tortellini Soup? Yes! Once your soup has completely cooled, either leave out the tortellini or remove the tortellini before placing them in a ziplock bag. Place in the freezer, laying flat for up to one month. When ready to eat then simply place in the refrigerator overnight until it is thawed.
    • How to Reheat Chicken Tortellini Soup: When ready to warm up, place back into the slow cooker or a large pot over the stovetop. Warm up slowly, stirring occasionally. Once the Chicken Tortellini Soup is warmed up, add in the tortellini pasta. Cook until tender and everything is warmed through.
