    Thanksgiving is just around the corner. Do you have your menu planned out yet? Put this Cranberry Cheesecake Fluff on the menu. It is a MUST! So easy and delicious. It has a creamy, tangy flavor that’s a perfect contrast to all of your savory Thanksgiving dishes.

    I decided to add a little twist to normal fluff. Adding some cream cheese to help thicken it up and give it the cheesecake flavor took this fluff to a whole different level. It seriously blew my mind! You will LOVE the flavors blended together to make one irresistible cranberry cheesecake fluff recipe!

    Ingredients for Cranberry Cheesecake Fluff

    The best part about this dessert salad is that it is so easy to make. You pulse some fresh cranberries, walnuts, and crushed pineapple together in a food processor. Then you blend cream cheese and heavy whipping cream together, fold in the pulsed cranberry, and voila! A delicious fruity side that everyone will love. Note: measurements are in the recipe card below.

    • Fresh Cranberries: Flavorful, tart and sweet. If you can’t find fresh cranberries, frozen will also work. Just make sure they’re thawed before you use them.
    • Sugar: Just regular white sugar so your fluff has a little extra sweetness.
    • Pineapple: Crushed and canned.
    • Walnuts: Chopped up for some delicious texture in each bite.
    • Marshmallows: Mini marshmallows are a must add to any dessert salad!
    • Cream Cheese: So the texture of the fluff turns out smooth and creamy.
    • Heavy Whipping Cream: The base of the fluff. I recommend chilling your cream beforehand, this will help it whip up more easily.

    Let’s Make Cranberry Fluff Salad!

    I fell in love with this fluff with the first bite. Creamy, cool and absolutely delicious. The flavors together blend so well! Easy to make and always a hit for the holidays.

    1. Blend Ingredients Together: In a food processor or blender, combine cranberries, 1 cup sugar, crushed pineapple, and walnuts. Pulse until coarsely chopped without becoming mushy.
    2. Let Chill: Cover and refrigerate for an hour to let the flavors blend.
    3. Beat the Creams Together: In a medium bowl add the cream cheese 1/2 cup sugar and beat until smooth. Add the heavy whipping cream and continue to beat with the cream cheese until stiff peaks form.
    4. Gently Add in Cranberries and Marshmallows: Fold the cranberries and marshmallows into the salad mixture.
    5. Refrigerate: Cover and refrigerate for at least 3-4 hours or overnight. Then serve and enjoy!

    It’s easy to add a little more or a little less to this cranberry cheesecake fluff recipe. Tweak it so it’s just the way you like it!

    • Fruit: Substitute or add in canned mandarin oranges, frozen cranberries, cherries, blackberries, strawberries, grapes or diced apples.
    • Nuts: Pecans, cashews, or almond slices are great mixed in for some crunch.

    My family always devours this cranberry cheesecake fluff before anything else is touched. The perfect dessert before dessert! Here are a few ways to make sure it turns out perfectly. (Not that it’s hard to mess up. This recipe is foolproof!)

    • To Blend: A food processor works best to mix and chop all the ingredients. A blender will do the same.
    • Make it Lighter: Looking for a lighter version? Skip the heavy cream and try Greek yogurt or vanilla yogurt instead.
    • Pineapple: Fresh or canned pineapple both work great.
    • Add a Topping: Before serving, add cranberries and pecans over top of the cranberry cheesecake fluff.
    • Personal Servings: It’s fun for the holidays to serve these in mini trifle jars or small bowls to make it extra special.

    Storing Leftovers

    Cranberry cheesecake fluff is best served chilled and right away. Once you blend and combine all the ingredients together, let it rest in the refrigerator until you are ready to serve. If you have any leftovers, it’s best to put them back in the fridge as soon as possible so your salad retains its delicious texture.

    • In the Refrigerator: Place in an airtight container or wrap with plastic wrap tightly. It will stay good in the fridge for 24 to 48 hours.
    • Can You Make Cranberry Cheesecake Fluff Ahead of Time? Yes! Place in the refrigerator for 1 to 2 days before serving. When ready to serve, simply add it to your Thanksgiving table.
    • Can I Freeze Cranberry Cheesecake Fluff? I wouldn’t recommend it. Unfortunately, this is not a great side dish to freeze. Ice crystals sometimes form in the whipped cream and tend to break it down.

    This is the absolute BEST salad to make in advance! It’s even better as it sits. So, follow my tips below for making this salad ahead of time and for storing leftovers…if you have any! This Frito corn salad recipe is best made and chilled ahead of time! Lastly, stir in the corn chips just before serving and add the amount of chips you desire, it’s up to you!

    • In the Refrigerator: Store the leftover salad in an airtight container for up to 2 days.

    This salad has been on my list of things to make for over a year now. I’m honestly shocked that I haven’t made it until now! It’s so delicious, light, and refreshing. When I was at the store just the other day I noticed these apple chips. I know that Panera Bread uses crisp, thin apples in their salad for a delicious and sweet crunch. Buying these apple chips makes prep that much easier and brings you an unforgettable salad in minutes. (Although if you’re up to the challenge, try making your own apple chips at home! I have recipes for making them both in the air fryer and oven.)

    I love everything that is in this Fuji apple chicken salad. Fresh spring greens, crunchy pecans, tomatoes, crispy apple slices… everything comes together in this salad to make it so flavorful and with so many unique and delicious textures. The dressing on top is also incredible. It’s a golden balsamic honey Dijon dressing that makes this salad that much better. No need to stop at Panera when you can recreate this salad at home!     The great thing about this fruit salad is that you can change it up and use any fruit that you would like. Depending on what fruit is in season (so that you can make this all year long) you can try out some grapes, bananas or pineapple. There is no way that you can’t make this salad and not have it be a hit wherever you take it. I devoured the entire bowl, and needless to say, it is fantastic!

Not only is it festive and colorful, but creamy, sweet, and bursting with berry flavor. Really, there’s no wrong time to make this fruit salad. It’s perfect for any summer potluck or barbecue!

    One of the things I love most about this cheesecake salad is that it’s so easy to make. You only need a few simple ingredients like Cool Whip, mini marshmallows, pudding mix, and berries!     1. Cheesecake Mixture: In a large bowl mix together the yogurt and pudding powder. Fold in the whipped topping. Then cover and refrigerate to allow it to set up for about an hour.

    Ways to Customize Your Salad

    Storing Leftovers and Making Ahead

    Easy California Spaghetti Salad

    As the weather begins to change and warm up at this time of year, I find myself looking for recipes with a fresher and lighter feel.  I especially love quick and easy cold pasta salads! This California spaghetti salad only took 15 minutes to make, and it was a hit with my guests.  It is vegan-friendly, so it is great to bring to a potluck.

    This recipe is great to make ahead of time because it tastes better as it sits. It’s coated in a zesty Italian dressing (made from scratch) and all of the ingredients really soak up that flavor. All of the amazing veggies packed inside add so much texture, flavor, and color to the pasta. It is the perfect finishing touch to this pasta salad.

    The Best California Spaghetti Salad Ingredients

    These ingredients are simple and easy, and you probably already have most of them on hand. This recipe is great to make ahead of time so that the flavors can all blend together. Check out the recipe card at the bottom of the post for all of the exact measurements.

    • Spaghetti: Use thin linguine and break it into 1-inch pieces to make it easier to eat.
    • Cherry tomatoes: Chopped them in half to make them more bite-sized.
    • Cucumber: The cucumber gives this salad the fresh taste I love.
    • Bell pepper: I used red, but swap for any color of pepper you prefer. Make this recipe your own!
    • Red onion: If you don’t like biting into the raw onion, marinate them in the dressing first to lessen their strong flavor.
    • Olives: The olives are very salty and delicious!

    Salad Dressing Ingredients

    • Italian salad dressing: Use any Italian dressing you love because you are going to amp it up with all the other seasonings to create your own version of this staple dressing. I love using this homemade version.
    • Parmesan cheese: Grated and combined with the dressing to cover each part of the salad with its great nutty flavor.
    • Sesame seeds: Add a rich, nutty flavor to the dressing.
    • Paprika: Adds great color to this dressing and is the perfect addition to this California spaghetti salad.
    • Celery seed: These little seeds pack all the powerful flavors of celery- earthy, grassy, and slightly bitter- that balance out this dressing.
    • Garlic powder: The extra garlic powder helps the flavor stay strong even when chilled.

    Let’s Make a Pasta Salad!

    This California spaghetti salad comes together in less than 15 minutes, and then all you have to do is let it sit and soak up all of the flavors. Once your noodles are cooked and ready to go, you have to throw everything in and mix it all up!

    1. Cook the pasta: Make according to package directions. Drain and rinse in cold water.
    2. Combine all ingredients: Add cherry tomatoes, zucchini, cucumber, green and red bell pepper, red onion and olives to the pasta in a large bowl.
    3. Make the dressing:  Whisk together Italian salad dressing, Parmesan cheese, sesame seeds, paprika, celery seed, and garlic powder.
    4. Toss the salad in dressing: Pour dressing over the salad and toss until coated. Cover and refrigerate for 3 hours or overnight.

    Tips and Variations

    Here are a few different ways that you can change up this California spaghetti salad and make it unique every time!

    • Vegetables: Get creative with this versatile dish and swap out vegetables. For example, try favorites like broccoli or yellow and orange bell peppers.
    • Pasta: Use other pasta shapes.  Some of my favorites, like Rotini or Farfalle, would work fantastic!
    • Cooling Pasta: This pasta salad is best when it’s fresh out of the fridge. So, keep it cooling until right before serving.
    • Make it Ahead: This is a great make-ahead recipe! It’s even better the next day, so I usually make it the day before and store it in the refrigerator overnight. This really gives all the flavors time to combine and soak into the pasta!
    • Pasta Tip: After draining the salad, dunk the pasta in an ice bath (equal parts water and ice in a large bowl) to shock them.  Then, your noodles will not soak up too much of the dressing and become gummy.

    Storing Leftovers

    This California spaghetti salad tastes just as good (if not better!) the next day! As long as you store it properly, this makes the perfect lunch all week long.

    • In the Refrigerator: Store your salad in an airtight container in your fridge, which should last up to 5 days. Because the noodles soak up all the dressing, I like to keep some additional dressing on hand and add it to the salad just before serving. This makes it taste like you just made it!

    Imagine perfectly cooked potatoes, dressed in a zesty blend of tangy mustard, vibrant vinegar, and luscious olive oil. Now that I’ve got your attention, here is why you need to make this French potato salad for your next potluck. It’s easy to make, easy to take on the go, and a crowd-pleaser! You really can’t go wrong with potato dishes, but especially when they taste this good.

    French potato salad is packed with so much flavor. Each bite is a dream! This isn’t your average bland and mushy potato salad, it has a bright, savory flavor thanks to the minced shallot, Dijon mustard, vinegar, and fresh herbs added to it. Now that I’ve had it this way, I don’t know if I can ever go back to regular potato salad! The tangy, savory flavor of this dish is just too good and pairs well with so many different meat dishes. You’re going to love it.

    Ingredients for the Salad and Dressing

    What makes French potato salad so good is its zesty vinaigrette. As long as you’ve got some Dijon mustard, red wine vinegar, and apple cider vinegar on hand, you can customize the rest of this recipe with what you have at home. All measurements can be found in the recipe card below!

    • Potatoes: Small potatoes are key here. Both yellow and red potatoes will work.
    • Salt: Just a pinch to give the potatoes flavor and help tenderize them!
    • Chopped Green Onions: Gives your salad texture and a pop of savory flavor. You can also use chives if you prefer.
    • Dill: This is one of my favorite herbs to use in the summer! It’s so bright and zesty!
    • Fresh Parsley: Because you can never go wrong with fresh herbs in a potato salad. Other herbs you can use are basil, mint, or rosemary!

    Dressing

    • Olive Oil: Gives the dressing a smooth consistency that coats the potatoes perfectly. Use a high quality olive oil for the best taste!
    • Dijon Mustard: This bold mustard brings a pungent kick to the dressing. Its tangy, zesty flavor is the best!
    • Red Wine Vinegar: Red wine vinegar adds a fruity and acidic kick that balances out the salad’s flavors, making it taste fresh and bright.
    • Apple Cider Vinegar: I know what you’re thinking – another vinegar? But trust me, you’ll want both in this salad. Apple cider vinegar adds a slightly sweet and fruity flavor that complements the tanginess of the Dijon mustard. It also helps to tenderize the potatoes, making them softer and more delicious.
    • Fresh Minced Shallot: These add a subtle onion flavor without overpowering the dish.
    • Seasonings: I used a mix of garlic salt, salt, and pepper, to add a touch of savory goodness to this French potato salad. Feel free to adjust to taste!

    How to Make French Potato Salad

    French potato salad is so simple to make. But with its delicious flavor and gorgeous presentation, everyone will be impressed! This is why it’s one of my go-to potluck recipes. There’s nothing better than a delicious side dish made with minimal effort.

    1. Boil Water: Bring a large pot of water to a boil over high heat on your stove. while the water is heating up, wash and chop your potatoes into quarters. Once the water has come to a boil add in your prepared potatoes and your tablespoon of salt.
    2. Cook Potatoes: Reduce the heat to medium high and cook your potatoes until they are tender, about 10-15 minutes. Test a larger piece of potato by removing it from the water and cutting into it, it should be very tender, but not fall apart. Drain your potatoes and rinse them under cold water to halt the cooking process. Place them in the fridge to cool for at least 30 minutes.
    3. Chop Onions and Herbs: While your cooked potatoes are cooling down, chop your green onion, dill, parsley, and shallot.
    4. Prepare Dressing: In a small bowl add your olive oil, Dijon mustard, red wine vinegar, apple cider vinegar, minced shallot, garlic powder, salt, and pepper. Whisk until well combined.
    5. Combine: Once your potatoes have cooled, add them into a large bowl with your green onion, dill, and parsley. Pour your dressing over everything and toss to coat and evenly distribute all the ingredients.
    6. Serve or Store: You can serve fresh, but I recommend placing the salad back in the fridge for about 30 more minutes to marinate in the dressing and cool evenly before serving. Keep leftover French potato salad in an airtight container in the fridge for up to 5 days.
