    I love anything that has to do with cheesecake. I mean who doesn’t? This is my go to recipe for any get together. It’s a huge hit and people are always asking for the recipe! I love it because it’s so easy to throw together but is the most perfect side. This salad is so creamy and the mixture of strawberries and bananas go together perfectly. Each bite is sweet, creamy heaven!

    Now, I can already hear some of you saying… “that’s not a salad!”. And you’re right! In the traditional cold, chopped vegetable meaning of salad, no, it’s not. But in a creamy fruit salad kind of way… absolutely! Cheesecake salads are usually made with no-bake cheesecake filling/pudding and frozen whipped topping (such as Cool Whip), then folded together with fresh fruit. This version also utilizes some strawberry yogurt to bring even more fruit flavor into the dish!

    Strawberry Cheesecake Salad Ingredients

    You only need 6 simple ingredients to make the best fruit salad. It’s an inexpensive side dish that’s great for feeding a crowd! If you’re looking for measurements, they can all be found below in the recipe card.

    • Whipped Topping: Let this thaw in refrigerator overnight before you use it.
    • Cheesecake Pudding Powder: Pudding mix gives this fruit salad the richness of cheesecake but with a light and fluffy consistency.
    • Strawberry Yogurt: The creaminess of the yogurt mixes perfectly with the pudding and whipped topping to make a soft and sweet filling.
    • Fresh Strawberries: The star of the show! Fresh is best, but you can also use frozen strawberries. Just make sure they’re thawed with any excess liquid drained to keep your salad from turning out watery.
    • Bananas: Slice and wait to add them to the salad until the last minute to keep it as fresh as possible.
    • Mini Marshmallows: Optional, but it’s my kids’ favorite part of this salad!

    Substitutions You Can Use

    To substitute the cool whip and cheesecake pudding powder, use 8 ounces of cream cheese, ½ cup of granulated sugar, and 2 cups of heavy whipping cream.

    How to Make Strawberry Cheesecake Salad

    This strawberry cheesecake salad recipe is foolproof. All you need to do is mix your ingredients together and let your salad chill in the fridge until you’re ready to serve it!

    1. Combine Ingredients: In a large salad bowl, mix together the yogurt, pudding and whipped topping. Put in the fridge and allow to set up for an hour.
    2. Add Sliced Fruit: Add sliced strawberries to the mixture with the marshmallows. Add in the bananas right before serving. Keep refrigerated.

    How to Keep Fruit Salad Fresh

    • Keep Fruit Dry: Any water that is present will cause the produce to soften faster. Keep air off of it and dry your fruit after you wash it. Save problem produce like bananas for the end and add right before serving.
    • Store Fruit Separately: When making this recipe ahead of time, prepare the cheesecake mixture and refrigerate in a bowl.  Separately, mix all the fruit in a large bowl and refrigerate. Then, before serving, drain any excess liquid from the fruit.  Finally, fold the cheesecake filling into the fruit and its ready to be served and enjoyed!

    Here are a few simple ways to make your strawberry cheesecake salad turn out even better! One more tip… you may want to double this recipe. Every time I bring it to a potluck, it’s gone in a snap!

    • Use an Egg Slicer: Slice strawberries with a sturdy egg slicer for even pieces.
    • Wait to Add Fruit: Add the fruit just before serving so it doesn’t get mushy or discolored.
    • Use Sour Cream: For extra tanginess, use some sour cream in place of some of the yogurt.
    • Adjust Consistency: The amount of strawberries used will depend on how much fruit-to-fluff that you want.
    • Add Other Fruits: You can add any fruit you want to this incredibly versatile salad! Some great choices are pineapple, mango, mandarin oranges, grapes, kiwis, raspberries, blackberries, or melon slices.

    Storing Leftovers

    It’s best to serve this fruit salad fresh, but you can also keep it in an airtight container in the fridge for 3-4 days. If you plan on making it ahead, store the cheesecake pudding and fruit separately and combine just before serving.

    Ingredients

    • 8 ounces whipped topping, thawed
    • 1 small package cheesecake pudding powder 3.4 ounce
    • 2 cups strawberry yogurt (About 3 (6 ounce) yogurt containers)
    • 1 lb fresh strawberries, sliced
    • 2 cups miniature marshmallows
    • 3 bananas sliced

    Optional Substitute for whipped topping and cheesecake powder:

    • 1 8 ounce cream cheese softened
    • 1/2 cup sugar
    • 2 cups heavy whipping cream

    Instructions

    • In a large bowl mix together the yogurt and pudding powder. Fold in the whipped topping. Cover and refrigerate to allow it to set up for about an hour.
    • Add the sliced strawberries, marshmallows, and bananas right before serving. Keep refrigerated.

    If using the cool whip and cheesecake pudding powder substitute:

    • In a large bowl beat together cream cheese, sugar, and heavy whipping cream until it is creamy and stiff peaks form. Fold in the strawberry yogurt, strawberries, marshmallows and bananas.

    Trust me when I say this is the best pasta salad ever!  My son and his friends ate the entire thing in 5 minutes and agreed that it was the best pasta salad that they have had.  I wasn’t surprised, because these flavors together are so amazing. The combination of the bacon, pasta, veggies, and ranch flavor is to die for!

    The crisp bacon and veggies are so nice in contrast to the al dente pasta.  The creamy ranch sauce coats every groove of this salad, leaving no bite without its delicious flavor!  And, as if it couldn’t get any better, the cheese and olives bring their sharp and unmistakable tastes to this vibrant meal.  This is the only pasta salad I will take to potlucks from now on!

    Easy Bacon Ranch Pasta Salad Ingredients

    This recipe is not only easy but it’s delicious. Even my kids will eat this because of the creamy ranch dressing. I finally found an easy way for them to get in their veggies!

    • Fusilli Tri-Color Pasta: I love using this colorful pasta to bring even more visual interest to this dish.
    • Bacon: The bacon adds a crunch and a savory element.
    • Roma Tomatoes: I love biting into the tomatoes for a burst of sweet flavor!
    • Broccoli: Adds crisp and fresh earthy flavor
    • Sliced Olives: Adds pieces of salty, smooth richness.
    • Cheddar Cheese: I use shredded cheddar cheese. If you shred it straight from the block, the cheese will have a stronger flavor.
    • Mayonnaise: Mix together with ranch seasoning to make a creamy sauce to coat the veggies and pasta.
    • Dry Ranch Seasoning: Combines with mayonnaise to add the classic ranch flavor.

    What I love most about this pasta salad is its versatility! If you are short on time or are out of an ingredient, this salad can easily be adapted to fit your needs and still taste amazing! Here are some recommendations of swaps and additions I have loved.

    • Add a protein: To make this a complete meal, add some proteins like shrimp or cubed deli ham or turkey.
    • Veggies: Add anything you love, like peas, red onion, or peppers.
    • Shortcuts: If you are in need of some corner-cutting, try grabbing these items from the store: shredded cheese, ranch dressing, or pre-cut veggies instead of preparing them yourself.
    • Allergies: If you have certain dietary restrictions, this recipe works great with gluten-free noodles or zucchini noodles.
    • Cheese: If you are cheese obsessed like me, use a larger cheese cut like a crumble or cubed cheese instead of shredded.  This will give more of the cheese flavor than a thinner shredded version.

    How to Store Leftover Pasta Salad

    If you are taking this to a BBQ or potluck of any kind you will want to double or triple this recipe. Luckily, this recipe is great to make beforehand so that it can be ready to go whenever. Here are a few tips on how you can store any leftover pasta salad:

    • In the Refrigerator: Once you have assembled all of the ingredients, store them in an airtight container in your fridge. They will last about 4-5 days. The sauce will get absorbed into the noodles, so I would add a little extra to them just before serving to make it taste completely fresh. Note: If you’re using Gluten free noodles, they do not last as long in the refrigerator.

I wanted to round up some of my very favorite salad recipes for you to try- it’s fun to switch things up! Especially when you’re trying to eat clean. I made sure to include all different kinds of salads so that no matter what you are in the mood for, you will definitely find something that you love! Whether it’s a fruit salad, a pasta salad, or a green salad, you really can’t go wrong! Spring salads are not only tasty and delicious but they are gorgeous too. Full of amazing color and flavor, they’re sure to be a hit at any meal or potluck!

    Salad Tips and Tricks

    I love that I can have a spring salad all on its own or I can add it to my meal. Here are a few tips for making the most of your salad and keeping the ingredients fresh and delicious!

    • Chopping: The fruits and some vegetables can brown and even lose their flavoring once sliced and added into the salad. Because of this, make sure that you don’t cut things up too much before serving time! If you’re making a salad ahead of time, add a squeeze of lemon juice to it. This will slow down the oxidization process.
    • Mixing: You want to be sure to add the dressing to the spring salad at the last minute. In a green salad, dressing can cause it to go soggy if the dressing is on it for too long. In a pasta salad, the pasta absorbs the dressing and you ill need to add more if you put it on too soon.
    • Substituting: The great thing about spring salads is how versatile you can make them. If you don’t have some of the fruits and veggies that the recipe calls for, see what you have in your fridge or your garden! You can add and take away the ingredients that you prefer and really make it a salad just for you that you absolutely love!
    • Salad Mixing Bowl: When you are mixing your salad, don’t underestimate that they get big and fast! Make sure you mix it in a large bowl! This way, you can avoid a mess of salad spilling over. When you use a large mixing bowl, none of your ingredients are left at the bottom, unmixed and without any dressing!! You can always transfer it to a smaller serving bowl later.

    • Making it Ahead of Time: Prepare and add all the ingredients together and toss in a bowl. Make the dressing and store it separately. Keep both in airtight containers in the refrigerator and mix the salad and the dressing just before serving.
    • The Dressing: The dressing can be made ahead of time and stored in an airtight container. Store in the refrigerator up to 5 days.
    • In the Refrigerator: Spring salads are best stored in the refrigerator in an airtight container. Once the salad is already tossed together with the dressing it will last in the refrigerator 24 hours. Keeping the dressing separate will help the salad last 2 to 3 days longer, however, it is still best fresh.

    Greek Orzo Pasta Salad

    This orzo pasta salad is made with NO MAYO! Don’t get me wrong, I love pasta salads with a rich mayo dressing, but sometimes they aren’t the best if you have to transport them or have them outside during a hot day. This pasta salad is perfect for hot summer days because it won’t go bad if it sits out for a little. It is best chilled, but it won’t get bad quickly either! It is a win-win for everyone at your next get-together. I will warn you though, this orzo pasta salad will not last long and everyone will be asking you for the recipe.

    This salad makes a great side dish for just about any protein! It’s amazing served next to some grilled honey balsamic chicken or along with a juicy grilled burger. It gets those veggies in (that everyone will gobble up) and it’s full of fresh flavor to break up your meal. It really is my favorite salad right now (sorry cucumber tomato salad, you’re still my close second!). You’ve got to try it, you’ll be hooked too!

    Ingredients

    This orzo pasta salad is packed with veggies and has a hint of lemon to break things up. The best thing about this salad is that you can really switch up the veggies however you like! Pretty much anything goes in this one. Other veggie ideas include red onion, cherry tomatoes, kalamata olives and cucumber. You can find the measurements below in the recipe card.

    • Orzo: Make this according to the package directions.
    • Lemon Zest: Adds an intense amount of flavor with no bitterness.
    • Lemon Juice: the citric acid adds a fresh zing.
    • Olive Oil: Best for harmonizing, enhancing, and building the flavors together, plus it adds to the body and depth.
    • Salt: A dash of extra flavor.
    • Garlic: Mince garlic is best for that intense flavor compared to garlic powder.
    • Honey: This will be an added sweetener with layers of flavor.
    • Corn: Fresh or frozen will work for this pasta salad.
    • Red Bell Pepper: Chopped bell pepper adds a sweet and crunchy flavor.
    • Zucchini: Subtle and not overpowering that adds just the right amount of taste.
    • Salt and Pepper: For added flavor.
    • Mozzarella: Cut into chunks and add to the salad for a soft, moist texture that is full of a milky flavor. You could use crumbled feta instead.
    • Basil: Associated with a strong, pungent, and sweet smell that tastes a little like pepper. Any fresh herbs like fresh basil or parsley are yummy!

    Orzo Pasta Salad Recipe

    This orzo pasta salad is perfect for any occasion. It’s light and refreshing, and super simple to make! You will cook the veggies for 20ish minutes, but if you want to take a shortcut and toss them in the air fryer (air fryer veggies), I won’t tell! In fact, sprinkle some air fryer mushrooms in there too, you won’t be disappointed! This recipe is straightforward and simple, but I share some tips below as well.

    1. Prep: Preheat the oven to 400 degrees F.
    2. Cook Orzo: Cook orzo according to package directions. Drain and rinse with cold water; drain and place in a large bowl.
    3. Make Dressing: While orzo cooks, combine lemon zest, lemon juice, olive oil, salt, pepper, garlic, and honey. Whisk until well combined.
    4. Prep Veggies: Toss the corn, chopped red pepper, & chopped broccoli with olive oil and salt and pepper on a tray.
    5. Cook Veggies: Cook for 20-25 minutes, flipping every 7-8 minutes in the preheated oven. (Cook until crisp tender)
    6. Cool: Remove and allow to cool.
    7. Put It All Together: Toss completely cooled vegetables, completely cooled pasta, cubed mozzarella, and ribboned basil with the dressing and chill in the fridge until ready to enjoy.
    8. Enjoy: Add salt and pepper to taste and enjoy!

    Tips for Making Orzo Salad

    This simple orzo pasta salad is my go-to for so many reasons. It’s filling, flavorful, and different! Here are a few tips to make sure you get the most out of this recipe.

    • Cooling Orzo: You will want to cool your orzo completely to prevent it from clumping together. Running it under cold water in a colander will quickly help the salad cool. I actually prefer the salad chilled, so you will want to plan ahead of time so that this can sit in the fridge for 4-6 hours first.
    • Try New Cheese: If you prefer to use a different cheese other than mozzarella, try goat cheese or feta substitute. I love it both ways! When I’m in a rush, I will actually cut up string cheese, so trust me when I say I’ve tried it all and loved it every way!
    • Make It a Meal: Adding some grilled chicken on top, or even some shrimp can make this salad a full meal! It’s got everything you need to fill you up. You can add nuts like cashews too for extra texture and nutrients. When I am making this salad, I often just use what I have on hand to try and use up all of the food in my fridge, and you can do the same!

    Today I am sharing with you my favorite salad in the whole entire world. (No exaggeration!) I know that’s saying a lot! This is my go-to salad for any gathering and is requested every time! The fresh strawberries and avocado help to make this salad delicious. But it is the creamy poppyseed dressing on the top that is to die for! Every bite is a dream.

    I love that strawberries are starting to come into season. This makes the salad even better! Everything in this salad looks so good, I could hardly cut the avocado and strawberries fast enough before I ate them one by one. Then add this tasty dressing into the mix. This poppyseed dressing is hands-down one of the best out there. It gives the salad such an amazing creamy and sweet flavor. You have to experience the amazingness of this salad for yourself!     Ingredients for the Salad and Dressing

    This strawberry avocado spinach salad is best served fresh and after being tossed together. Add all the ingredients together in one bowl and prepare to be amazed! This salad has a crunchy, soft fruity texture with an amazing poppyseed dressing drizzled overtop. It’s the perfect light and refreshing lunch and so delicious!

    • Baby Spinach: I like to wash and prepare my spinach before tossing it all together. You can also use baby kale if you prefer!
    • Strawberries: Cut in half or into slices. I love using my strawberry slicer. It makes preparing fruit salads so easy!
    • Avocados: I love adding avocados to my salads because they’re so creamy and delicious!
    • Almonds: Buy them already sliced or chopped up for easy prep. You could also use chopped walnuts or pecans if you wanted!
    • Feta Cheese: Crumble the cheese over the salad to add a delicious touch of tangy flavor.

    For the Dressing:

    • Mayonnaise: Acts as a creamy base for the dressing.
    • Milk: 2% or whole milk is best. It adds a smooth and rich texture to the dressing.
    • Sugar: For a hint of sweetness!

    To make your poppyseed dressing dairy-free, use vegan mayo or Vegenaise, then your favorite nut milk or oat milk. You’ll also want to swap out the feta crumbles in the salad for a dairy-free version.

    Usually this strawberry avocado spinach salad is gone within minutes of serving it. It’s my most popular salad for good reason! Here’s how to store it and keep it fresh so you can enjoy it later.

    • Making Ahead: Prepare and add all the ingredients together in a bowl or even separate bowls until ready to toss together. Place in the refrigerator and mix together within a few hours of preparing.
    • Storing the Dressing: The poppyseed dressing can be made ahead of time and stored in an airtight container. Keep in the refrigerator up to 5 days.
    • Refrigerating: This salad is best stored in the refrigerator in an airtight container. If the salad is already tossed together with the dressing it will last in the refrigerator for up to 24 hours. Keeping the dressing separate will help the salad last 2 to 3 days however, it is still best served fresh.

    Pro Tip: Add a Squeeze of Lemon

    Before you refrigerate any leftover salad, add a squeeze of lemon juice! It will keep the avocado and strawberries from oxidizing as quickly. When sliced, avocados turn brown because of an enzyme called polyphenol oxidase. The ascorbic acid in citrus helps to slow down this process.

    Get ready for this Pineapple Fluff to become your most requested recipe for potlucks! Similar to orange fluff, it’s a delicious blend of pineapple chunks, coconut cream, marshmallows, and coconut flakes. It’s seriously addicting and so easy to make!

    I love a good “salad” that satisfies my sweet tooth. They are kind of like a fruit salad but even sweeter! They always hit the spot and are perfect for pot lucks and parties. A few of my favorite recipes are Very Berry Cheesecake Salad, this Oreo Fluff Dessert Salad, and this amazing Strawberry Cheesecake Salad.

    Pineapple Fluff Salad

    If you have ever tried an orange creamsicle salad, this pineapple fluff salad is a lot like that! It’s loaded with bright and bold flavors, covered in layers of fluff like marshmallows, vanilla pudding, and whipped cream. There is definitely more fluff than fruit, so I definitely wouldn’t call this a “fruit salad”. I love dessert salads because they are a quick and easy dish that everyone loves!

    One of my favorite salad’s to bring to a potluck is my ambrosia salad. Sometimes I’ll switch it up and bring a frog eye salad, but honestly the name is a little unappealing to people (even though it’s amazingly delicious!). This pineapple fluff salad is the perfect treat to share with friends and family. You don’t have to cook anything, and it’s a tempting dessert that has you coming back for seconds. It’s really light in your stomach too so it’s perfect to eat after a bbq dinner.

    Ingredients

    Pineapple fluff is full of tropical flavors and is such a refreshing side dish or dessert! You can add a lot more ingredients than what I have listed here. I often add mandarin oranges and pretzels for a little extra flavor and texture. You can use fresh pineapple instead of canned if you prefer. There are so many ways to make this dish, but I love this method because you don’t have to heat up your oven, and you don’t have to worry about cooking anything on the stove. I use instant vanilla pudding which makes this recipe so quick and easy. You can find the measurements below in the recipe card.

    • Vanilla Pudding Mix: This makes a really nice creamy almost coconut cream pie like flavor.
    • Cream of Coconut: This mixes with the pudding for maximum flavor.
    • Crushed Pineapple: You want all the pineapple juice too, so don’t drain the can.
    • Whipped Topping: You can use cool whip or make your own fresh homemade whipped cream.
    • Mini Marshmallows: I love mini marshmallows in this salad, that’s part of what gives it the “fluff”.
    • Shredded Coconut: I like to use sweetened shredded coconut.
    • Macadamia Nuts: These nuts are so creamy and buttery, they taste amazing mixed in.
    • Maraschino Cherries: This is optional, but I think they add a lovely pop of flavor!

I make it all the time for potlucks and I always come home with an empty dish. This is such a simple recipe, I think you are going to love it!

    1. Mix and Chill: In a large bowl add the pudding mix, cream of coconut, and crushed pineapple. Then stir until combined. Then cover and chill for 30-40 minutes.
    2. Fold in Cream and Nuts: Fold the whipped topping into the chilled pineapple mixture. Fold in the marshmallows, shredded coconut, macadamia nuts and cherries, if desired.
    3. Chill: Chill until ready to serve.

    Pineapple fluff is an instant hit! It’s everyone’s favorite and is great served as a side or dessert. Here are a few tips for making this dish.

    • Use Different Nuts: Macadamia nuts can be pricy. If you want to use a different nut, I recommend pecans or walnuts. You can toast them or even caramelize them for more flavor and texture. You could also use slivered almonds.
    • Add Rum Extract: If you want your pineapple fluff salad to taste a little more like a piña colada, I recommend adding a little bit of rum extract! You can add it in when you are mixing the pudding and cream of coconut.
    • Adding Cream Cheese: I absolutely love cream cheese. I think it goes great in almost every dessert, and it’s amazing in this one! You can add as much cream cheese as you want along with the pudding when you are making this dish.

    This easy salad will be the star of the dinner table! It’s so light and fresh, and the variety of colored veggies give it the best presentation. It also only takes 10 minutes to make, so it’s the perfect side dish for when you’re short on time.

    1. Marinate Beets: Slice the roasted and cooled beets. Then add them to a bowl along with about 3 tablespoons of dressing. Stir to coat and then allow them to marinate for a few minutes while you prepare the rest of the salad.

    • Use Canned Beets: Alternatively, you can use canned beets that have already been roasted. Make sure they aren’t pickled because you will marinate the beets in the balsamic dressing.
    • Extra Flavor: Marinate the red onion in the dressing as well if you desire.
    • Other Dressings and Vinaigrettes: If balsamic vinaigrette isn’t for you, you can also use things like creamy poppyseed dressing, Green Goddess dressing, or honey mustard dressing for a kick of tangy flavor.     Ingredients

    • 5 ounces baby arugula or Spring mix
    • 4-5 roasted beets
    • 1/4 cup goat cheese, crumbled

    • 1/3 cup pecans, candied or raw

    Peas. You either love them or hate them right? I love peas. One of the only veggies I actually like to eat. Even if you don’t like peas, this creamy pea salad is a potluck staple. I have been making some classics here on the blog lately. Ones that I have grown up with and are always at a potluck or family gathering (like this cheesecake salad and this bacon ranch potato salad). This creamy pea salad is one of them. It is a southern favorite and really popular. And filled with bacon, it makes it even better!

    I love this pea salad because it is so simple to make. I am usually in a hurry to make something quick for a barbeque and that is why I love to make this dish. You just have to add in some thawed peas, bacon, cubed cheese, and red onion and toss it in a creamy mixture. It is ready to go out the door in no time at all.

    Ingredients

    The basic ingredients in this best ever creamy pea salad are what makes this recipe one I make all the time. It’s so simple to throw together and it’s always a hit. I don’t have this on the list, but you can definitely add some freshly cracked black pepper over the top. I usually do! You can find the measurements below in the recipe card.

    • Peas: I like to use frozen because that is the most convenient. Let them thaw before using.
    • Red Onion: Because you won’t be cooking the onion, it’s a good idea to use purple onion. They are mild and crisp.
    • Cheddar Cheese: Buy a block of cheese and cut it into cubes.
    • Bacon: This is super delicious with the peas. You can leave it out if you want to, or use ham as a substitute. You won’t need to add salt because of the bacon.
    • Parsley: Fresh parsley adds great flavor and color.
    • Sour Cream: This is part of what makes it so creamy and delicious.
    • Mayonnaise: Mix mayo with the sour cream for the perfect taste.
    • Apple Cider Vinegar: This is the ingredient that makes this different from all of the other salad recipes out there. It’s fresh with a little tang that brings the whole salad to life.
    • Sugar: This is to balance out the acid from the vinegar.

    Classic Creamy Pea Salad Recipe

    Creamy pea salad is a simple pot luck staple that you can whip up in just 15 minutes. These are very basic ingredients that come together to make the best pea salad you’ll ever try! You could add some dill and garlic powder to the creamy pea salad dressing ingredients if you wanted to mix things up. Here is how to make this recipe.

    1. Add Ingredients: In a large bowl add the peas, red onion, cheddar cheese, bacon and parsley. 
    2. Whisk Wet Ingredients: In a small bowl whisk together sour cream, mayonnaise, cider vinegar, and sugar.
    3. Toss Together: Pour the creamy mixture in the large bowl over the peas. Toss until the peas are fully coated. Chill for 30 minutes before serving.

    There are definitely more ways than one to make this delicious creamy pea salad recipe. I don’t even make it exactly as the recipe is written every single time. If you are short on ingredients or want to switch up the flavors, here are some ways that I’ve made this recipe and loved it.

    • Frozen Peas: You can definitely eat them raw. A lot of people wonder if it’s safe to eat frozen peas without cooking them. The answer is yes! Just like you can put frozen strawberries in your smoothie, frozen peas are totally safe to eat raw.
    • Shredded Cheese: If you would rather shredded cheese in your green pea salad than cubed cheese, go for it! It is just as good with shredded cheese, and if you buy pre-shredded it cuts down on your prep time. I prefer the texture of the bigger chunks of cheese but it’s totally up to you.
    • Substitutions: You could substitute the sour cream for greek yogurt. It actually tastes amazing that way and it stays just as creamy and flavorful. You could also add ranch dressing instead of the mayo if you wanted.

    Storing Leftovers

    This creamy pea salad makes great leftovers. It holds up really well in the refrigerator and is great eaten cold or at room temperature. Here is how to store leftovers.

    Green Goddess Salad Recipe

    Green Goddess dressing is one of my all-time favorite salad dressings. If you haven’t already tried it, you really need to. It will change your life! (Quick description: it’s made from Greek yogurt, chives, lemon, and other tasty herbs so it’s ultra creamy and flavorful.) I decided to pair it with some of my favorite greens to being you this scrumptious recipe today. It’s so good!!

    I know this Green Goddess salad may look simple, but trust me, it’s anything but! This salad is made with lettuce, arugula, and spinach, so you have the perfect mix of buttery and crisp veggies. I also added sliced cucumber and broccoli for some extra yummy texture. Toss it all in a creamy, zesty dressing and you have a winner! This vegetarian-friendly salad is one you’re going to want to throw together all the time. Even the carnivores in your family won’t be able to resist its tasty flavor. It’s so creamy, buttery, crunchy, and flavorful!

    What You’ll Need to Make It

    The beauty of homemade salads is that you can customize it however you like. Have leftover veggies in the fridge? Use ’em! See something you don’t like on this list? Feel free to omit it!

    • Butter Lettuce: For mild flavor and crunch.
    • Arugula: Adds a fresh, minty flavor to this mix of greens.
    • Baby Spinach: I LOVE baby spinach because it has the best soft texture! You can also use baby kale as a substitute if you prefer.
    • Diced Cucumbers: For a bit of added crunch.

    • Green Onions: I love adding chopped green onions for an extra pop of flavor. You can also use chives instead.

    It’s so simple! Simply toss everything together with the best dressing ever! Green Goddess salad is a great standalone lunch but also works as a side dish to serve alongside your favorite meals. The combo of fresh veggies and creamy dressing is too good to resist!

    1. Toss Veggies: In a large bowl add in your lettuce, arugula, spinach, cucumbers, broccoli, and green onions, then toss to mix.
    2. Add Green Goddess Dressing: Pour your green goddess dressing, or any dressing of your choice over the top, then tossing again to evenly distribute the dressing. Then add salt and pepper to taste.

    Tips and Variations

    This Green Goddess salad is super straightforward to make, but here are a couple of extra tips! This salad recipe has quickly become one of my favorites, and I know you will love it just as much!

    • Don’t Skip the Dressing: This salad can be customized in almost any way you would like, usually what makes a green goddess salad is the fact that it is a salad with the green goddess dressing. This is my variation but you can add or remove any of the ingredients, sticking with green-colored ingredients to continue the theme!
    • Make it Vegan: The only thing that keeps this recipe from being vegan is the Greek yogurt in the dressing. Swap that out for dairy-free yogurt and you’re gold!
    • Add Protein: To add some protein to this salad, feel free to throw in some shredded chicken. Tofu is another great option to keep it vegetarian! You can also add in things like hard-boiled eggs or grilled chicken breast.

    Storing Leftovers

    If you plan on making this salad ahead of time, I recommend storing the salad and dressing separately so the greens don’t wilt.

    • In the Refrigerator: Enjoy salad fresh or keep refrigerated in an airtight container for up to 2 days. The green goddess dressing can be kept on its own in an airtight container in the fridge for up to a week.

    Salads are so typical in the summer, but if you can find a good salad for the wintertime… I call that a winner! Try out some more delicious winter salads that you will eat all season long!     Pomegranate Salad Recipe

    If you have never tried pomegranates or haven’t been a huge fan until now… you MUST try this salad! It will definitely change your mind. The tangy flavor and the slight crunch are the perfect addition to any recipe. This salad combines that traditional holiday ingredient with some nuts, greens, and a yummy and fresh pear! Even my kids like this salad. And we all know that kids are the best critics of any food.

    The key to getting a delicious salad just right is the ratio of ingredients. You don’t want to have too much of any one ingredient, or it will overwhelm the others. But, on the other hand, having too much plain lettuce just doesn’t make it appealing. What really sets this pomegranate salad recipe apart is the homemade champagne vinaigrette. It adds the perfect creamy texture and flavor to go it.

    Ingredients in a Pomegranate Salad

    A pomegranate salad can have a variety of ingredients. I chose to combine a few simple ingredients that complement each other (the parmesan cheese adds the best flavor!), and I think it makes up the perfect winter salad! Check out the recipe card at the bottom of the post for exact measurements.

    • Spring Lettuce Mix: You can use any salad mix, like baby spinach or arugula, but I like the spring mix because of the textures and colors.
    • Pomegranate Seeds: These add in a burst of flavor!
    • Pear: I love how the pear looks sliced up in this salad, but its delicate texture and subtle taste add a lot to the salad.
    • Candied Pecans: I have also tried walnuts and almonds; they also make a great combination!
    • Parmesan Cheese: Shaved parmesan cheese is a favorite at our house, but feta cheese or goat cheese are some other great ones to try!
    • Champagne Vinaigrette: You have to try making this recipe from scratch (it takes 10 minutes!) with this recipe.

    How to Make a Pomegranate Salad

    Making a salad is simple and easy! This pomegranate salad is no exception. Once you taste this combination of flavors and textures, you won’t be able to stop. After just a few simple steps, you will enjoy this salad on its own or any meal.

    Easy Pomegranate Seeds Tip

    I sometimes think that getting the seeds out of a pomegranate can be more work than it’s worth! BUT… Did you know that at your local grocery store (and every once in a while, Costco!), you can buy a container that is filled with pomegranate seeds? You don’t have to spend any time getting them out of the actual pomegranate at all! When you are in a time crunch and want to make this pomegranate salad, this can save you so much time and effort!

    Make Ahead of Time

    If you want to make this pomegranate salad ahead of time, you can! It’s great to be able to save some time. Just make sure not to add the dressing until just before serving so that the salad doesn’t get soggy.

    • Salad: Toss all of the salad ingredients together and store them in the fridge in an airtight container. It will last about 2-3 days without the dressing.
    • Dressing: You can easily make the salad dressing ahead of time, and it will last about 7-10 days in an airtight container in your refrigerator. Add it to your salad just before serving.
