    How to Make Sushi Rice

    If you are obsessed with sushi like I am, it’s time you learned to make Sushi Rice at home! It’s so sticky and delicious, and easier than you may think. Impress your friends with a sushi night in!

    I am such a huge fan of sushi. It definitely grew on me over the years. I couldn’t imagine eating raw fish as a kid, now I eat sushi any chance I get. And it really is super fun to make at home. You don’t have to make this sushi rice just for sushi! You really can make this for any dish, it’s perfectly sticky and delicious rice that goes great with Vegetable Stir Fry, a Korean Ground Beef and Rice Bowl, or Grilled Teriyaki Chicken.

    What is Sushi Rice?

    So you may be wondering, what makes sushi rice different from regular rice? Well, for starters, you absolutely have to use short grain rice. Short grain rice has more starch in it, which helps it stick together better. You also add a few more ingredients than regular rice. You will make a mixture of rice vinegar, sugar, and salt to pour over the rice once it’s cooked. This helps it soak up extra moisture and flavor. This way it will stick together better when you are rolling your sushi.

    You don’t have to stick to just sushi with this rice though! I love this rice served with a lot of different dishes. Of course it’s perfect for sushi rolls, but it’s also great with a poke bowl or a salmon rice bowl, and especially spam musubi! You still get most of the same flavors of sushi without the extra work of rolling it up. I think this rice is a great skill to have in your back pocket because it really always impresses people! Sushi rice just tastes better than regular white rice if you ask me.

    Ingredients

    Sushi rice has a few more ingredients than traditional rice. That is how it becomes so perfectly sticky and delicious! The key ingredient is short grain rice. Long grain rice like basmati , or medium grain rice, don’t have enough starch in them to get sticky. So double check your rice before trying this recipe! You can cook it in an instant pot, rice cooker, or a regular pot on the stove. You can find the measurements below in the recipe card.

    • Short Grain or Sushi Rice: You are looking for Japanese style short grain rice which is sometimes labeled sushi rice. I like Nishiki brand or Kokuho Rose, and you should be able to find both at your local grocery store. You will want to get short grain rice because it will make all the difference in this rice turning out sticky and perfect for sushi
    • Japanese Rice Vinegar: This is just a regular bottle of rice vinegar. You don’t have to get the ones labeled specifically for sushi. In fact, those kinds usually have added sugar and salt in them, so I stay away from them because I like to add those ingredients on my own.
    • Granulated Sugar: This helps the rice become sticky, and it also gives it great flavor. Feel free to use another sweetener if you want to!
    • Salt: To help bring out all of the flavors in the rice.
    • Water: For cooking the rice.

    Sushi Rice Recipe

    I’ve found the easiest way to rinse your sushi rice is to put it in a fine mesh strainer and hold it under running water until the water runs clear. It’s just easier than trying to rinse and repeat in a bowl. Make sure to drain your rice well before adding it to the pot for cooking. I always use my instant pot because cooking short grain rice over the stove can be a lot harder than it needs to be. Once your rice is cooked, then add the rest of your ingredients. The best tip I can give is to fold gently. You don’t want to stir in a circle because you will end up smashing a lot of your rice together. Put your spatula into the rice at an angle and fluff it upwards until the vinegar is coated evenly on all the rice.

    1. Rinse: Rinse the rice with cold water until the water runs clear.
    2. Cook: Cook the rice on the stovetop, in a rice cooker, or in the Instant Pot. If you use a rice cooker or Instant pot, cook the rice according to the manufacturer’s instructions. My rice cooker takes 4 cups of water to cook 3 cups of rice.
    3. Heat Sugar and Vinegar: While the rice is cooking, add the rice vinegar, sugar and salt together in a small saucepan. Heat over medium-high heat and whisk until the sugar has dissolved.
    4. Add Sugar Mixture to Rice: Transfer the cooked rice to a large mixing bowl. Pour the vinegar mixture over the rice and use a spatula to fold the mixture into the rice.
    5. Cover and Cool: Cover the bowl with saran wrap and let the rice cool on the counter until it reaches room temperature.

    Tips for Making Sushi Rice

    I share a lot of my personal tips for making sushi rice throughout this post, so make sure to read through the whole thing! There isn’t much to this sushi rice recipe, but you do want to get the textures and taste perfect, so these little tips can make all the difference.

    • Rinse Well: Make sure to rinse the rice in cold water a few times until the water is clear. This helps remove the starches from the grains of rice, resulting in a less sticky, fluffy rice.
    • Soggy Rice: If your rice ends up too soggy, adjust the amount of water next time and use ¼ cup less. This is just kind of a trial and error thing because every stove and cooking method is different. Make sure to follow the cooking recommendations on your rice cooker or instant pot.
    • Cover the Rice: I’ve found that covering the rice with plastic wrap works just fine. Some people use a damp kitchen towel and let it rest directly on top of the rice so it doesn’t dry out. Sometimes the plastic wrap can keep the rice a little too wet, so if your rice comes out on the wet side, I would go for the towel instead.

    Storing Leftovers

    Sushi rice is one of those things that you really should eat fresh. Going through the extra steps to make the perfect rice is definitely worth it when you eat it fresh. If you do have some leftovers, here is how to store them.

    • Unseasoned Rice: Cooked, unseasoned rice can be kept in the fridge in an airtight container for 5-6 days.
    • Seasoned Sushi Rice: Cooked, seasoned rice is best used right away, but can be stored for 2-3 days in an airtight container in the fridge if necessary.

    I absolutely love potatoes! I think they are the perfect companion to any meal. Whether it’s an Air Fryer Sweet Potato, some creamy Mashed Potatos, or just a regular old Baked Potato, I love them all equally. These fingerling potatoes are about to move to the top of your list.

    Roasted Fingerling Potatoes

    Roasted fingerling potatoes- if you’ve never had them, you are missing out on a next level potato experience. Are all potatoes created equally? Don’t even get me started on the different kinds of potatoes and their uses, I’ll be here all day! Let’s just say, I’m a potato connoisseur and I would never lead you astray when it comes to potato dishes. Potatoes are the perfect side dish, and these fingerling potatoes are at the top of the list for me. So what makes them so amazing?

    Fingerling potatoes are different than roasted red potatoes. I would say the fingerling and red potato are pretty similar. Fingerlings are smaller than a russet (try those as an air fryer baked potato!) and have thin skins. They come in a variety of colors and their flavor is nutty and earthy. They are definitely worth tracking down because they really do taste amazing. You should be able to find them at your local grocery store with no problems!

    Ingredients

    Basically, all you need is fingerling potatoes and your choice of seasonings. I really recommend using this recipe because the flavors that I add come together for the perfect potato recipe. These potatoes are amazing served along with grilled bbq chicken or a delicious air fryer steak. You can eat them with pork or really any protein. They don’t even need a dipping sauce they are so moist and delicious! You can find the measurements below in the recipe card.

    • Fingerling Potatoes: You should be able to find some in a bag at your local grocery store. They are kind of long and skinny.
    • Olive Oil: This is to saute the onions and coat the potatoes.
    • Onion: Sauteed onions do SO much for adding flavor to potatoes. It’s worth the extra step I promise!
    • Garlic: Fresh garlic is next level on potatoes. You could add garlic powder if you wanted.
    • Italian Seasoning: I like to make my own homemade blend because it just tastes so fresh.
    • Salt and Pepper: Season to taste.

    Fingerling Potato Recipe

    I love how easy it is to make fingerling potato recipe. They are smaller so they don’t take too long to cook. You cut them in half which helps them cook evenly. It also makes them easy to coat in seasoning. You are going to love the crispy outside and creamy inside on these potatoes! Get ready for your new favorite side dish recipe.

    1. Prep: Preheat your oven to 425 degrees fahrenheit and prepare a sheet pan by lining it with foil and spreading a thin layer of olive oil over it. Set aside.
    2. Prep Potatoes: Cut all your potatoes in half lengthwise and place in a large bowl. Heat olive oil in a small skillet over high heat, add your onion and saute for 4-5 minutes, until they just begin to develop color. Add in your garlic and saute for another 1-2 minutes then remove from heat.
    3. Add Seasonings: In a small bowl, mix your italian seasoning, salt, and pepper. Pour your onion and garlic oil over your potatoes and pour your seasonings over everything. Toss to coat evenly.
    4. Bake: Once potatoes are evenly coated, place them, cut side down, in your prepared sheet pan. Bake for 25-30 minutes. Once the potatoes are tender and golden, switch to broil, continue baking potatoes for 3-5 minutes to achieve a crispier exterior.
    5. Cool and Enjoy: Remove from the oven and allow them to cool a few minutes before serving. Enjoy fresh!

    Ideas for Toppings

    Fingerling potatoes roast up so nice and crispy, you won’t be able to resist throwing some toppings on top! I am a huge potato fan, so I’ve got some great tips for how to take these to the next level.

    • Cheese: Every potato deserves the perfect cheese. I personally love parmesan cheese, the freshly grated kind and the dried powdered kind. You can add whatever type of cheese you want! I also love aged white cheddar and gouda. You could also do a cheese sauce like homemade cheese sauce and white spinach queso. Sprinkle your favorite kind on top!
    • Fresh Herbs: Potatoes taste amazing with fresh herbs on top. You can add things like rosemary, thyme, and parsley before you pop them in the oven. You may want to add parsley after you pull it out of the oven because it can burn. It also adds a fresh pop of color that makes these look even more delicious.

    Storing Leftovers

    I love potatoes as leftovers. When you reheat them they taste just as good as they do fresh! The skin on the outside will get soft unless you reheat them in the oven again. I like reheating my food in the oven anyways, so I usually do that. You will notice the difference!

    • In the Refrigerator: Let your leftovers completely cool before you put them in the fridge. Store in an airtight container for up to 5 days.

    How to Make Twice Baked Potatoes

    1. Preheat Oven, Prep Potatoes: Preheat your oven to 375 degrees Fahrenheit and then prepare a baking sheet by lining it with foil. Prepare your potatoes to be baked, clean the potatoes and poke them each along the body with a fork so air can circulate.
    2. Bake Potatoes: Bake the potatoes until they are tender, about 1 hour 20 minutes. Remove the potatoes from the oven and then allow them to cool enough to handle. While potatoes are baking, cook your bacon and cut them into small bits.
    3. Scoop Out Potatoes: Cut each baked potato in half, lengthwise, and then scoop the potato flesh from the skins, keeping the skins intact.
    4. Combine With Other Ingredients: To a medium bowl, add the scooped potatoes, sour cream, butter, milk, ⅔ of the cheddar cheese, salt, pepper, half of your prepared bacon bits, and half of your green onions. Then using a hand mixer, whisk the mashed potato filling together until it is well mixed and creamy. You can also use a potato masher.
    5. Add Back to Potato Skins: Scoop the mashed potato mix into each hollowed out skin, dividing it evenly between all 8 skins. Once your skins are filled again, top each one with your reserved cheddar cheese, bacon bits, and green onions.
    6. Bake Again: Line the filled and topped potatoes back on the baking sheet and then bake them for an additional 15 minutes.
    7. Enjoy: Serve and enjoy your twice baked potatoes fresh!

    Tips and Delicious Variations

    Like baked potatoes, twice baked potatoes can be made in so many different ways, with so many different toppings! Here are a few ways to perfect this soft, cheesy potato dish. They’re going to fly off the table!

    • Don’t Overcook: Don’t overcook your potatoes! You want them to be tender, but not falling apart.
    • Add Cheese on Top: Save some cheese for the topping! Don’t mix all of the cheese into the potato mixture – save a little bit to sprinkle on top for extra cheesy goodness.
    • More Toppings: Get creative with your toppings. Bacon and green onions are classic choices, but you can also try adding things like jalapenos, sun-dried tomatoes, or even chili! You could also add a drizzle of cheese sauce or BBQ sauce to make it extra ooey-gooey and delicious. I have even seen people top their twice-baked potatoes with a drizzle of alfredo sauce. Yum!

    Storing / Reheating

    Twice baked potatoes are so good, I doubt you’ll have any left over. But just in case, here’s how to keep them tasting nice and fresh!

    Reheating Twice-Baked Potatoes
    • In the Oven: Preheat your oven to 350 degrees Fahrenheit. Remove the potatoes from the fridge and let them come to room temperature for about 15 minutes. Then, place them in a baking dish and cover with foil. Bake for 20-25 minutes or until heated through.
    • In the Microwave: Place the potatoes on a microwave-safe plate. Microwave on high for 1-2 minutes, or until heated through. Be sure to check them frequently to avoid overcooking.
    • In the Air Fryer: Preheat your air fryer to 375 degrees Fahrenheit. Place the potatoes in the air fryer basket and cook for 5-6 minutes, or until heated through. You can also spray the potatoes with a little bit of cooking spray for extra crispiness.

    I love no yeast bread recipes because they are so quick and easy to make. They usually don’t need much attention and come together in a pinch. There are so many reasons to make bread at home. A few of my favorite no yeast recipes are this Butter Beer Bread, this amazing Traditional Soda Bread, and this simple Zucchini Bread.

    No Yeast Flatbread

    Flatbread has so many uses in my house! It’s a simple dough that doesn’t require turning on the oven or using yeast. I love the flavor of this flatbread, and I love making it at home! The smell as it cooks on the stove is just unmatched. And you can use flatbread for so many things. Gyros are a simple dinner that can be filling and fun for everyone. If you’ve never had a flatbread pizza, you need to make one right now! And flatbread is amazing all on it’s own. One of my favorite ways to dress it up is to add mozzarella, tomato, and a drizzle of balsamic vinegar for a Caprese flatbread. Yum!

    Did you know that focaccia is actually considered a flatbread? Other flatbreads are the pita and naan. A tortilla is also technically a flatbread! Flatbread can have yeast or no yeast, and are made by almost every culture all over the world. They are also one of the first breads to be made, so they have lots of history. They are also amazingly delicious! You can make this flatbread recipe your own by adjusting the recipe to exactly how you want it to taste.

    Ingredients

    I absolutely love how simple no yeast flatbread is to make. You only need 5 ingredients, the rest are just for extra flavor! I like to add dried seasonings to my dough, but if you don’t want to then you don’t have to. You can find the measurements below in the recipe card.

    • Olive Oil: This is for bringing the dough together and for cooking the flatbread.
    • Warm Water: The temperature of the water helps the flour come together in this dough.
    • All-Purpose Flour: It’s easy to work with and you already have some in your pantry!

    • Salt: This goes in the dough to help bring out all the yummy flavors.

    This flatbread recipe is so straightforward, I have my kids help me with it! It’s a really simple dough that doesn’t require any kneading. You don’t have to worry about the dough rising or anything, because there is no yeast and the dough is cooked over a skillet until golden brown.

    1. Mix Wet and Dry: In a large bowl, combine the ¼ cup of olive oil and water. In a separate bowl whisk together your flour, baking powder, salt, garlic powder, oregano, and basil.
    2. Add Dry to Wet and Mix: Add dry ingredients to the wet ingredients and then stir with a spatula until it all begins to come together, it will seem crumbly at first, take it from the bowl and work it with your hands until it forms a smooth dough. This can take 2-4 minutes.
    3. Divide and Shape: Dump the dough out onto a lightly floured surface and divide into 4 equal pieces, then roll each piece into a round and cover with saran wrap. Let the dough rest for about 10 minutes to relax.
    4. Flatten: Roll each piece of dough out into a flat even disk after the resting time.
    5. Cook: Heat a medium sized skillet over medium high heat, once it has come up to temp, then spread about 1 teaspoon of olive oil on the skillet and place one rolled out flatbread on the pan. Cook one side until bubbles begin to form, about 2-3 minutes.

    • Whole Wheat Flour: A lot of people want to know if you can make this recipe with whole wheat flour. You definitely can! Wheat flour usually sucks up more water than all purpose, so you may need to add more water to the dough.
    • Added Ingredients: You can add more to this recipe to spice things up! You can add sesame seeds, fresh herbs, cheese, or even crushed nuts! There are no limits to how to flavor this bread. There is even more you can add on top!
    • How to Eat Flatbread: This is an American flatbread recipe, and you can add whatever your heart desires on top! Make it into a sandwich, gyro, flatbread pizza, the list goes on.     I love a good “salad” that satisfies my sweet tooth. They are kind of like a fruit salad but even sweeter! They always hit the spot and are perfect for pot lucks and parties. A few of my favorite recipes are Very Berry Cheesecake Salad, this Oreo Fluff Dessert Salad, and this amazing Strawberry Cheesecake Salad.

    Pineapple Fluff Salad

    If you have ever tried an orange creamsicle salad, this pineapple fluff salad is a lot like that! It’s loaded with bright and bold flavors, covered in layers of fluff like marshmallows, vanilla pudding, and whipped cream. There is definitely more fluff than fruit, so I definitely wouldn’t call this a “fruit salad”. I love dessert salads because they are a quick and easy dish that everyone loves!

    One of my favorite salad’s to bring to a potluck is my ambrosia salad. Sometimes I’ll switch it up and bring a frog eye salad, but honestly the name is a little unappealing to people (even though it’s amazingly delicious!). This pineapple fluff salad is the perfect treat to share with friends and family. You don’t have to cook anything, and it’s a tempting dessert that has you coming back for seconds. It’s really light in your stomach too so it’s perfect to eat after a bbq dinner.

    Ingredients

    Pineapple fluff is full of tropical flavors and is such a refreshing side dish or dessert! You can add a lot more ingredients than what I have listed here. I often add mandarin oranges and pretzels for a little extra flavor and texture. You can use fresh pineapple instead of canned if you prefer. There are so many ways to make this dish, but I love this method because you don’t have to heat up your oven, and you don’t have to worry about cooking anything on the stove.     • Use Different Nuts: Macadamia nuts can be pricy. If you want to use a different nut, I recommend pecans or walnuts. You can toast them or even caramelize them for more flavor and texture. You could also use slivered almonds.
    • Add Rum Extract: If you want your pineapple fluff salad to taste a little more like a piña colada, I recommend adding a little bit of rum extract! You can add it in when you are mixing the pudding and cream of coconut.
    • Adding Cream Cheese: I absolutely love cream cheese. I think it goes great in almost every dessert, and it’s amazing in this one! You can add as much cream cheese as you want along with the pudding when you are making this dish.

    Brioche Bread

    If you want to start making more bread at home, this brioche bread is the perfect place to start! Not only is it beautiful, fluffy, and super delicious, it’s also really easy to make. This bread is perfect for sandwiches, French toast, or just eating plain!

    There is nothing like the smell of freshly baked bread! It just fills your entire kitchen and then the rest of the house and has everyone asking what is for dinner. It really is one of my favorite things to make. Another thing I love making is quick bread, because you don’t have to worry about yeast or waiting for anything to rise. Some of my favorite quick bread recipes are this Carrot Cake Quick Bread, this delicious Award Winning Banana Bread, and this Cinnamon Bread.

    What is Brioche Bread?

    Brioche bread is a French bread that is in the same family as croissants, Danish pastries (like this apple danish), and sweet rolls. It’s super buttery and soft, and so delicious! You can also make this recipe savory or sweet. I like to add things like raisins, nuts, and dried fruits to make it sweeter. You can also add herbs like rosemary or thyme. I have also added cheese and loved it!

    This bread is not only super delicious and way better than store-bought, it’s also super easy to make! I make my bread in my Kitchenaid mixer with a dough hook attachment. But you can easily make this recipe in a bowl with a wooden spoon, and then knead the dough on a floured work surface. With this same dough, you can also make brioche buns. I love this recipe so much! I now make it more often than my go-to sandwich bread recipe because it’s just as easy to make and perfect for everything from sandwiches to French toast.

    Ingredients

    This brioche bread recipe has a few more ingredients than your average bread recipe. The butter and eggs make the dough SO soft and fluffy. The extra fat and proteins give the dough a really nice rise and a great crumb that is perfect for just about everything! You can find the measurements below in the recipe card.

    Dough

    • Milk: Milk makes a really tender crumb.
    • Instant Dry Yeast: Instant yeast helps the dough rise.
    • Granulated Sugar: A little sugar actually helps the dough rise better because it activates the yeast.
    • Butter: I use unsalted butter.
    • Eggs: Adding eggs to your bread makes the bread super fluffy and tender.
    • Salt: Salt helps bread rise properly and brings out all of the subtle flavors.
    • All-Purpose Flour: This is the easiest to work with for this recipe.

    Egg Wash

    • Egg: I use the full egg for this egg wash.
    • Water: Water helps the egg combine more smoothly so it spreads evenly.

    Brioche Bread Recipe

    The taste of this brioche loaf is out of this world delicious! Brioche dough is so soft and supple, you are going to love how this dough turns out. The texture is so light and fluffy, yet it holds together really well and is perfect for sandwiches. I just use regular all-purpose flour, I know some people prefer bread flour. I think that this bread is so good toasted with jam, you’re going to love it too!

    Make Dough

    1. Bloom Yeast: In the bowl of a stand mixer, combine your warm milk, yeast, and 1 tablespoon of your sugar. Allow the mixture to sit for about 5 minutes until the yeast becomes active and foamy.
    2. Mix Eggs, Sugar, Butter: Add in the rest of the sugar, butter, and eggs. Mix using the whisk attachment on medium high speed until everything comes together.
    3. Add Flour: Add 2 cups of flour and your salt into the bowl and switch out the whisk for the dough hook, mix at low speed until the flour is fully incorporated, at this point you can determine if you need to add more flour, the dough should pull clean from the mixer when it is the right consistency, but not be too stiff, it should be slightly sticky. I ended up using 2 ½ cups
    4. Knead Dough: Increase the speed to a medium high speed and mix for an additional 3-4 minutes. This last step will knead the brioche bread dough and build the strength of the gluten.

    Shape and Bake

    1. Let Rest: Remove the brioche dough from your mixer and place it into an oiled bowl, cover with plastic wrap and keep covered for about an hour, until the dough doubles in size.
    2. Pound and Rest: Once your dough has doubled in size, fold it by tipping the dough out onto a lightly floured surface and pounding the air out of it. Roll it back into a ball and place back into your oiled bowl, cover and let rest for another 30-45 minutes. It should rise up again and be airy, but not quite double in size.
    3. Spray Pan: Prepare a loaf pan by spraying it with nonstick baking spray, set aside.
    4. Shape Dough: When your dough is ready, tip it out onto a floured surface again, and pat flat. Cut the dough into 3 equal pieces and roll the pieces out to about 12 inches. Lay each 12 inch strand of dough side by side and join the top together by lightly rolling them into a point. Braid the strands all the way down and at the bottom pinch and roll the ends together.
    5. Rest: Tuck the pointed ends under the loaf and fit the loaf into your prepared pan. Cover and let rest for about 30-45 minutes. Until the dough has risen slightly above the top of the pan.
    6. Preheat Oven: While your loaf is proofing, preheat your oven to 325 degrees fahrenheit.
    7. Bake: Once your loaf is proofed and ready, uncover and brush with your egg wash, bake for 30-45 minutes. The loaf will be golden brown and a thermometer inserted into the center of the loaf should read 190 degrees fahrenheit.

    Tips for Making Brioche Bread

    This brioche recipe is so amazing. It’s simple and basic, and you can do so many things with it. Here are a few tips that will make this bread recipe even better!

    • Making Bread by Hand: I love making bread by hand! You can definitely make this bread by hand. Follow the directions up until you knead the dough, then dump the dough out onto a floured surface and knead by hand. I like to use a large bowl and wooden spoon when I am making bread by hand.
    • Brioche French Toast: Try making french toast! Homemade bread needs to be eaten within 5 days. You have to try this brioche creme brulee french toast. It’s absolutely to die for!
    • Mise en Place: Mise en place means everything in it’s place. I find that ALL of my recipes turn out better when I have everything measured and ready to go before hand. It makes cooking and baking so much easier and faster, and things always turn out better!

    I love homemade brioche bread because it tastes so much better than storebought. It doesn’t last as long as storebought bread, so here are some tips to keep your bread fresh for as long as possible. If you do end up with stale bread, brioche bread pudding is amazing! Don’t throw out your stale bread, use it in bread pudding instead.

    • On the Counter: Keep loaf bagged or in an airtight container at room temperature for up to 5 days.
    • In the Freezer: Homemade bread doesn’t last as long on the counter as store-bought bread because it doesn’t have any preservatives. You can store your bread in the freezer for up to 2 months in a plastic bag.

    Note: Allow the loaf to completely cool to room temperature before bagging or they will sweat in the bag or container and become soggy.

    Ingredients

    • 1/2 cup milk warm
    • 1 packet instant dry yeast 2 ½ teaspoons
    • ¼ cup granulated sugar divided
    • 6 tablespoons unsalted butter softened
    • 2 eggs room temperature
    • 1 teaspoons salt
    • 2-3 cups all purpose flour

    Egg wash

    • 1 large egg
    • 2 tablespoons water

    Instructions

    • In the bowl of a stand mixer, combine your warm milk, yeast, and 1 tablespoon of your sugar. Allow the mixture to sit for about 5 minutes until the yeast becomes active and foamy.
    • Add in the rest of the sugar, butter, and eggs. Mix using the whisk attachment on medium high speed until everything comes together.
    • Add 2 cups of flour and your salt into the bowl and switch out the whisk for the dough hook, mix at low speed until the flour is fully incorporated, at this point you can determine if you need to add more flour, the dough should pull clean from the mixer when it is the right consistency, but not be too stiff, it should be slightly sticky. I ended up using 2 ½ cups
    • Increase the speed to a medium high speed and mix for an additional 3-4 minutes. This last step will knead the dough and build the strength of the gluten.
    • Remove the dough from your mixer and place it into an oiled bowl, cover with plastic wrap and keep covered for about an hour, until the dough doubles in size.
    • Once your dough has doubled in size, fold it by tipping the dough out onto a lightly floured surface and pounding the air out of it. Roll it back into a ball and place back into your oiled bowl, cover and let rest for another 30-45 minutes. It should rise up again and be airy, but not quite double in size.
    • Prepare a loaf pan by spraying it with nonstick baking spray, set aside.
    • When your dough is ready, tip it out onto a floured surface again, and pat flat. Cut the dough into 3 equal pieces and roll the pieces out to about 12 inches. Lay each 12 inch strand of dough side by side and join the top together by lightly rolling them into a point. Braid the strands all the way down and at the bottom pinch and roll the ends together.
    • Tuck the pointed ends under the loaf and fit the loaf into your prepared pan. Cover and let rest for about 30-45 minutes. Until the dough has risen slightly above the top of the pan.
    • While your loaf is proofing, preheat your oven to 325 degrees fahrenheit.
    • Once your loaf is proofed and ready, uncover and brush with your egg wash, bake for 30-45 minutes. The loaf will be golden brown and a thermometer inserted into the center of the loaf should read 190 degrees fahrenheit.

    This recipe is so simple, and super flavorful! You can eat it as is, or you can dress it up with a protein or a side dish.     Pasta al limone, or lemon pasta, is an incredibly popular pasta dish in Italy, and I can see why! It’s so simple, yet bursting with the delicious flavors of butter or olive oil, Parmesan cheese, and lots of lemon. It’s so simple and I love making this dish for dinner when I’m short on time, ideas, and resources. If you’ve got a box of spaghetti in the pantry and a few lemons on the counter, you’ve got what you need for this recipe!

    If I am making this for dinner, I love serving it with some kind of protein. My favorite options are this Greek lemon chicken or this crockpot apricot chicken. Not that those are traditional in this dish at all, I just know my family will be hungry again in an hour if I don’t feed them a little something extra! I also love making air fryer mushrooms to go on top, they are so good and easy to make! You can also serve

    I love pasta al limone for many reasons, but my favorite reason is how simple the ingredient list is! You can make the sauce more hearty and add more ingredients, but the traditional recipe is so delicate and delicious. You can add more fresh herbs on top of this lemon pasta recipe if you would like to. I think the lemon flavor is enough to flavor the whole thing on it’s own! You can find the measurements below in the recipe card.

    • Spaghetti: Spaghetti noodles are traditional and delicious, not to mention easy to cook!
    • Butter: You can use butter or olive oil in this recipe. You will make a butter sauce with garlic and lemon juice and zest.
    • Garlic: Fresh garlic clove makes this dish so savory and delicious.
    • Lemon Juice: This is where the magic happens. Lemon juice is the star of this past! Make sure you have at least two lemons on hand.
    • Lemon Zest: Zest is so strong and flavorful, and adds a pop of fresh lemon flavors. Make sure to thoroughly wash your lemons first.
    • Parmesan Cheese: Parmigiano Reggiano is the perfect choice for shredding on top of this pasta.
    • Salt and Pepper: This dish is heavy on the black pepper, and for good reason! It goes great with the lemon and Parmesan. Feel free to add however much you like.
    • Basil or Italian Parsley: This is for garnishing the top. It adds a pop of fresh flavor that you definitely want to include!

    Pasta al Limone Recipe

    Get ready for the easiest pasta recipe you’ll ever make! Pasta al limone is so straightforward and alive with flavor. Once you cook the pasta, you will use one cup of the reserved pasta water to make the butter lemon sauce. Pasta cooking water is salty and starchy, and helps to bring the sauce together.

    1. Cook Pasta: In a large pot, filled with salted water, boil your pasta until al dente. Follow package instructions. Drain pasta, reserving 1 cup of the pasta water.
    2. Make Lemon Sauce: Once your pasta is cooked and drained, in a large skillet over medium heat melt your butter. Sautee your minced garlic in the melted butter for just under a minute, add in your cooked pasta, half of your lemon juice, and half of the reserved pasta water.
    3. Add Pasta: Cook the pasta in the skillet, stirring continuously to coat the pasta in the butter mixture. Keep an eye on your pasta as you cook, it should always remain evenly coated in the sauce while it cooks, if it becomes dry or at all, add a little more of the reserved water, but don’t over water your pasta.
    4. Add Lemon and Cheese: Once your pasta has cooked in the skillet, being continually stirred, for about 3 minutes add in the lemon zest, the rest of the lemon juice, and your parmesan cheese. Then continue to stir and cook the pasta, evenly distributing the cheese and zest.
    5. Add Seasoning: Add in salt and pepper and adjust the amount to your liking. The pasta is ready to serve when it is even coated in the lemon butter sauce mixture and the cheese has been evenly melted and distributed throughout the noodles.
    6. Enjoy: Enjoy fresh, plating your pasta with thinly sliced lemon wedges and minced lemongrass for garnish.

    Tips for Making Pasta al Limone

    Pasta al limone is such a great recipe to have in your recipe book! It is simple, delicious, and full of flavor. If you are looking for ways to mix things up, or just want your pasta to turn out perfect, try these tips. It will turn out perfectly every time!

    • Add Heavy Cream: If you want to make this more of a cream sauce, you can add 1 cup of heavy cream to the pan when you add your other sauce ingredients. It gives the pasta a little more body and makes the pasta extra creamy and delicious!
    • Add a Protein: This pasta is perfect topped with chicken. I listed some of my favorite chicken recipes above. Other chicken recipes you can try: Grilled Chicken, Lemon Chicken Piccata, and Chicken Francese.
    • Rasp Grater: This is my secret weapon! A rasp grater, sometimes called a microplaner, is the perfect way to grate parmesan. It crumbles it up so small that it completely melts into the sauce, leaving it so creamy. I also like to grate fresh parm on the top of the pasta after I plate everything.

    Storing Leftovers

    Pasta al limone is so yummy I doubt you’ll have any leftovers! If you do happen to have some you need to store, here is how.

    • In the Refrigerator: Store your leftovers in an airtight container in the refrigerator for up to 5 days. You may need to drizzle olive oil on top when reheating to help the noodles rehydrate.

    This Focaccia Bread recipe is easier than you think! Made with just a few ingredients and brushed with olive oil and Italian herbs, it’s the perfect complement to any meal!

    Focaccia bread is a thick and slightly chewy flatbread that is great for dunking! It would go perfectly with this Slow Cooker Loaded Baked Potato Soup, this Creamy White Chicken Chili, or this amazing Slow Cooker Chicken Tortellini Soup.

    Italian Focaccia Bread

    Making homemade Focaccia bread might seem intimidating, but I promise you there are just a few ingredients and a few simple steps. In fact, making flatbread is a great introduction to bread making because you simply roll it into a large circle and dimple it with a wooden spoon, instead of worrying about rolling perfect rounds for rolls or rolling up a loaf of yeast bread. Focaccia is one of my favorite breads for dunking.

    It just doesn’t get better than the golden, chewy exterior seasoned with Italian herbs, and the soft and fluffy interior. It’s the best of both worlds and pairs well with just about any soup, chili or saucy pasta you can think of! It’s the perfect way to make a simple soup like cauliflower soup totally filling. I personally love dipping it in homemade tomato soup. You can even keep things simple and serve it with this olive oil bread dip.

    Ingredients

    Focaccia bread is a really simple dough that you will love making! It’s a great bread to make if you are trying bread for the first time. It’s so simple! And you can do fun things to decorate the top. I have seen so many amazing designs that include peppers, red onions, cherry tomatoes, basil, and olives. You can decorate the top of the dough however you like, or you can keep it simple with a drizzle of olive oil and maybe some fresh herbs. You can find the measurements below in the recipe card.

    • Water: You want the water to be a little warm to help activate the yeast.
    • Dry Yeast: This is to help the focaccia rise.
    • Sugar: Sugar sweetens the dough and helps to activate the yeast.
    • Olive Oil: This is what makes the dough really moist and soft.
    • Italian Seasoning: I like to make my own homemade blend because it tastes so fresh and delicious.
    • Garlic Powder: This is to add extra savory flavor.
    • Salt: This helps the dough taste more flavorful.
    • All-Purpose Flour: This is the easiest to work with.
    • Coarse or Flaked Salt: A little crunch of salt on top takes this bread to the next level!

    Focaccia Bread Recipe

    I love how easy this focaccia bread recipe is! It is a yeast dough, but there is no reason to be worried about this dough turning out. If you follow these instructions, it will be light and fluffy every time!

    1. Activate Yeast: In the bowl of a stand mixer, whisk together water, yeast and sugar. Let sit for 10 minutes or until foamy.
    2. Mix Oil and Seasonings: Whisk in 2 tablespoons oil, 1 teaspoon Italian seasoning, ½ teaspoon garlic powder and ½ teaspoon salt.
    3. Add Flour to Mixer: Place the bowl in the stand mixer with the dough hook on. Then gradually add flour (one cup at a time to start), and knead on low speed until all flour is incorporated. Add just enough flour so that you have a soft but not too sticky dough
    4. Oil and Rest: Place dough in an oil bowl and turn to coat. Then cover with a lint free kitchen towel or plastic wrap, and place in a warm draft-free place to rise until doubled, about 1 hour.
    5. Punch Dough and Rest: Uncover dough and punch down. Then press dough into a large rectangle on a greased rimmed baking sheet (10×15 inches) you can make a smaller rectangle for a thicker bread if you prefer. Then cover again and let rise for 1 hour or until doubled again.
    6. Preheat Oven: Preheat oven to 400 degrees F.
    7. Make Dimples: Uncover dough and then use your finger to create dimples in the dough.
    8. Mix Oil and Seasonings: Whisk together remaining 3 tablespoons oil, ½ teaspoon Italian seasoning and ¼ teaspoon garlic powder. Then brush over dough and sprinkle with coarse or flaked salt.
    9. Bake: Bake at 400 degrees for 20-30 minutes, until golden brown.

    Tips for Making Focaccia Bread

    This recipe is really simple and perfect for your first try. If you want to take your focaccia bread up a level, you can use some of these tips. There are so many fun ways to make this bread new and delicious!

    • Instant Yeast: You can swap the active dry yeast in this recipe for instant yeast and not change a thing. I still like to proof my instant yeast to make sure it’s not old or stale. Proofing yeast is what happens when you dissolve it in warm water. It will become thick, foamy, and bubbly if it’s working.
    • Adding Design: If you have seen any beautiful pans of focaccia bread on the internet, they are usually topped with gorgeous food “paintings”. You can get so creative with the top of your bread by adding designs made out of chopped vegetables like red onion, bell peppers, and cherry tomatoes.
    • Cheese On Top: I love to sprinkle so parmesan cheese on top. You can use the powdered kind or even some freshly grated after you pull it out of the oven.

    Storing Leftovers

    • On the Counter: Store bread wrapped in plastic wrap or in an airtight container on the counter for up to 5 days. Fresh homemade bread doesn’t last as long as store bought because it doesn’t have preservatives, so make sure to freeze half of the bread if you won’t be able to eat it all in a week.

    1. Marinate Beets: Slice the roasted and cooled beets. Then add them to a bowl along with about 3 tablespoons of dressing. Stir to coat and then allow them to marinate for a few minutes while you prepare the rest of the salad.
    2. Start With Arugula: To assemble the salad, add the arugula to a large bowl.
    3. Mix In Remaining Ingredients: Add the marinated beets, goat cheese, onions, blueberries, oranges, and sprinkle with goat cheese.

    • 1/2 cup blueberries
    • 1/2 cup oranges, peeled and sliced
    • 3/4 cup balsamic vinaigrette

    Instructions

    • Slice the roasted and cooled beets. Add them to a bowl along with about 3 tablespoons of dressing. Stir to coat and allow them to marinate for a few minutes while you prepare the rest of the salad.
    • To assemble the salad, add the arugula to a large bowl.
    • Add the marinated beets, goat cheese, onions, blueberries, oranges, and goat cheese.
    • Drizzle on the dressing and toss to coat the ingredients well. Enjoy!
