    Creamy Pea Salad with Bacon is a popular southern dish that is filled with crunchy peas, crispy bacon, chopped red onions, and cheddar cheese. This is an easy to make side dish that is perfect for your next potluck! 

    I am a lover of “salads” of every variety! Fruit salad, pasta salad, actual salad, you name it and I’m here for it. If you are like me, then you are going to love this California Spaghetti Salad, this delicious Ambrosia Salad, and this crowd-pleasing Pistachio Salad.

    Creamy Pea Salad

    Peas. You either love them or hate them right? I love peas. One of the only veggies I actually like to eat. Even if you don’t like peas, this creamy pea salad is a potluck staple. I have been making some classics here on the blog lately. Ones that I have grown up with and are always at a potluck or family gathering (like this cheesecake salad and this bacon ranch potato salad). This creamy pea salad is one of them. It is a southern favorite and really popular. And filled with bacon, it makes it even better!

    I love this pea salad because it is so simple to make. I am usually in a hurry to make something quick for a barbeque and that is why I love to make this dish. You just have to add in some thawed peas, bacon, cubed cheese, and red onion and toss it in a creamy mixture. It is ready to go out the door in no time at all.

    Ingredients

    The basic ingredients in this best ever creamy pea salad are what makes this recipe one I make all the time. It’s so simple to throw together and it’s always a hit. I don’t have this on the list, but you can definitely add some freshly cracked black pepper over the top. I usually do! You can find the measurements below in the recipe card.

    • Peas: I like to use frozen because that is the most convenient. Let them thaw before using.
    • Red Onion: Because you won’t be cooking the onion, it’s a good idea to use purple onion. They are mild and crisp.
    • Cheddar Cheese: Buy a block of cheese and cut it into cubes.
    • Bacon: This is super delicious with the peas. You can leave it out if you want to, or use ham as a substitute. You won’t need to add salt because of the bacon.
    • Parsley: Fresh parsley adds great flavor and color.
    • Sour Cream: This is part of what makes it so creamy and delicious.
    • Mayonnaise: Mix mayo with the sour cream for the perfect taste.
    • Apple Cider Vinegar: This is the ingredient that makes this different from all of the other salad recipes out there. It’s fresh with a little tang that brings the whole salad to life.
    • Sugar: This is to balance out the acid from the vinegar.

    Classic Creamy Pea Salad Recipe

    Creamy pea salad is a simple pot luck staple that you can whip up in just 15 minutes. These are very basic ingredients that come together to make the best pea salad you’ll ever try! You could add some dill and garlic powder to the creamy pea salad dressing ingredients if you wanted to mix things up. Here is how to make this recipe.

    1. Add Ingredients: In a large bowl add the peas, red onion, cheddar cheese, bacon and parsley. 
    2. Whisk Wet Ingredients: In a small bowl whisk together sour cream, mayonnaise, cider vinegar, and sugar.
    3. Toss Together: Pour the creamy mixture in the large bowl over the peas. Toss until the peas are fully coated. Chill for 30 minutes before serving.

    There are definitely more ways than one to make this delicious creamy pea salad recipe. I don’t even make it exactly as the recipe is written every single time. If you are short on ingredients or want to switch up the flavors, here are some ways that I’ve made this recipe and loved it.

    • Frozen Peas: You can definitely eat them raw. A lot of people wonder if it’s safe to eat frozen peas without cooking them. The answer is yes! Just like you can put frozen strawberries in your smoothie, frozen peas are totally safe to eat raw.
    • Shredded Cheese: If you would rather shredded cheese in your green pea salad than cubed cheese, go for it! It is just as good with shredded cheese, and if you buy pre-shredded it cuts down on your prep time. I prefer the texture of the bigger chunks of cheese but it’s totally up to you.
    • Substitutions: You could substitute the sour cream for greek yogurt. It actually tastes amazing that way and it stays just as creamy and flavorful. You could also add ranch dressing instead of the mayo if you wanted.

    Storing Leftovers

    This creamy pea salad makes great leftovers. It holds up really well in the refrigerator and is great eaten cold or at room temperature. Here is how to store leftovers.

    • In the Refrigerator: You can store your leftovers in an airtight container in the fridge for up to 5 days.

    Who doesn’t love soft and silky scrambled eggs? There is something so satisfying about eating well cooked eggs, I just can’t get enough! We eat eggs for breakfast all the time at my house, and I definitely have a few tricks up my sleeve that I share later on in this post. You won’t want to skip them! Once you try this scrambled egg recipe, you’ll definitely want to try these Breakfast Tacos, these amazing Quiche, and these yummy and Easy Egg Muffins.

    Bake Scrambled Eggs

    This is your sign to bake scrambled eggs. Why? Because it’s so simple and they are always cooked perfectly! Not to mention you can be doing other things (like getting the kids up or making the rest of breakfast) while it’s in the oven. It’s the ultimate busy mom hack! This recipe definitely makes enough to feed an army, so if you have a small family or are cooking for yourself, cut the recipe in half. If you are into meal prepping, this scrambled egg batter can be poured into greased muffin tins and adjust the cooking time. Pop them out and they are ready for your breakfast sandwiches! More about this in the tip box below.

    I am from Utah, so scrambled eggs and fluffy pancakes with a side of baked bacon or sausage was our favorite breakfast. It’s so nostalgic, I love making it for my kids now. Eggs are also full of nutrients that our kid’s growing bodies need, so it’s all around a great way to start the day. They are filling and can be flavored in so many different ways, even picky eaters will love them!

    Ingredients

    It’s just this simple to make good baked scrambled eggs. Just grab your eggs, milk, water, salt and butter for the perfect combination. I know what you are thinking, water? It’s my secret ingredient! I talk more about that below in the tips box. You can find the measurements below in the recipe card.

    • Eggs: You will need a whole carton of eggs! I know, it’s a lot, but it makes a lot! Cut the recipe in half if you don’t need this many cooked eggs.
    • Milk: This helps to make the scrambled eggs so soft and smooth. You can use almond milk or other plant milk instead. You could use half and half or heavy cream too.
    • Water: This is my secret ingredient to super fluffy eggs. It steams the eggs while they cook, which makes them super fluffy and tasty.
    • Salt: This helps to bring out the flavors of the dish.
    • Unsalted Butter: You will need melted butter. Use plant butter if you are making this dairy free.

    Baked Egg Scramble Recipe

    Oven baked scrambled eggs are super simple to make, and are perfect for brunch or hosting your friends. You just mix your ingredients together in a large bowl, pour the egg mixture into the pan, and bake. It’s that simple!

    1. Prep: Preheat the oven to 350 degrees Fahrenheit. Spray a glass 9X13 baking dish with non-stick cooking spray.
    2. Whisk: Add all of the ingredients to a large bowl and whisk together until well blended.
    3. Add to Pan: Pour egg mixture into a glass baking dish then place in the preheated oven.
    4. Bake: Allow the eggs to bake uncovered for 10 minutes.
    5. Cover and Bake: After 10 minutes, stir the eggs and bake for 12 additional minutes. It will still be liquid at this point but it comes together and cooks perfectly.
    6. Fluff and Enjoy: Fluff and season with salt and pepper if needed. Serve warm!

    Tips for Baking Scrambled Eggs

    Eggs can be so tricky, and everyone likes them cooked a different way. Luckily, these baked scrambled eggs take no professional skills are always the best scrambled eggs I make (say my children). Here are some tips to ensure success with this recipe!

    • Add More Ingredients: You can add so much to this recipe! This is really just the basic idea to get your wheels spinning. You can add shredded cheddar cheese, cooked bacon, or ham! I also love fresh chives and onion powder. You can’t go wrong with mushrooms, bell pepper, tomatoes, or zucchini! Feel free to season this up however you like.
    • Cast Iron Pan: Use a large oven-safe skillet or cast iron pan instead of the 9×13 pan. I really love using my cast iron pan for eggs, I just think they turn out better in it!
    • The Secret Ingredient: Water is the secret to fluffy eggs! I added water to this recipe in addition to the milk and it turned out perfect.
    • Using a Muffin Tin: All of you meal preppers out there are going to love this hack! If you love breakfast sandwiches, then you have to try pouring your batter into a well-oiled muffin tin. Bake for about 10 minutes, then cover and rotate the pan. Come back and check on them in 5-10 minutes, because nothing is worse than an overcooked dry egg. When they are firm in the center they are ready!

    Storing Leftovers

    We all know that eggs definitely taste best fresh out of the oven. This makes a large pan of eggs, so if you do have leftovers, here is how to store them.

    • In the Refrigerator: Store your leftover baked egg scramble in an airtight container in the refrigerator for up to 5 days. Make sure they are all the way cooled off before storing them so you don’t get a lot of condensation on the lid. Reheat slowly.


    • Preheat the oven to 350 degrees Fahrenheit. Spray a glass 9X13 baking dish with non-stick cooking spray.

    • Add all of the ingredients to a large bowl and whisk together until well blended.

    • Pour into a glass baking dish then place in the preheated oven.

    Who said salads had to be boring? They’re some of my favorite things to make, and you can dress them up to have the BEST flavor. A few more of my favorite salad recipes to try: Italian chopped salad, antipasto salad, or this classic wedge salad. This strawberry spinach salad and triple berry kale salad are also great if you’re wanting something fruity!

    Green Goddess Salad Recipe

    Green Goddess dressing is one of my all-time favorite salad dressings. If you haven’t already tried it, you really need to. It will change your life! (Quick description: it’s made from Greek yogurt, chives, lemon, and other tasty herbs so it’s ultra creamy and flavorful.) I decided to pair it with some of my favorite greens to being you this scrumptious recipe today. It’s so good!!

    I know this Green Goddess salad may look simple, but trust me, it’s anything but! This salad is made with lettuce, arugula, and spinach, so you have the perfect mix of buttery and crisp veggies. I also added sliced cucumber and broccoli for some extra yummy texture. Toss it all in a creamy, zesty dressing and you have a winner! This vegetarian-friendly salad is one you’re going to want to throw together all the time. Even the carnivores in your family won’t be able to resist its tasty flavor. It’s so creamy, buttery, crunchy, and flavorful!

    What You’ll Need to Make It

    The beauty of homemade salads is that you can customize it however you like. Have leftover veggies in the fridge? Use ’em! See something you don’t like on this list? Feel free to omit it!

    • Butter Lettuce: For mild flavor and crunch.
    • Arugula: Adds a fresh, minty flavor to this mix of greens.
    • Baby Spinach: I LOVE baby spinach because it has the best soft texture! You can also use baby kale as a substitute if you prefer.
    • Diced Cucumbers: For a bit of added crunch.
    • Broccoli: Adds a fun texture to the Green Goddess salad.
    • Green Onions: I love adding chopped green onions for an extra pop of flavor. You can also use chives instead.

    It’s so simple! Simply toss everything together with the best dressing ever! Green Goddess salad is a great standalone lunch but also works as a side dish to serve alongside your favorite meals. The combo of fresh veggies and creamy dressing is too good to resist!

    1. Toss Veggies: In a large bowl add in your lettuce, arugula, spinach, cucumbers, broccoli, and green onions, then toss to mix.
    2. Add Green Goddess Dressing: Pour your green goddess dressing, or any dressing of your choice over the top, then tossing again to evenly distribute the dressing. Then add salt and pepper to taste.

    Tips and Variations

    This Green Goddess salad is super straightforward to make, but here are a couple of extra tips! This salad recipe has quickly become one of my favorites, and I know you will love it just as much!

    • Don’t Skip the Dressing: This salad can be customized in almost any way you would like, usually what makes a green goddess salad is the fact that it is a salad with the green goddess dressing. This is my variation but you can add or remove any of the ingredients, sticking with green-colored ingredients to continue the theme!
    • Make it Vegan: The only thing that keeps this recipe from being vegan is the Greek yogurt in the dressing. Swap that out for dairy-free yogurt and you’re gold!
    • Add Protein: To add some protein to this salad, feel free to throw in some shredded chicken. Tofu is another great option to keep it vegetarian! You can also add in things like hard-boiled eggs or grilled chicken breast.

    Storing Leftovers

    If you plan on making this salad ahead of time, I recommend storing the salad and dressing separately so the greens don’t wilt.

    • In the Refrigerator: Enjoy salad fresh or keep refrigerated in an airtight container for up to 2 days. The green goddess dressing can be kept on its own in an airtight container in the fridge for up to a week.

    We all have made homemade versions of kids’ favorites; burgers, tacos, and macaroni and cheese. When it comes to homemade pizza though, it can be intimidating. Not anymore! Now you can make homemade pizza and so many other delicious things with this quick and easy dough!

    Quick and Easy Pizza Dough Recipe

    Most doughs require lots of proving and rising time. That means you have to plan ahead. If you’re like me, as much as I try to plan ahead, things don’t always go according to plan. But with this super fast and effortless dough I can have an amazing dinner any time of the week. It’s a dinner lifesaver!

    The rest time is only about 20 minutes for this dough. So within 30 minutes, I can have my pizza (or whatever else I am making) in the oven, ready to go. It’s a great recipe for beginners because it’s so easy! And the taste is fantastic. It really makes the best homemade pizza crust. Try it out with this tasty Hawaiian pizza or chicken alfredo pizza!

    Dough Ingredients

    Just a handful of ingredients make this quick and easy dough! Check out the recipe card below for exact measurements.

    • Warm Water: Make sure it’s not too hot, or it’ll kill the yeast.
    • Sugar: This is food for the yeast, don’t leave it out.
    • Yeast: Gives the dough it’s rise and elasticity.
    • Flour: A good strong flour is necessary for good structure.
    • Salt: Keeps your dough from tasting bland.

    Making Quick and Easy Dough

    It’s so easy! This versatile dough comes together in just 5 simple steps. It’s such a game-changer for homemade pizzas.

    1. Activate Yeast: Combine the water, sugar, and yeast, give it a little stir then let it sit for 5 minutes.
    2. Combine: In a large mixing bowl combine the flour and salt to the yeast mixture. Stir till smooth. You can also use a stand-mixer and dough hook.
    3. Rest: Let the dough rest for 10 minutes. It will rise some.
    4. Prepare: Prepare the dough for whatever you are using it for and let it sit another 10 minutes.
    5. Bake: Bake at 400 degrees Fahrenheit for 15-20 minutes.

    Tips for Homemade Dough

    Here are a few extra ways to perfect your quick pizza dough! Once you get the hang of it, you’ll want to make it all the time!

    • Use Warm Water: You want your water to be 105-115 degrees Fahrenheit when you add it to the yeast for optimum proofing.
    • Sugar: Yeast needs food to grow, sugar is its favorite. You can also use honey without changing the flavor or structure of the dough. Use the same amount of honey as you would sugar.
    • Rest: The first 5 minutes of rest you give the dough acts as its first rise. That’s what makes this so quick and easy. You don’t have to wait for a full rise in bread form, which would take longer.
    • Salt: Salt can kill yeast if added at the same time. Don’t add the salt until after it’s rested and you’ve added in the flour. Salt is needed for flavor and structure.
    • Flour: Do not add too much flour. Add the flour gradually until a soft dough forms and pulls away from the sides of the bowl. The exact flour amount will vary so go by the touch and feel of the dough versus the exact cup measurements. The dough should be soft and smooth. It should not leave a residue on your hands, but should not be super stiff either.
    • Double: This pizza dough recipe is simple to double. You can even make breadsticks with it!
    • Flavor: Feel free to add seasonings to the dough when you add the flour if you desire.

    Making the Best Pizza Crust

    These are a few more things to keep in mind so you end up with the best homemade pizza ever! Your family won’t be able to get enough.

    • Pre-Bake: There is nothing worse than toppings cooked to perfection and a doughy crust. I like to eliminate that from happening by precooking the crust for 5 minutes. Once I add the toppings I continue to cook it on the bottom rack in the oven. This ensures the crust cooks through.
    • Pizza StoneIf you use a preheated pizza stone, then you do not need to pre-bake the pizza dough.
    • Bubbles:  If you notice bubbles forming in your dough while it’s cooking, simply pierce them with a fork. You can also fork it before baking to prevent it from bubbling.
    • Personal Pizzas: This dough is wonderful for making personal-sized pizzas, medium or large pizzas. You can even make mini pizzas in the air fryer! It’s a quick and easy snack for the kids.

    Storing Leftovers

    This quick and easy homemade pizza dough is great for making ahead! My kids love air fryer pizzas so I always keep some on hand.

    • In the Refrigerator: Wrap dough in plastic wrap and store for 4-5 days.
    Can I Freeze My Dough?

    Yes! It’s a great way to make your pizza dough last longer.

    • In the Freezer: Shape dough into a large ball, wrap in plastic wrap and then place in a freezer bag for up to 3 months. Thaw overnight before using.

    Crack Potatoes

    Just like the name says, these crack potatoes are so good you’ll be addicted! It’s an easy, cheesy side dish that the whole family will love. Shredded potatoes covered in a cheesy ranch sauce topped with bacon. What could be better?

    Crack chicken is one of my all-time favorite comfort foods, so I decided to try it out in potato form! This is a tasty and effortless side dish that’s perfect for any occasion. (There’s never a wrong time for cheesy goodness!) This recipe is super simple to follow, requiring only a handful of ingredients and a few minutes of prep. Which is lucky because if your kids are anything like mine, they’re going to be asking for this all the time! It’s too cheesy and delicious to resist.

    The potatoes come out crispy on the outside and fluffy on the inside. They’re packed with flavor from a blend of seasonings and cheese, making them the perfect side dish for any hearty meal!     Ingredients for Crack Potatoes

    With just a few simple ingredients, you can create this delicious, cheesy side dish! Crack potatoes are absolutely delicious and your family will devour them. They’re so irresistible! All measurements can be found in the recipe card below.

    • Cream Cheese: Makes the sauce soft and creamy.
    • Sour Cream: Adds moisture and tangy flavor!
    • Dry Ranch Dressing Mix: Ranch dip mix makes each bite of the potato casserole extra flavorful. You can buy packaged ranch dressing powder or make your own!
    • Onion Powder: For a pop of savory flavor.
    • Salt and Pepper: Season to taste!
    • Cooked Bacon: I always like to use precooked bacon or real bacon bits. It makes prep so easy!
    • Cheddar Cheese: For the best flavor, try grating your own cheddar!
    • Shredded Hash Brown Potatoes: I used shredded hash browns, but feel free to swap these out for cubed potatoes. It’s fun to switch up the texture!

    How to Make Crack Potatoes

    It’s so easy! All you have to do is add all of your ingredients to a casserole dish and pop it in the oven. Crack potatoes is a simple side dish and comfort food at its finest.

    1. Preheat Oven, Prep Pan: Preheat oven to 375 degrees Fahrenheit. Then lightly spray a 9×13-inch baking dish with cooking spray.
    2. Chop Bacon: Chop the cooked bacon and save ¼ cup for the top of the potatoes.
    3. Cheese Mixture: In a large bowl, combine cream cheese, sour cream, 2 cups shredded cheese, cooked chopped bacon, ranch seasoning, onion powder, and salt and pepper. Then mix together until combined. 
    4. Add Potatoes: Stir in the frozen shredded hash brown potatoes and then mix well. Then spoon into the prepared pan. 
    5. Add Cheese and Bake: Sprinkle the shredded cheese on top of the potatoes. Then cover with foil and bake for 40 minutes. Remove the foil then bake for an additional 5 minutes so the cheese is melted and bubbly. 
    6. Add Garnish: Garnish with the ¼ cup reserved chopped bacon, chopped green onions, or chopped parsley if you desire.
    7. Enjoy: Serve warm and enjoy!

    Yes! Before baking, cover your casserole dish with plastic wrap and stick it in the fridge for a day or two. This way, you still get that cheesy, freshly-baked effect, but prep is a breeze! Unbaked crack potatoes can also be kept in the freezer for up to 2 months. Thaw overnight in the fridge before baking.

    What Is Poutine?

    If you are like me, you had to ask what poutine was the first time someone brought it up! I am definitely not from Canada, but I can appreciate this cheesy french fry dish that is loaded with a delicious gravy topping. It is really that simple! And yes, it is every bit as addicting as it sounds. The first time I tried it, I knew I had to make some at home for my kids. They were a huge hit and now it’s something that we have all the time.

    The best part about this recipe is the gravy of course. The gravy is similar to a brown gravy, and it’s even easier to make! It is so flavorful and savory. In fact, it would be amazing over grilled chicken or on top of mashed potatoes too! But back to the poutine. After you smother the fries in the gravy, you top with cheese and enjoy. It really is so good! And who says you can’t switch things up a little and load those fries up with chicken, veggies, and whatever else you like!

    Ingredients

    Simple ingredients make up this poutine recipe. You can make your own fries from scratch, or you can take some frozen fries and pop them in the air fryer. However you decide to make the fries, this dish will be incredible! You can find the exact measurements below in the recipe card.

    • Fries: French fries are the base of the dish! I have some suggestions for how to cook the fries below in the recipe card.
    • Cheese Curds: I like to add cheese curds on top for extra flavor. You could also add shredded cheese instead like mozzarella which melts really well.
    • Butter: Butter adds delicious fat and flavor.
    • All-Purpose Flour: This will help thicken up the gravy.
    • Beef Broth: Beef broth or beef stock add so much extra flavor.
    • Chicken Broth: I like to add both beef and chicken broth or chicken stock because it really makes this taste like traditional poutine.
    • Salt and Pepper: To taste. If you use already salted fries you may want to add less salt here.

    Poutine Recipe

    This authentic poutine recipe is going to be a hit at your next gathering! The beef gravy is so savory and full of flavor, and it really makes the whole thing an unforgettable side dish or appetizer. It’s so easy to whip up too! Poutine gravy is the best thing to make for any party because everyone loves it.

    1. Make Roux: To prepare the gravy, in a medium saucepan over medium heat, melt the butter then add in the flour and whisk until smooth. Cook the flour and butter mixture until it is golden, about 5 minutes.
    2. Add Broth and Whisk: Add in the beef and chicken broths, and salt and pepper, whisking continuously to smoothly incorporate. Continue cooking the gravy on medium low heat until it has thickened to a consistency you like.
    3. Make Fries: Make the fries according to the package and plate them, pour your fresh gravy over the top of the fries and crumble the white cheddar cheese curds on top.
    4. Enjoy: Enjoy fresh or make the gravy ahead of time and keep it refrigerated until you are ready to use it, up to 5 days in an airtight container.

    Tips for Making Poutine

    There are lots of different variations of poutine, and any way you make it it’s delicious! It is a bit of a messy dish, so make sure you have lots of napkins at the ready. Here are some tips for making this dish.

    • Use Different Kinds of Fries: I used a plain salted bag of fries, but I’m sure this recipe would be great with other kinds of fries as well. You could try sweet potato fries, some delicious baked zucchini fries, or any of your favorites! I wonder what it would taste like with jicama fries… now I have to know! You can also slice up potatoes and drop them in a deep fryer for an authentic and super tasty french fry.
    • Cheese Curds: The authentic way to make poutine is by adding cheese curds on the top. I like to use white cheddar cheese curds which you should be able to find at your local grocery store or a specialty cheese store. I found some at my local grocer and Target.
    • Other Toppings: You can really add whatever you want on top of poutine! I like mushrooms and crispy onions. I guess some people add some ketchup, but I think you might want to make sure there aren’t any Canadians in the room! The crispy fries and delicious gravy is enough for them, and it’s enough for me.

    Storing Leftovers

    As you can imagine, fries don’t stay very crispy smothered in gravy! So poutine is definitely best eaten fresh. If you do need to store some, I would store the gravy and fries separately.

    • In the Refrigerator: You can store your leftovers in the refrigerator for up to 5 days. Store the gravy in an airtight container and you can store the fries the same way, or wait until the day of to cook off the fries.

    I needed something light, comforting and manageable for the week and I knew Mushroom Risotto had to be made! It is a dish that can be warmed up quickly and taste good every day. It has simple ingredients and when combined all together adds this comforting and oh-so-good meal that makes your day go even better! This Mushroom Risotto is perfect for making ahead for your busy week or enjoying it right off the stove top.

    I am all about making life simple. With life so busy all the time with the kids activities and endless errands to run, quick and easy meals, like this mushroom risotto and my favorite lemon garlic chicken to go with it are my savior! This is a quick and easy meal that my kids can warm up quick after school or pack along as a lunch.     Ingredients

    Even though this list looks long, the ingredients for mushroom risotto are really simple! Most of them are herbs or things that you already have on hand. This dish is so flavorful and easy to make, I know you are going to love it as much as my family does! The measurements are listed below in the recipe card.

    • Chicken or Vegetable Broth: Either will work, they add flavor and it is what you cook the rice in.
    • Extra-Virgin Olive Oil: Has a nice soft flavor and cooks well.
    • Onion: Finely chopped.
    • Butter: To cook veggies.
    • Garlic Cloves: Minced.
    • Button Mushrooms: It’s a European and North American mushroom with tons of nutrients and packed with flavor.

    Mushroom Risotto Recipe

    This mushroom risotto is a very simple recipe and you are going to love how it turns out! The hardest part is cooking the rice the perfect amount of time so that it isn’t hard, but it doesn’t get mushy. You will be able to tell when it starts to get close, this is a recipe you don’t want to walk away from. It only takes 35 minutes, and you will be so in love with the flavor!

    1. Warm Broth: Start by warming the chicken broth.  Either in a large bowl in the microwave or in a medium saucepan over medium heat bring to a simmer.
    2. Cook Onion and Mushroom: In a large pot heat the olive oil.  Add the onion and cook until tender.  Add 1 tbsp butter, garlic, mushrooms and thyme.  Cook until the mushrooms have softened and are tender.  Then season with salt and pepper.  Remove and set aside on a plate.
    3. Add Rice: Melt the remaining 1 tbsp butter and add the arborio rice.  Stirring on medium heat, cook the grains until the are lightly brown and start to toast about 2 minutes. Then add the wine and cook until the wine has absorbed.  
    4. Add Broth: Add one cup of broth at a time to the rice and stir frequently until the rice absorbs the liquid.  Continue to add one cup of broth and allow the rice to absorb after each addition.  Stir often and cook until the risotto is al dente and not mushy.  You may not need all of the broth.  
    5. Add Veggies: Add the mushrooms, parmesan, and peas back to the rice and stir.  Garnish with fresh parsley.  Serve while warm.

    Tips for Making Mushroom Risotto

    I love how mushroom risotto can taste different in so many ways! The brands you use, the rice you choose, and the wine you decide on are all going to change the flavor of the dish. The best part about cooking is you get to decide how you like it best. Here are some tips for choosing ingredients.

    • Best Rice to Use: The best northern Italian dish, risotto is elegant and simple, but there are a few tricks to getting it right. First, always use Italian short- grain rice like arborio or vialone; nothing else will do as a substitute for best results.
    • Best Wine: Mushroom risotto will make most wines taste delicious, but some will be amazing. In general, it’s especially good with earthier reds, like Pinot Noir or Nebbiolo, or fuller-bodied whites, like lightly oaked Chardonnay or Pinot Gris. It is always best to choose a wine that you enjoy and use that type of wine in the recipe.
    • Leave the Wine Out: Yes! You Can Make Risotto Without Wine. The good news is you can definitely make risotto without wine. White grape juice: Use white grape juice as a substitute when adding sweetness or deglaze the pan. For a punchier substitute, try mixing a tablespoon of vinegar or lemon juice per cup of grape juice. Chicken or vegetable stock: Substitute stock for white wine when you want to add depth of flavor to a dish.
    • Using Red Wine: Some recipes get pretty specific about the kind of wine they want you to use: an oaky chardonnay in this reduction sauce, a hearty Italian red for that braise. All wines will chemically behave in the same way, so there’s no danger that a recipe won’t work if you use a red instead of a white or vice versa.

    Storing Leftovers

    Mushroom risotto makes great leftovers, and is also a great recipe to make ahead of time. It reheats really well and is just as delicious reheated.

    • In the Refrigerator: You can store your leftovers in the refrigerator in an airtight container or in a shallow baking pan covered with foil for up to 4 days.
    • To Reheat: Preheat the oven to 300 degrees. Place risotto in a shallow baking pan covered with foil and let it get warm, but make sure not to let it cook again.

    This Mango Lassi is an Indian yogurt smoothie that is so creamy and full of flavor. It’s spiced with cardamom to give it a little kick, and it will have you coming back for seconds. It will be an instant hit every time you serve it!

    I am in love with smoothies. I especially love to make them in the morning when my stomach isn’t ready for a hearty breakfast. They are full of nutrients and give me energy for my day. I absolutely love this Peach Smoothie, this green Detox Smoothie, and this yummy and unique Avocolada Smoothie.

    Mango Lassi Recipe

    A mango lassi is a yogurt-based drink similar to a smoothie. It is originally from India and you may have seen it on an Indian restaurant’s menu. If you have never tried one before, you are in for a treat! It’s similar to a mango smoothie, but you add yogurt and spices to it. It’s a rich and creamy drink that you will be absolutely hooked on!

    The best thing about Indian food in my opinion is the spices! They absolutely make the most flavorful dishes with so many yummy and flavorful spices that I crave almost weekly. I always order chicken tikka masala when we eat out, or the butter chicken… or both! And to go with it, I ALWAYS get a mango lassi. They are the perfect compliment to any Indian dish or any meal for that matter!

    Ingredients

    A mango lassi has just a few simple ingredients that are similar to a smoothie. You also have a lot of wiggle room to make this recipe exactly the way you want it. If you don’t have certain things on hand you can improvise! I have made a lot of different versions of a lassi with different ingredients and it’s always delicious. You can find the measurements below in the recipe card.

    • Plain Yogurt: Yogurt is part of what makes this a lassi. I used plain whole milk yogurt, but you can use almost any yogurt that you think would go great with mangos. You could also use a low-fat yogurt to cut down on calories.
    • Milk: I like to add milk because it really helps everything cream together. You could use milk alternatives if you are trying to avoid dairy
    • Frozen Mangos: You will use frozen mangoes, that way you don’t have to use any ice cubes and water it down! It makes a super flavorful and creamy texture. You could also use canned mango pulp instead, you should be able to find some in the freezer section.
    • Honey: I like to sweeten this lassi with honey. It has the perfect flavor and helps to make a creamy smoothie. I have used agave instead as a sweetener and it was really delicious.
    • Ground Cardamom: You might not think of cardamom when you think of a smoothie, but trust me on this one. It’s so delicious! It has a little bit of warmth that feels and tastes amazing.

    How To Make a Traditional Mango Lassi

    A mango lassi is just as easy to make as a smoothie or a milkshake! In fact, I’ve even used ice cream instead of yogurt (and left out sweeteners) and made a mango milkshake lassi, and it was incredible. The added spice is really what sets this lassi apart!

    1. Add Ingredients: Add the yogurt, milk, frozen mangoes, honey, and cardamom into a high-powered blender.
    2. Blend: Blend at high speed for about 1 minute until you get a smooth silky texture.
    3. Adjust: If the mango lassi is too thick, add more liquid and blend until you reach the desired thickness. Or if you prefer it thicker, add ice!
    4. Enjoy: Taste and add additional sweetener if it’s too tangy for your liking. Pour into serving glasses and enjoy!

    Tips for Making Mango Lassi

    A mango lassi is super simple to make and a favorite at my house! It’s so easy to whip up too. You will fall in love with all of the amazing lassi flavors you can create! Here are a few tips to take your mango lassi to the next level.

    • Using Fresh Mangos: If you want to use fresh mangoes, you can absolutely do that! Make sure to buy fresh and sweet mangoes for the best flavor lassi. You will peel the mango skin off and cut the mango flesh off the stone. You will need to add ice in order to get a nice thick consistency, just like a smoothie. Start with 1 C of ice and see how thick it is, and add more ice if it is too runny.
    • Types of Yogurt: I used plain yogurt, but you could use greek yogurt. Greek yogurt is thicker and there is a really great honey greek yogurt that would go perfectly. You could also use sweetened yogurts or vanilla yogurt if you like your lassi on the sweet side. I’ve tried it with coconut yogurt, and it was amazing!
    • Adding Flavors and Garnishes: One of the most common additions to a lassi is saffron (Kesar). It goes perfectly with mango and cardamom, so feel free to add it in! Another common one is almonds, you could add about 1 tsp crushed almonds for garnish. Pistachios are also a great garnish. You could also add any other fruit that you think would be yummy!
    • Making A Vegan Mango Lassi: This recipe is a great vegan recipe if you switch out the milk! You could use a plant-based milk like almond milk or coconut milk.

    Storing Leftovers

    Mango lassi is best enjoyed fresh. It tends to melt and taste less fresh the longer it is left in the refrigerator. It won’t go bad right away, but it definitely tastes best right after you make it!

    • In the Refrigerator: You can store your mango lassi for up to two days in the refrigerator. It won’t go bad that quickly, but the fresh fruit will start to turn colors and not taste as good.

If you’re looking for more side dishes to accompany all of your favorite dinners, try this cilantro lime rice, Greek lemon rice, and Mexican rice! They are all super easy to make and so tasty!

    Quick and Easy Yellow Rice Recipe

    Yellow rice is a side dish commonly found in Spanish, Indian, South African, Mediterranean, and Mexican cuisine. Turmeric gives it its signature color! My take on this recipe is inspired by the Spanish and Mexican versions of the dish. It’s savory and flavorful with a touch of turmeric for a hint of bright, peppery spice. The whole family is going to love it. With how easy it is to make, you’ll love it too!

    Cook the basmati rice in chicken broth with butter, onion and garlic powder for the perfect rich and savory flavor. As the yellow rice cooks, it absorbs all of the delicious flavor! It’s soft and buttery and perfect for serving up with some chicken and shrimp! Yellow rice works alongside any entrée, really. It has a really versatile flavor! The options are endless. Use it in lettuce wraps, burrito bowls, alongside pork chops, roasted chicken, you name it! If you’re not already convinced, yellow rice also makes great leftovers. It’s perfect for heating up and reusing!

    What is Yellow Rice Made of?

    This recipe will change slightly depending on the region it’s from, but here’s what I used! It’s sooo simple! I found everything needed to make it in my pantry. Check out the recipe card below for exact measurements!

    • Butter: Adds richness and flavor to the yellow rice. You can also use olive oil or ghee!
    • Basmati Rice: I used basmati rice to keep this recipe more on the traditional side, but long-grain white or brown rice also work! Long-grain jasmine rice is another great option.
    • Water: For cooking the rice in. You can also use chicken broth.
    • Chicken Bouillon: Chicken bouillon is a must-add because it packs so much flavor into each bite. You can use either paste or powder here. If you don’t have any chicken bouillon on hand, you can also use chicken broth. Use it in place of the water.
    • Garlic and Onion Powder: Both add the perfect savory flavor to this yellow rice!
    • Kosher Salt: Adjust to taste. I prefer using kosher salt over regular table salt because it doesn’t have a bitter aftertaste.
    • Ground Turmeric: Time to break out that spice rack! A touch of turmeric gives this rice its gorgeous yellow color and also adds flavor.
    • Cilantro: (Optional) For garnish.

    How to Make Yellow Rice

    It only takes 20 minutes to make yellow rice from start to finish! It’s such an easy side dish. Perfect for serving up with Instant Pot lemon chicken! You’ll have dinner ready in less than 30 minutes. With how good it tastes, no one will know!

    1. Heat Butter: Heat the butter or oil in a large pot over medium heat.
    2. Add Cooked Rice: Pour the rice into the pan then stir to coat the rice well with the melted butter. Then cook and stir for about 2 minutes.
    3. Add Seasonings: Next add the water, chicken bouillon, garlic powder, onion powder, salt, and turmeric. Stir until combined and then bring to a boil.
    4. Cover and Simmer: Reduce the heat to a simmer and then cover the pot with a lid.
    5. Cook: Allow the rice to simmer for about 12-15 minutes until the rice is fully cooked and plump.
    6. Serve: Fluff with a fork, then transfer the rice to a bowl and serve.

    More Add-Ins

    This yellow rice is my go-to side dish for busy weeknights. Because it’s so simple, you can easily customize it with a few extra ingredients! Feel free to tweak the flavor to your liking.

    • Add Vegetables: If you want your yellow rice to have more texture, add peas, chopped onion, scallions, carrots, or bell peppers.
    • Fruit and Nuts: South African yellow rice is traditionally made with golden raisins. This is a great way to add a little texture and a touch of sweetness as well! Another great addition is pine nuts if you like a bit of crunch.
    • More Spices: A pinch of chili powder, cumin or cinnamon is a great addition to the flavor of yellow rice!

    Storing Leftovers

    You can reuse yellow rice in so many different dishes! To keep it fresh and ready to use throughout the week, you will want to make sure it’s in an airtight container in the fridge.

    • In the Refrigerator: Store leftover yellow rice in the fridge for 3-4 days. Reheat on the stove or in the microwave with a little water or chicken broth added.

    Can Yellow Rice Be Frozen?

    Yes it can! It’s a great option for meal prep. Transfer rice to a Ziploc bag and then store in the freezer for 2-3 months. Thaw in the fridge overnight before use and then reheat as normal. I always like to reheat my yellow rice in a skillet with a touch of butter and chicken broth to add moisture back in.

    Crispy Pork Wontons

    Wontons are ALWAYS on my list whenever I order Chinese takeout. Don’t get me wrong, crab rangoons and cream cheese wontons will forever hold a place in my heart, but there’s something about pork wontons and soup dumplings that is SO irresistible. Now, as we all know, takeout can get pricey so here’s a quick, easy, and cost-effective way to get your wonton fix all in the comfort of your kitchen!

    Not only do they taste amazing, but these amazing pork wontons are so simple to make. They’re fun to put together, too! My girls love filling each wonton wrapper with the pork mixture. It’s a labor of love! Once you have a batch of these soft, flavorful pork wontons ready to eat, serve them up with some sweet chili sauce or potsticker sauce for an appetizer everyone will LOVE!

    What You’ll Need to Make Them

    Making delicious pork wontons only takes a handful of simple ingredients! You may need to make a stop at your local Asian grocer for the sesame oil and rice vinegar, but you can usually find these in the Asian section of grocery stores as well. You can also find them online! I’ve linked my favorite kinds below. Note: exact measurements can all be found below in the recipe card.

    • Ground Pork: You can’t go wrong with pork wontons and dumplings. They’re just so tasty! You can also swap this out for ground turkey if you want something leaner.
    • Ground Ginger: Adds a bright, peppery flavor.
    • Garlic Powder: For the perfect savory flavor. Minced garlic also works!
    • Chopped Green Onion: Adds a pop of sharp, savory flavor.
    • Salt: Boosts the flavor of the meat mixture.
    • Sesame Oil: I love cooking with sesame oil because it adds the best nuttiness!
    • Rice Vinegar: This helps to balance out flavors and adds a bit of tang as well.
    • Soy Sauce: A must-add for salty, savory flavor! Hoisin sauce works, too!
    • Wonton Wrappers: I used small, square wrappers to keep these wontons bite-sized.

    How to Make Pork Wontons

    Not only are homemade wontons super delicious, but they’re fun to make too! There’s something so satisfying about folding up each wonton, it’s like origami! Making a batch of these is the perfect way to complete any Chinese-inspired meal!

    1. Pork Mixture: Add the pork, ginger powder, garlic powder, green onion, salt, sesame oil, rice vinegar, and soy sauce to a large bowl. Mix until the ingredients are combined.
    2. Add to Wrapper: Place 1 teaspoon of the pork mince in the middle of a wrapper.
    3. Fold: Dip your finger in a bowl of water and run it along the edges of the wonton wrapper. Fold the wrapper over the meat mixture to form a triangle. Seal the wet edges together.
    4. Seal: Fold the two bottom corners in and seal them with water pressing firmly.
    5. Repeat: Cover with a damp paper towel and repeat the steps to form all 40 wontons.
    6. Boil Water: When you’re ready to cook the wontons, put 6 cups of water into a pot and bring the water to a boil.
    7. Add Wontons: When the water comes to a boil, place 6-8 wontons into the boiling water.
    8. Check if Cooked: When the wontons float to the top, the wontons should be cooked. You can check the inside of one of them to make sure the meat is fully cooked.
    9. Remove: Take them out gently with a strainer and serve them hot with a drizzle of soy sauce.
    10. Repeat: Repeat the cooking process with the rest of the wontons until they’re all cooked.

    Tips and Extra Mix-Ins

    If you love pork wontons as much as I do, here are some fun switch ups to implement for your next batch! The beauty of making wontons at home is that you can customize the flavor however you’d like!

    • Adding More Flavor to Your Pork Mixture: Want to switch up the flavor of your filling? Try adding a tablespoon of oyster sauce for a pop of sweet but salty flavor! If you want your wontons to have some kick, you can also add a drizzle of sriracha or a dash of red pepper flakes. If you want a touch of peppery flavor without the wontons being too spicy, you can also add some cracked white pepper to the mix.
    • Serve With: Serving your homemade wontons with some tasty sauce is all part of the experience! Soy sauce or potsticker sauce is always a must, but if you’re looking for something different try this yum yum sauce or peanut sauce! I love them both because they add a creamy nuttiness that tastes absolutely divine with these savory, juicy wontons.

    How Long Do Homemade Pork Wontons Last?

    These always get devoured by my family whenever I make them. But if you’re lucky enough to have some leftover, you will want to keep them refrigerated for best results.

    • In the Refrigerator: Store pork wontons in an airtight container for up to 2 days.
    • Reheating: I recommend reheating your wontons in the microwave for a minute or two with a sprinkle of water over top so they don’t dry out. You can also reheat your wontons in a skillet with a little bit of water added at medium-low heat.

    If you have leftover pork wontons, they’re great for using in homemade wonton soup! It’s the perfect meal for chilly days.

    Freezing Pork Wontons

    Good news! You can keep uncooked pork wontons in the freezer to enjoy whenever you have a craving for soft, meaty morsels of goodness!

    • In the Freezer: Store uncooked wontons in a freezer bag or airtight container for 2-3 months. If you’re storing a lot of wontons, I would add a piece of parchment paper between layers so they don’t stick together. When you’re ready to make them, let them thaw in the fridge and then cook them in boiling water!
